- Preheat oven to 350°. Line a 9"-x-5" loaf pan with parchment paper.
- In a medium bowl, microwave cauliflower for 3 to 4 minutes or until soft and tender. Let cool. When cool enough to handle, transfer cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
- In a medium bowl, beat egg whites until stiff peaks form. Set aside.
- In a large bowl, whisk together almond flour, baking powder, salt, egg yolks, melted butter, garlic, and about a quarter of the whipped egg whites. Beat until well combined, then stir in microwaved cauliflower.
- Fold in the remaining egg whites and mix until just incorporated. (Mixture should be fluffy.) Fold in the thyme and most of the parsley (save some for topping). Transfer batter to prepared pan and sprinkle with remaining herbs.
- Bake until the top is golden, about 45 to 50 minutes.
- Let cool completely before slicing. Sprinkle slices with Parmesan and more parsley before serving.

- Preheat the oven to 475 degrees F. Line a rimmed baking sheet with parchment and coat with cooking spray.
- Add the cauliflower and garlic to a food processor and pulse until finely ground and the consistency of couscous. Transfer the cauliflower mixture to a large bowl. Add the Italian seasoning, red pepper flakes if using, eggs, 1 cup Cheddar, 1/2 cup Parmesan, 1/2 teaspoon salt and a few grinds of pepper and combine until the mixture holds together when squeezed.
- Spread the cauliflower mixture into an 8-by-12-inch rectangle about a 1/4 inch thick on the prepared baking sheet. Use the straight edge of the parchment as your guide to keep the cauliflower mixture edges straight too. Bake until the crust turns golden brown all over, 18 to 20 minutes.
- Remove the baking sheet from the oven and lay another piece of parchment on top of the crust. Fit a second rimmed baking sheet on top so the bottom of the baking sheet is touching the parchment. Using oven mitts, hold the 2 baking sheets together and flip them over so the crust is now on the parchment on the upside-down baking sheet. Remove the first parchment from the crust, cut the crust into 1 1/2-inch-thick strips (you should have 8 to 9 strips) and spread them apart a little. Sprinkle with the remaining 1 cup Cheddar and 1/2 cup Parmesan. Bake on the upside-down baking sheet until the cheese is melted and turning brown in spots and the visible crust is a deep golden brown, 8 to 10 minutes.
- Let cool for 5 minutes, then transfer the sticks on the parchment to a serving plate and serve with the marinara sauce for dipping.

- Preheat oven to 350 degrees.
- Mix the first four ingredients together in a large bowl until evenly distributed.
- Line a baking sheet with parchment paper and use the olive oil to grease the parchment paper.
- Spread and flatten the cauliflower mixture into a rectangle about 1/4 inch thick. Make sure the thickness is even. Use your hands to make it a square.
- Bake for 25-30 minutes until dried out slightly and browned on the edges.

- Preheat the oven to 425 F. Cut the cauliflower into half-inch slices, trimming and discarding the core.
- Rub the bottom of a large casserole or gratin dish with 2 tablespoons butter and season with salt and pepper. Layer the cauliflower slices in the bottom of the dish.
- Cut the bread into large chunks, then roughly chop until you have coarse crumbs (about 2 cups). Smash the garlic cloves and remove the papery peel. Melt the remaining butter in a large skillet over medium heat; add the garlic and the breadcrumbs and toast until slightly golden. Season with salt and pepper. Add ½ cup water and the oil to the cauliflower, top with the toasted breadcrumbs, and sprinkle with the Parmesan. Season with salt and pepper. Transfer to a food processor; pulse until smooth, about 15 pulses. Place in a clean kitchen towel or several layers of paper towel. Squeeze out liquid until completely dry; transfer the cauliflower to a large bowl.
- Add egg yolks, flour mix, oil, baking powder, garlic powder and 3/4 teaspoon salt to the cauliflower. Stir and mix with your hands until the mixture is completely smooth (it will be very thick); set aside.
- Beat egg whites in a medium bowl with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes. Stir 1 cup of the whipped egg whites into the flour mixture until almost incorporated. In batches (about 1 1/2 cups at a time), fold in the remaining egg whites until just combined. Spoon the batter into the prepared loaf pan and bake until risen and golden brown on top, about 45 minutes. Remove from pan and transfer to a wire rack to cool completely, about 1 hour.
- When ready to make garlic bread, preheat oven to 425°F. Finely chop garlic on a cutting board and mash with the side of a knife until a paste forms. Stir the garlic paste, melted butter, parsley and the remaining 1/4 teaspoon salt together in a small bowl. Cut the cauliflower loaf into 12 slices; brush with the garlic-butter mixture. Place the slices in a single layer on a baking sheet. Bake, checking often to make sure it's not burning, until golden brown, 5 to 10 minutes. Serve immediately.

A lower in carb version of my favorite baked potato salad. Most people when I serve this can't tell right away that this is made with cauliflower. Even my cauliflower hating husband enjoys this salad!

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. When cool, crumble into bacon bits.

CAULIFLOWER GARLIC BREAD
Saw this recipe on FB and a lower carb version of garlic bread and in my search to attempt healthier eating and the struggle to get veggies into my husband decided to try it. It was pretty easy and a nice fast bread when you need to get something ready in a hurry. Certainly NOT up to your regular garlic bread it was nice and I believe healthier. However; the background flavor of cauliflower was still there and I'd cut it back to half of whats called for. If I make it again I would leave out the cauliflower completely and believer then it'd be a nice addition to dinner. but I've posted here exaclty as I found it so anyone can make the decision as the want.

- In a large pot boil water and cook cauliflower for 8-10 minutes, drain and let cool.

I absolutely love this dish. Even my father, who does not like garlic or cauliflower that much, was raving about this dish. It is essential to use fresh bread crumbs. I usually buy a baguette or country-style bread from the grocery store, and after cutting off the crust and tearing it into slices, put it in the food processor until it forms crumbs the size I want. This recipe is from the Williams Sonoma Vegetable Cookbook.

- Bring a large saucepan 3/4 full of water to a boil. Add a pinch of salt, the sugar, and the cauliflower and boil until tender, about 5 minutes. Do not overcook.
- Drain, rinse under running cold water, and leave to drain.
- In a large frying pan over medium heat, warm 4-5 Tb of the oil. When the oil is hot, add the crumbs and toss them constantly until they are evenly toasted, browned, and crisp, about 5 minutes.
- Add the garlic, turn the crumbs once or twice, and remove them from the pan. Do not allow the garlic to brown; it should be cooked only enough to flavor the crumbs.
- Heat the remaining 2-3 Tb oil in the same pan over medium heat. Add the cauliflower and mash and break it up a bit as it lightly browns in the oil and become slightly tender, about 5 minutes. Do not allow the cauliflower to become crisp and dark.
- Add the crispy garlic crumbs to the pan and toss them with the cauliflower over medium-low heat, mashing some of the cauliflower and allowing some of it to keep its shape, about 5 minutes.
- Season to taste with salt and pepper and serve hot.
