- Place the water and raisins in a small bowl; let stand for 5 minutes. Meanwhile, in a large bowl, combine the yogurt, ginger, allspice and cardamom. Drain raisins; stir into yogurt mixture. Cover and refrigerate for at least 1 hour., Toss bananas in lemon juice. Alternately thread fruit on wooden skewers or place in a serving bowl. Serve with yogurt sauce.

- Heat milk in a large saucepan over medium-high heat, stirring frequently, until it is steaming, barely bubbling and registers 180 degrees F on an instant-read or candy thermometer. (Do not leave unattended--it can boil over very quickly.)
- Carefully pour the milk into a clean, heat-safe 5- to 8-cup container. Let stand, stirring frequently, until cooled to 110 degrees F. Combine yogurt with 1/2 cup of the 110 degrees milk in a small bowl, then stir the mixture back into the warm milk.
- Cover the container and wrap in a clean kitchen towel to help keep it warm. Place in a very warm place (see Tip) and let stand, undisturbed, until thickened and tangy, at least 8 hours and up to 12 hours. Refrigerate until cold, about 2 hours. The yogurt will thicken a bit more in the refrigerator.

FRUIT SALAD WITH HONEY YOGURT RECIPE
Steps:
- In a small bowl, combine yogurt, vanilla and honey. Refrigerate until serving.
- Peel the citrus and remove all the skin and white pith around the fruit, reserving the remaining peel to squeeze juice from. Cut the orange segments free, breaking them into bite size pieces. Place orange and mandarin pieces into bowl. Squeeze the juice from what's left of the fruit into the bowl. The juice will stop the rest of the fruit from turning brown.
- Core and cut the apple and pear, removing seeds. Cut into bite size chunks and add to bowl.
- Peel and slice the banana and if berries are large, cut in bite size pieces. Place banana and berries in bowl with other fruit. Stir in the walnuts.
- Divide among small serving dishes or glasses and top with yogurt sauce.
GRILLED FRUIT SKEWERS WITH SWEET YOGURT SAUCE
Steps:
- If you are using wooden skewers, soak them in water for at least 30 minutes.
- In a small pot combine the brown sugar with 1/4 cup water, cinnamon and orange zest. Bring to a boil over medium heat. Remove from heat and set aside to cool to room temperature.
- Preheat the grill or grill pan over low heat.
- Thread 2 pieces of each type of fruit onto each skewer. Grill the skewers until the fruit is warm and lightly charred about 6 minutes giving the skewers a quarter turn every 1 1/2 minutes. Make sure to brush with the brown sugar syrup after each turn.
- While the fruit is grilling, make the dipping sauce. Whisk together the yogurt, orange juice, and 1 tablespoon of the brown sugar syrup in a serving bowl. Reserve 2 tablespoons for the Online Round 2 recipe Sweet and Spicy Chicken Wraps.
- Arrange the skewers on a serving platter and serve with the dipping sauce on the side.
