PULLED PORK SANDWICH WITH BBQ SAUCE AND COLESLAW

Pulled Pork Sandwich with BBQ Sauce and Coleslaw image

Provided by Amanda Freitag

Categories     main-dish

Time 9h45m

Yield 15 sandwiches

Number Of Ingredients 23

1 1/2 cups ketchup
1/2 cup yellow mustard
1/2 cup packed dark brown sugar
3 medium garlic cloves, finely chopped
3 tablespoons cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons Cajun seasoning
1 yellow onion, thinly sliced
4 medium cloves garlic, crushed
2 cup chicken stock or low-sodium chicken broth
3 tablespoons Cajun seasoning
1 tablespoon packed dark brown sugar
One 4 1/2- to 5-pound boneless or bone-in pork shoulder (also known as pork
butt), twine or netting removed
1/2 head green cabbage, finely shredded
1/2 head red cabbage, finely shredded
2 large carrots, finely shredded
1/2 red onion, finely sliced
3/4 cup mayonnaise
3 tablespoons cider vinegar
2 tablespoons sugar
Salt and freshly ground black pepper
15 soft hamburger buns

Steps:

  • For the BBQ sauce: Combine the ketchup, mustard, brown sugar, garlic, cider vinegar, Worcestershire, Cajun seasoning and 1/2 cup water in a small saucepan over medium heat. Bring to a boil, stirring until ingredients are completely incorporated. Reduce the heat to low and simmer gently until the flavors have melded and sauce has thickened enough to coat the back of a spoon, 30 to 40 minutes.
  • Remove from the heat and let cool to room temperature. If not using right away, cover and refrigerate for up to 2 weeks.
  • For the pulled pork: Preheat the oven to 275 degrees F.
  • Spread out the onions and garlic in an even layer in a roasting pan and pour in the chicken stock. Combine the Cajun seasoning and brown sugar in a small bowl. Pat the pork shoulder dry with paper towels and then rub all over with the spice mixture. Set the pork on top of the onions and garlic and cover the roasting pan with foil. Transfer to the oven and cook until the pork is fork tender, 6 to 8 hours.
  • Remove the pork to a cutting board to cool. Strain the cooking liquid through a fine-mesh sieve and reserve.
  • If the pork has a bone, remove and discard it. With two forks, shred the meat into bite-size pieces, discarding any large pieces of fat. Return the shredded meat to the roasting pan. Add 2 cups of the BBQ sauce and a bit of the reserved cooking liquid if too dry.
  • For the coleslaw: Combine the red and green cabbage, carrots and red onions in a large bowl. Whisk together the mayonnaise, cider vinegar, sugar, and some salt and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine. Taste for seasoning; adjust with more salt, pepper or sugar as needed.
  • Serve the pulled pork on buns topped with coleslaw.

KITTENCAL'S FAMOUS COLESLAW

Kittencal's Famous Coleslaw image

This is the most delicious coleslaw that you will ever have! I make this for weddings, large socials and in the summer for BBQ's and parties, and there is never anything left it all goes and everyone wants the recipe --- plan ahead the coleslaw needs to be refrigerated for the stated time to blend the flavors, this coleslaw will intensify in flavor with chilling time --- this is not a thick heavy dressing like some other coleslaw recipes it's the perfect texture and flavor and what makes this coleslaw stand out from all others is the fresh lemon juice so please use only fresh I have used bottled in the past and it is just not the same --- the dressing amount will yield enough for two 16-ounce packages prepared coleslaw mix or 1 head of green cabbage --- for one 16-ounce package prepared coleslaw mix use the dressing amounts posted on bottom of recipe and add in 3 or more large of chopped green onions. BBQ COLESLAW

BBQ Coleslaw image

Being from Georgia, I thought there was only one kind of slaw, grated cabbage, Duke's Mayo and a little sugar, served twice daily! However, when we would go to North Carolina to visit my husbands relatives, they had a STRANGE kind of coleslaw, totally different from anything I had ever eaten. It has a very strong vinegar (Eastern North Carolina) based BBQ taste, so ya better take it easy, but it is SOOOOOOO good! Enjoy!!

Provided by Georgia On My Mind.

Categories     Vegetable

Time 20m

Yield 12 serving(s)

Number Of Ingredients 9

1/4 cup cider vinegar
2 tablespoons sugar (I use Splenda now)
2/3 cup red barbecue sauce (your favorite brand)
1/4 cup water
2 tablespoons mayonnaise
1 teaspoon dry mustard
1/2 teaspoon Tabasco sauce (to taste)
6 cups cabbage, shredded
2 cups carrots, shredded

Steps:

  • Combine vinegar and sugar in a small saucepan.
  • Cook over low heat until sugar dissolves.
  • Stir in barbecue sauce, water, mayonnaise, dry mustard and Tabasco.
  • Stir over low heat until everything dissolves.
  • Combine carrots and cabbage in a large bowl.
  • Pour BBQ dressing over and toss well to combine everything.
  • Cover and refrigerate and serve cold. Best made the day before to allow flavors to get together!
  • Time to make does not include chilling time and does not include the time to shred your own cabbage and carrots.

THE 15 BEST COLESLAW RECIPES FOR YOUR SUMMER BBQ - GREATIST

From greatist.com
Author Sarah Garone
  • Spicy lime & jalapeño coleslaw. This recipe hits the mark for a fantastically spicy side dish that’s packed with flavor but isn’t overwhelming. With cumin, lime juice, and cilantro, this coleslaw makes a great pairing for any kind of taco or braised meat (and can work for keto barbecue guests, since it has no sugar).
  • Blue cheese coleslaw. This is some serious coleslaw: A full cup of crumbled blue cheese combined with some mayonnaise makes for a rich and creamy slaw that begs to be served with buffalo chicken tenders (or grilled chicken sliders).
  • Classic coleslaw. This is the coleslaw of your childhood, the one that came alongside fast food hot dog and hamburger orders in a little plastic cup. A classic not to be messed with, this recipe has the traditional mayonnaise-based dressed (and the option of adding quick-pickled jalapeños).
  • Mediterranean coleslaw. Low-calorie, gluten-free, and packed with Mediterranean flav-ah? Check, check, and check. This lemony coleslaw is equally at home next to burgers or Med-style dishes like hummus and pita chips or spanakopita.
  • Vegan coleslaw. Speaking of vegan goodness, you won’t find any dairy or egg ingredients here! Plant-based mayo is the secret weapon behind this extra-easy coleslaw.
