8 tablespoons (1 stick) salted butter
One 28- to 32-ounce bag frozen shredded hash brown potatoes
1 medium onion, finely diced
1/4 cup all-purpose flour
1 cup milk
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
1 1/2 cups grated Monterey Jack cheese
1 cup sour cream
1/2 cup grated sharp Cheddar
2 cups kettle-cooked potato chips
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter. Take the potatoes out of the freezer while you are preparing the rest of the ingredients.
  • Heat a large, deep skillet over medium-high heat, then melt 6 tablespoons of the butter in it. Add the onions and cook, stirring occasionally, until the onions start to soften, 3 to 4 minutes. Sprinkle the flour over the onions and stir to incorporate. Cook for a minute or 2 to cook out the raw flour, but do not let it color. Whisk in the milk, making sure to get out all the lumps. Add the broth and whisk again if there are still lumps. Bring the mixture to a simmer and allow it to thicken, about 3 minutes. Season to taste with salt and pepper. Turn off the heat and stir in the Monterey Jack, sour cream and Cheddar. Add the hash brown potatoes and mix everything together. Transfer the mixture to the prepared baking dish.
  • Melt the remaining 1 tablespoon butter in a small pan. Put the potato chips and Parmesan in a bowl and crush the potato chips. Pour in the melted butter and toss to coat. Sprinkle the crumbs over the top of the potatoes.
  • Cover with foil and bake for 20 minutes, then remove the foil and continue baking until golden brown on top and bubbling around the edges, about 15 minutes more. Let rest for 15 minutes before serving.

1 pound bag frozen SOUTHERN STYLE hash brown potatoes (the little cubed potatoes)
8 ounces sour cream
1 1/2 cups homemade condensed cream of chicken soup (or 1 can store bought )
1 teaspoon onion powder
1 teaspoon salt (or to taste (See note))
1/2 teaspoon pepper
2 cups sharp cheddar cheese (shredded )
1/2 cup (1 stick) butter (melted)

Steps:

  • Thaw the potatoes in the fridge (it's okay if they aren't totally thawed) on the counter for a couple of hours or in the fridge overnight.
  • Preheat the oven to 400.
  • In a large bowl, mix the sour cream, cream of chicken soup, onion powder, cheese, salt and pepper. Taste for proper seasoning and adjust to your preference.
  • Add the potatoes and stir to coat.
  • Transfer to a greased baking dish. Pour over the melted butter. Bake at 35-40 minutes until the center is hot and bubbly and the top is slightly browned.

1 (10.5 ounce) can condensed cream of celery soup
1 small onion, finely chopped

Steps:

2 lb. package shredded (not cubed) hash brown potatoes (thawed)
1 stick butter melted and divided plus 2 more tablespoons butter for sautè.
1 Cup diced onion (sautè with 2 Tablespoons butter until soft)
1 Cup chopped peppers (I use roasting peppers-may be sautèed with onions to make them soft)
1 Cup sour cream
2 Cups grated colby (or cheddar) cheese divided
1 10 oz. can cream soup (I used heart healthy Cream of chicken)
2 Cups Cornflakes

Steps:

  • Preheat oven to 350 degrees
  • In a large mixing bowl stir together the thawed hash browns, onions, peppers, sour cream, soup, 6 Tablespoons (3/4 Cup) melted butter and 1 Cup of the shredded cheese.
  • When well mixed spoon into a 9 x 13 greased casserole dish. Smooth the top.
  • Topping:
  • In a small bowl add 2 cups crushed corn flakes and 2 Tablespoons melted butter.
  • Mix together and spread mixture evenly over the casserole.
  • Sprinkle remaining 1 cup grated cheddar cheese over the top of cornflakes.
  • Bake 35 minutes covered.
  • Remove cover and bake 10 minutes more or until bubbly and golden brown.

3 tablespoons butter
¼ cup onions (diced)
3 tablespoons all-purpose flour
1 and ½ cups chicken broth
1 cup whole milk
1 and ½ teaspoon salt
¼ teaspoon freshly ground black pepper
26 ounce hashbrowns (frozen but thawed)
¼ teaspoon dried thyme
2 cups cheddar cheese (shredded)
½ cup sour cream
1 and ½ cup potato chips (crushed, I used this brand)

Steps:

  • In a large pot over medium heat, add the butter and melt. Add the diced onion to the melted butter and cook until translucent about 5 minutes. (I used my Le Creuset 5 quart Braiser for this whole recipe, even put it in the oven.)
  • Add the flour. Stir and cook for about 1 minute.
  • Whisk in the chicken broth and milk and slowly bring to a boil. Reduce heat to simmer and simmer until the mixture thickens slightly. This will take 4 to 5 minutes. Whisk frequently.
  • Remove your pan from the heat and stir in the cheese. Stir until the cheese melts.
  • Add the sour cream, salt, pepper, thyme, and garlic. Stir until combined.
  • Fold in the thawed hash browns and stir until combined.
  • If the mixture isn't in an oven-safe pan, spread the mixture into a 9 x 13-inch baking dish that's been sprayed with non-stick spray.
  • Combine the topping ingredients and sprinkle over the potatoes. Bake at 375°F for 30 minutes, or until hot and bubbly.

Steps:

  • Preheat oven to 350 degrees.
  • Melt 4 Tbsp butter in a large saucepan over medium heat. Add onion and saute until softened, about 5 - 6 minutes.
  • Add in flour and cook stirring constantly, 1 minute. While whisking pour in milk then cook stirring constantly until mixture comes to a boil.
  • Remove from heat, add in cheddar cheese and parmesan cheese and stir until melted.
  • Stir in sour cream. Season mixture with salt and pepper to taste (you want it on the salty side as it will be seasoning the potatoes).
  • Place hash browns in a large mixing bowl then pour in milk mixture and toss to evenly coat. Transfer to a 13 by 9-inch baking dish (no need to grease dish) and spread into and even layer.
  • Place cornflakes in a gallon size resealable bag, seal bag and crush with a rolling pin to roughly pebble size bits.
  • Add 3 Tbsp melted butter to cornflake mixture then seal bag and toss to evenly coat with butter. Sprinkle cornflake mixture evenly over casserole.
  • Bake in preheated oven until hot throughout, about 40 - 50 minutes. Garnish with parsley and serve warm.

Steps:

  • Preheat oven to 350°F. Grease or spray with non-stick spray, a 9" x 13" baking dish. Set aside.
  • In a large mixing bowl, combine the sour cream, cream of chicken soup, ½ cup of the melted butter, and ranch seasoning.
  • Mix in the hash browns and shredded cheese.
  • Stir well to combine. Then fold the mixture into the prepared baking dish.
  • In a small bowl, combine the crushed Corn Flakes with remaining ½ cup of melted butter. Stir well to combine.
  • Sprinkle the butter corn flake crumble over the potato mixture.
  • Bake, uncovered for 40-45 minutes, until corn flake mixture appears dry, cheese is melted, and casserole is bubbly.

Steps:

  • Preheat oven to 350 degrees F.
  • Melt 3 tablespoons butter in a large skillet over medium heat. Sauté onion until beginning to soften. Sprinkle with flour and cook for 1 minute. Whisk in milk and chicken stock. Bring mixture to boil and let simmer to thicken, about 5 minutes. Season with salt and pepper. Remove from heat then stir in cheeses.
  • In a large bowl, combine cheese sauce with hash browns and sour cream. Check for seasonings and season with salt and pepper, if necessary. Transfer mixture to a a large casserole dish.
  • Make topping. Melt remaining butter and stir it into crushed cereal. Spread over potato mixture and sprinkle with more cheese. Cover with foil and bake for 45 minutes, until the mixture cheese bubbly.
  • Garnish baked casserole with chives. Serve warm.

30 ounce frozen shredded hash browns (, thawed)
2 cup shredded cheddar cheese
3 cups corn flakes cereal
4 tablespoons unsalted butter (, melted)

Steps:

  • Allow potatoes to thaw in your fridge overnight, or spread them on a baking sheet and warm them in the oven at 200 degrees for about 20 minutes, until thawed.
  • Preheat oven to 350 degrees.
  • To a large bowl add the sour cream, cream of chicken, melted butter, salt, pepper, onion, hash browns and cheddar and toss the ingredients together well.
  • Add cornflakes to a large ziplock bag and smash just a few times then pour in butter and smash a few more times combining the butter and corn flakes together.
  • Spread potato mixture into a 9x13 inch baking dish. Sprinkle cornflakes over the potato mixture and bake for 45-50 minutes, uncovered.

1 small garlic clove, minced
1.5 cups frozen, shredded hash brown potatoes
1 TBSP. all-purpose flour
3 TBSP. chicken broth
3 TBSP. sour cream or plain greek yogurt
1 TBSP. grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon ground pepper
1/2 cup sharp cheddar cheese shredded and firmly packed, divided
1/4 cup crushed cornflake cereal or panko bread crumbs

Steps:

  • Preheat oven to 350°F (177°C). In a medium sized skillet, add 1 Tablespoon butter and when melted add the diced onions and saute until translucent. Add the garlic and cook until fragrant. Remove from heat and set aside.
  • In a large bowl, mix together the cooked onions, garlic, hash browns, flour, chicken stock, sour cream, parmesan cheese, salt, pepper, and 1/2 of the cheddar cheese.
  • Spread into a small oval baking dish and top with remaining ½ cup cheddar cheese.
  • Melt the remaining Tablespoon of butter and mix with the crushed cornflake crumbs. Sprinkle evenly over the top of the casserole.
  • Bake for 50-55 minutes or until cooked throughout and and sides are bubbly.
