Steps:
- Cook pasta in a large pot of generously salted water until al dente. Reserve 1 1/2 cups pasta water; drain.
- Heat a large skillet over medium heat. Add tuna with its oil and garlic and cook, stirring a few times, until garlic is golden in spots, about 5 minutes. Stir in capers and pepper flakes and cook, 30 seconds. Add 1 cup reserved pasta water; bring to a simmer. Add cooked pasta and simmer, tossing a few times, until liquid is reduced to a sauce that coats pasta.
- Remove from heat and toss in lemon zest and juice, oil, and parsley; season with pepper. Add more pasta water, a few tablespoons at a time, until pasta is evenly coated. Serve, sprinkled with more pepper flakes.

- Bring water to boil for pasta, salt water, and cook a minute less than package directions
- Meanwhile, heat a large skillet over low heat with EVOO, 2 turns of the pan, then add butter over medium heat and let it melt, bubble and begin to brown, then stir in anchovies, reduce the heat to low, cover and melt anchovies into the butter and oil
- Add garlic, calabrian chili paste, and capers, stir, then add tuna, breaking it up, and crank the heat back up a little to heat it through
- Add the vermouth to the sauce and reduce heat to simmer
- Drain pasta, reserving a cup of starchy cooking water
- Add pasta to the brown butter sauce with tuna along with the starchy cooking water, the juice of a lemon and the herbs, then toss and let it absorb all the delicious flavor
- Serve topped with very thinly sliced onions
COLD TUNA SALAD WITH PASTA

- 1. Boil pasta and rinse in cold water.
- 2. Drain cans of tuna and place in bowl with lid.
- 3. Combine the two: pasta and tuna.
- 4. Re-hydrate minced onion flakes with 2 T. warm water.
- 5. While onion is re-hydrating, place frozen peas in a microwave safe bowl with 1/3 c. water. Cover and microwave for 3 minutes. Rinse peas in cold water and add to pasta and tuna mixture.
- 6. Add the shredded cheese.
- 7. Strain any excess liquid off the onion and add along with the black pepper to mixture.
- 8. Add mayonnaise last and stir thoroughly. Cover and let chill in refrigerator. Makes 5 generous 1/2 cup servings.
- 9. I will usually scoop a 1/2 cup onto a large lettuce leaf, but it is also good served with crackers.

- Cook pasta to al dente in well seasoned water to aldente. Drain pasta well, sprinkle with a olive oil and seasoning salt. Cool to room temperature
- Slice the olives, dice celery into a small dice and thinly slice the green onions. Drain the tuna and flake it well.
- In a large mixing bowl combine pasta, olives, celery, green onions and tuna along with the grated parmesan cheese. Season with salt and pepper. Mix to combine.

- Fill a small pot of lukewarm water and place 3 large eggs inside. Make sure the eggs are completely submerged. Let it the water come to a boil. Then turn the heat off, cover with a lid, and set your timer for 8 minutes.
- Carefully transfer the hard-boiled eggs to an ice bath and peel the eggs once they're cooled.
- Then chop the eggs into fine pieces.
- Now cook 12 oz of elbow macaroni in Pot of water al dente. Make sure to Salt the water really well.
- Drain 2 (5 oz) cans of albacore tuna and place the fish into a large bowl along with 1/4 cup chopped onion, 3/4 cup mayonnaise, 1/4 tsp black pepper, a Pinch of salt, 1 chopped stalk celery, 2 tbsp chopped dill. 
- Mix everything together until it's all well combined. Serve chilled

- Preheat oven to 410 degrees. Line a large baking sheet with parchment paper.
- Toss zucchini and tomatoes in 1 tbsp olive oil and salt and pepper to taste. Roast for 20-25 minutes, stirring once halfway through.
- While vegetables roast, prepare corn and pasta. Bring 2 pots of water to a boil.
- In one pot, add corn and boil for 3-5 minutes until fork tender. Remove from heat and run under cold water to stop cooking. Use a sharp knife to shave off kernels from the cob.
- In the other pot, add pasta and cook according to package instructions.
- Combine cooked vegetables, corn, pasta, basil, tuna and parmesan cheese in a mixing bowl. Toss with remaining olive oil and lemon juice, adding salt and pepper to taste.

- In a skillet large enough to hold the pasta, heat the oil, 1 1/2 teaspoons of the garlic, the red chile pepper flakes, and capers over medium heat until fragrant (but not browned), about 1 minute.

- Saute garlic in oil.

- Add shredded cheese (or cut uo into small pieces) Larger pieces oe grated cheese is better than finely shredded cheese.
- Add mayonnaise.
- Toss together until evenly distributed
- Refrigerate untill chilled before serving if neeed
- It will keep in refrigerator for several days
