MOZZARELLA STICKS

- Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
- Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
- In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)
LIGHT AND BAKED MOZZARELLA STICKS
This is a light version on a classic appetizer. Serve with marinara sauce.

Steps:
- Preheat a toaster oven on broil setting, or set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Spray a small baking sheet with cooking spray.
- Insert toothpick vertically into each cheese stick half to mid-way point. Beat egg in a small bowl. Place bread crumbs in a separate small bowl.
- Dip each cheese stick into egg, then press into bread crumbs. Repeat dipping in egg and breadcrumbs for a double-thick coating. Place cheese sticks on prepared baking sheet and spray with additional cooking spray for uniform browning.
- Broil in preheated oven until golden brown, 4 to 5 minutes. Allow cheese sticks to set before serving, about 1 minute.

BAKED MOZZARELLA STICKS

Steps:
- Cut cheese in 1/2" x 1/2" x 3" sticks.
- Toss with flour and set aside.
- In small bowl, beat together eggs and water and set aside.
- In separate bowl, combine bread crumbs, italian seasoning and garlic powder.
- Dip sticks in egg mixture, then coat with crumbs.
- Repeat this process.
- Place on a plate in a single layer, cover with foil and chill for 2 hours.
- Preheat oven to 400 degrees.
- Place cheese sticks on an aluminum foil lined baking sheet and drizzle with melted butter.
- Bake until crisp, about 8 to 10 minutes.Flip after 5 minutes.
- Heat a little spaghetti sauce to use for dipping.

- In a plastic bag, combine bread crumbs, italian seasoning, garlic powder, and pepper.
- Coat cheese sticks in flour, then dip in egg mixture and bread crumb mixture.
- Repeat egg and bread crumb coatings.
- Cover and chill for at least 4 hours or overnight.
- Place on an ungreased baking sheet& drizzle with butter.
- Bake, uncovered, at 400 degrees for 6-8 minutes or until heated through.
- Allow to stand for 3-5 minutes before serving.
- Use marinara or spaghetti sauce for dipping.

- Preheat oven to 375 degrees F (190 degrees C).
- Unroll crescent roll dough on work surface and separate into 4 rectangles, pressing perforations together to seal. Cut each rectangle into 2 smaller rectangles. Place 1 slice of mozzarella cheese on each; roll up tightly and press edges together to seal. Arrange seam side-down on a baking sheet.
- Bake in the preheated oven until golden brown, 11 to 13 minutes.

- Slice each piece of cheese in half cross-wise so that you have 24 shorter pieces. Arrange the cheese in a single layer on a parchment-lined baking sheet or plate, then freeze until completely solid, about 1 hour.
- When ready to bake, place the flour in a shallow bowl (a pie dish works well). In a separate shallow bowl, whisk the egg, egg white, and 1 tablespoon water until well combined. In a third shallow bowl, combine the whole wheat bread crumbs, panko, Italian seasoning, and garlic powder. Arrange the plates in line (flour, eggs, breadcrumbs). Line a large, rimmed baking sheet with parchment paper.
