FRUITY CHICKEN RICE PILAF



Fruity Chicken Rice Pilaf image

Dinner ready in 30 minutes! This dry fruit filled rice and chicken pilaf recipe is easily prepared on a stovetop.

1/2 pound ground chicken or turkey breast
4 medium green onions, sliced (1/4 cup)
2 cups water
1 package (6 1/4 ounces) fast-cooking long-grain and wild rice mix with herbs
1/2 cup dried cherries or cranberries
1/2 cup chopped dried peaches or apricots
1/4 teaspoon ground nutmeg or cinnamon

Steps:

  • Spray 3-quart saucepan with cooking spray; heat over medium heat. Cook chicken and onions in saucepan about 8 minutes, stirring occasionally, until chicken is no longer pink. Stir in water and seasoning packet from rice mix. Heat to boiling, stirring occasionally; reduce heat to low.
  • Stir in rice, cherries, peaches and nutmeg. Cover and simmer about 5 minutes or until rice is tender and fruits are heated through.

2 tablespoons butter
1/2 cup onion, chopped
1/2 cup celery, chopped
1 (14 1/2 ounce) can reduced-sodium chicken broth, low-salt
1/2 cup water
1 (6 ounce) package long grain and wild rice blend
3/4 cup raisins, dried or 3/4 cup dried cherries
1/3 cup pecans, coarsely chopped and toasted

Steps:

  • Melt butter in medium saucepan over med-high heat.
  • Add onions and celery.
  • Cook 3 minutes, stirring occasionally.
  • Add broth, water, rice, contents of seasoning packet, and fruit.
  • Bring to boil. Reduce heat to med-low.
  • Cover and simmer 25 minutes, or until liquid is absorbed.
  • Stir in pecans and serve.

1/4 cup orzo pasta
1/4 cup margarine
1 cup long grain rice
3 tablespoons instant chicken broth
3 cups boiling water

Steps:

  • Melt margerine in a casserole dish.
  • Brown orzo.
  • Add boiling water and chicken broth, and stir.
  • Add rice and stir.
  • Cook in 350 degree oven for 30 minutes.
  • For variation, try adding 1/2 cup mixed vegetables, 1 can mushrooms, or 1 small can peas.
  • Use your imagination.
