These raspberry thumbprint cookies are rich and buttery. They are crispy on the outside, tender on the inside, and bursting with raspberry jam flavor!

2 & 1/2 cups (315g) all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup (227g) unsalted butter, room temperature
1 1/2 cups (300g) granulated sugar, divided
1 large egg
2 tsp vanilla extract
1 cup seedless raspberry jam or raspberry preserve

Steps:

  • Preheat oven to 325F and line 3 cookie sheets with parchment paper.
  • In a medium bowl, toss together the flour, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and 1 cup sugar (reserving the other 1/2 cup for rolling) together on medium speed until light and fluffy, about 3 or 4 minutes. Scrape down the sides of the bowl as needed. Mix in the egg and vanilla extract until incorporated.
  • With the mixer on low, stir in half of the flour mixture until just combined. Repeat with the remaining flour mixture.
  • Roll the dough into 1″ balls and coat in sugar. Place 1″ apart on the prepared baking sheets.
  • Make an indent in each cookie using a 1/4 tsp round measuring spoon or your thumb. Fill each well with raspberry jam. Slightly overfill so that's it's rounded on top because the jam will flatten out as the cookies bake.
  • Bake for 15 minutes or until the edges are lightly browned.

Very Easy Raspberry Thumbprint Cookies (Uses Cookie Mix) image

These are a very easy thumbprint cookie to make as they use a packaged cookie mix. They look pretty around the Holidays. You can use green drizzle (made with the white chocolate chips in recipe with added green food coloring) with the raspberry jam & they look great or even use colored red or green sugar. You can also use apricot or any other flavor jam you desire in making these if raspberry not your thing. Got the recipe from Shoprite website and have been using it ever since.

1 (17 1/2 ounce) package betty crocker sugar cookie mix (Betty Crocker sugar cookie mix)
1/2 cup butter, melted
1 egg
3 tablespoons flour
1/3 cup seedless raspberry jam (or any flavor you prefer)
1 cup white vanilla baking chips
colored decorator sugar, if desired

Steps:

  • Pre-heat oven to 375°F In large bowl, stir cookie mix, butter, egg and flour until soft dough forms.
  • Roll dough into 3/4-inch balls; place 2-inches apart on ungreased cookie sheet. Using thumb or handle of wooden spoon, make indentation in center of each cookie. Spoon about 1/4 teaspoon jam into each indentation.
  • Bake 8 to 10 minutes or until edges are light golden brown. Cool 5 minutes; remove from cookie sheet to wire rack.
  • In small microwavable bowl, microwave baking chips on High 1 to 2 minutes or until chips are melted; stir until smooth. Spoon melted chips into small resealable plastic bag; cut small hole in corner of bag. Squeeze bag gently to drizzle melted chips over cookies. Sprinkle with colored sugar.

1/2 cup raspberry jam or jelly
1 tablespoon Chambord or kirsch
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 sticks (1 cup) butter, at room temperature
2/3 cup sugar
2 large egg yolks
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter 2 large baking sheets.
  • In a small bowl, combine the jam and Chambord. Stir to combine.
  • In a medium bowl, combine the flour, baking powder, and salt and whisk to blend.
  • In a large bowl using an electric mixer, beat the butter and sugar until light and creamy. Beat in the egg yolks, lemon zest, lemon juice and vanilla. Add the flour mixture in 2 additions and beat just until moist clumps form. Gather the dough together into a ball.
  • Pinch off the dough to form 1-inch balls. Place on the prepared baking sheets, spacing 1-inch apart. Use your floured index finger or 1/2 teaspoon measuring spoon to create depressions in the center of each ball. Fill each indentation with nearly 1/2 teaspoon of the jam mixture. Bake until golden brown, about 20 minutes.
  • Transfer the cookies to wire racks to cool completely.

Karo recipe that adds chocolate to all those wonderful thumbprint cookies. I looked through all 'zaar had, but didn't see one with chocolate and using Karo corn syrup.

1 cup margarine
3/4 cup light brown sugar (packed)
1 teaspoon vanilla extract
1/2 cup light corn syrup
1 egg
3 -3 1/2 cups flour
1/2 teaspoon salt
2 cups finely chopped nuts
1/3 cup light corn syrup
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven 325 degrees.
  • Mix margarine, light brown sugar, and vanilla till smooth.
  • Beat in 1/2 cup corn syrup and egg.
  • Blend in 3 cups of flour and salt, adding more flour if necessary to make dough.
  • You can refrigerate at this point for 48 hours.
  • Roll dough into 1 inch balls, roll in nuts to coat.
  • Place on ungreased sheet 2 inches apart. Press thumb into ball.
  • Fill with prepared filling:.
  • Warm 1/3 cup light corn syrup in saucepan or carefully in microwave.
  • Add chocolate chips; heat and stir till melted and mixed.
  • Let cool till you can handle it easily. Then put into pastry bag or sealable bag. (Cut SMALL snip from bottom corner).
  • Fill hollow thumbprints with chocolate mix.
  • Bake 10-12 minutes or till firm.
  • Cool on wire rack.
