MINT CHOCOLATE FUDGE

Mint Chocolate Fudge image

Mint Chocolate Fudge is a delicious and easy treat to make. Good luck eating only one piece!

Provided by Lisa Longley

Categories     Dessert

Time 8h10m

Number Of Ingredients 5

1 1/2 cups milk chocolate chips
1 1/2 cups white chocolate chips
14 ounces sweetened condensed milk (be sure not to buy evaporated milk)
1 teaspoon mint extract
green food coloring

Steps:

  • Line an 8x8 pan with foil so that it is sticking out over the edges.
  • Seperately, and following the instructions on the bag, melt the chocolate in the microwave. A lot of the melting will occur from stirring the chocolate, stir very well after every 30 second interval, and be careful not to over heat the chocolate. It will likely be melted after less than a minute.
  • Add half of the sweetened condensed milk to one bowl of melted chocolate and half to the other.
  • Add the mint extract to the chocolate bowl, and add the green food coloring to the white chips. Stir until fully combined.
  • Remove both pans from the heat and add a few spoonfuls at a time of each one to the pan. Continue adding randomly until both sauce pans are empty. Shake the 8x8 pan a little to make it even. Very gently run a butter knife a few times through to give it a swirled effect.
  • Refrigerate overnight. Pull the foil (with the fudge) out of the pan and away from the fudge. Cut off the rough edges (just a very small amount to make a clean edge). Then cut the block of fudge into four large pieces. Cut each fourth into 9 pieces for a total of 36 pieces of fudge. Serve or store in an airtight container.

Chocolate Andes Mint Fudge is an easy, delicious, no candy thermometer needed, recipe!

Provided by Aimee Shugarman

Categories     Candy

Time 4h20m

Number Of Ingredients 9

2 cups granulated sugar
3/4 cup heavy whipping cream
3/4 cup unsalted butter
pinch of kosher salt
1 bag (10 ounce) andes creme de menthe baking chips
7 ounces marshmallow cream
1 cup andes creme de menthe baking chips
1/2 cup milk chocolate chips, melted
sprinkles

Steps:

  • Line a 9-inch square dish with parchment paper. Set aside.
  • In a large mixing bowl, add 1 bag Andes baking chips and marshmallow cream. Set aside.
  • In a large saucepan, combine sugar, butter, salt and cream. Heat over medium high heat, stirring constantly, until mixture begins to boil. Continue boiling for 3-4 minutes (at a rolling boil). Remove from heat. Pour over Andes chips and marshmallow cream.
  • Using an electric mixer, beat mixture until baking chips are melted and fudge is creamy (about 1-2 minutes). Very gently, fold in extra 1 cup Andes baking chips. You want to stir as little as possible so they don't completely melt.
  • Pour into prepared pan. Allow fudge to set at room temperature for 4 hours.
  • For the garnish, drizzle melted chocolate over the fudge and add sprinkles. Cut and serve!

  • Line a tin with parchment paper – I used a 9×9″ Square Tin as it makes a nice depth of fudge for this recipe!
  • Put the Dark Chocolate, Milk Chocolate, and Condensed Milk into a heavy based saucepan – melt on a low heat, stiring often so that the chocolate doesn’t catch on the bottom and burn and so that all the ingredients mix together well.
  • Or melt the two chocolates together carefully in the microwave/double boiler, and then add in the Condensed Milk and mix well till smooth.
  • Once melted, tip in the sifted icing sugar and combine well, it might take a bit of beating, but its worth it!

  • Preheat oven to 325*F. Prepare a 9″x9″ (or 8″x8″) square baking pan by lining parchment paper across the bottom and sides of the pan, like a sling. You can use a little butter on the pan to help the paper stay in place.
  • In a stainless steel bowl over a pan of simmering water (or double boiler), melt the butter and chocolate.
  • In the bowl of your electric mixer, or with a hand mixer, beat all ingredients until smooth. Add 1 or two drops of green food coloring (one at a time, you don’t want it too green). If the frosting is too thick, add a bit more cream (the frosting should be just thin enough to spread). Spread the frosting evenly over the cooled brownie layer. Place in the refrigerator for about 5-10 minutes, or until slightly firm.
  • In a heatproof bowl over a pan of simmering water, melt the chocolate and butter. Spread over the mint filling, then top with chopped Andes mints. Refrigerate for about 30 minutes, or until the chocolate glaze starts to dull.
