This irresistible cake recipe combines carrots, pumpkin, sweet potato, and walnuts for a dessert that's perfect for Thanksgiving or any other occasion.

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
0.25 teaspoon baking soda
0.25 teaspoon salt
0.75 cup granulated sugar
0.25 cup packed brown sugar
0.75 cup canned pumpkin or mashed sweet potato*
2 eggs
0.25 cup cooking oil
0.5 cup finely shredded carrot
0.333 cup buttermilk
0.75 cup walnuts, toasted and chopped
1 Buttercream Frosting, below
1 Skillet Fruit, below
0.25 cup butter, softened
1 cup powdered sugar
2 teaspoon milk
0.5 teaspoon vanilla
0.25 cup powdered sugar
3 tablespoon butter
2 tablespoon granulated sugar
2 red-skin pears, cored and slliced
6 kumquats, thinly sliced
0.5 cup fresh cranberries

Steps:

  • Preheat oven to 350 degrees F. Grease 8x8x2-inch square or 9x1-1/2-inch round baking pan; line the bottom of pan with waxed paper. Grease paper. Lightly coat pan with flour; set aside. In medium bowl combine flour, baking powder, pumpkin pie spice, baking soda, and salt; set aside.
  • In large mixing bowl combine sugars, pumpkin, eggs and oil. Stir in carrot and buttermilk. Gradually beat in flour mixture; stir in walnuts. Transfer to pan. Bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack for 15 minutes. Remove from pan; cool completely.
  • Place cake on serving platter and top with Buttercream Frosting. Just before serving spoon on warm Skillet Fruit. Makes 8 servings. Buttercream Frosting
  • In large mixing bowl beat butter with an electric mixer on medium speed until smooth. Gradually beat in 1 cup powdered sugar. Beat in milk and vanilla. Gradually beat in 1/4 to 1/2 cup additional powdered sugar until frosting reaches spreading consistency. Skillet Fruit
  • In large skillet melt butter; stir in granulated sugar. Add red-skin pears, kumquats, and fresh cranberries. Cook, gently stirring occasionally, until pears are just tender (2 to 4 minutes). Remove from heat and let stand for 10 minutes.

4 tablespoons unsalted butter, room temperature, plus more for skillet
1 cup all-purpose flour, plus more for skillet
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon coarse salt
3/4 cup plus 2 tablespoons sugar
1 large egg
1/2 cup buttermilk
2 ripe medium plums, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Butter an 8-inch ovenproof skillet (preferably cast iron), and dust with flour. Whisk together flour, baking powder, baking soda, and salt. With an electric mixer on medium, beat butter and 3/4 cup sugar until pale and fluffy, 3 to 5 minutes. Beat in egg. Add flour mixture in 3 batches, alternating with buttermilk; beat until combined.
  • Transfer batter to the prepared skillet; smooth top. Arrange plums on top, fanning the slices; sprinkle with the remaining 2 tablespoons sugar.
  • Bake until golden brown and a cake tester into center comes out clean, 35 to 40 minutes. Transfer to a wire rack to cool slightly before serving.

2 tablespoons unsalted butter
1/2 cup packed light brown sugar
1 pint blackberries
1 cup canned diced pineapple, drained
Leaves from 2 sprigs thyme
Pinch kosher salt
1 box yellow cake mix (I like Duncan Hines)
12 ounces creme fraiche
2 tablespoons granulated sugar
Seeds from 1/2 vanilla bean
Zest of 1/2 lemon
Pinch kosher salt

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Melt together the butter and brown sugar in a 10-inch cast-iron skillet on medium heat. When the sugar and butter have melted together stir in the blackberries, pineapple, thyme leaves and salt. Cook, stirring occasionally, until the brown sugar begins to bubble, about 3 minutes. Once this happens turn the heat off.
  • Prepare the cake mix as directed on the package and pour over the fruit. Bake until the cake is slightly golden brown, 30 to 35 minutes.
  • Meanwhile, make the creme fraiche: Whisk the creme fraiche, sugar, vanilla bean seeds, lemon zest and salt in a medium bowl to stiff peaks.
  • To serve: Serve slices of cake warm or at room temperature with dollops of vanilla creme fraiche.

1 (15 ounce) can fruit cocktail, undrained
1 teaspoon vanilla extract

Steps:

  • In a large bowl, stir together flour, sugar, baking soda and salt.
  • Add eggs, fruit cocktail and vanilla and mix all ingredients well (by hand--do not use electric mixer); batter will seem very thick at first (if you use good fruit cocktail that has mostly fruit, not all juice), but this is the way it should be (the juice in the fruit cocktail is the only liquid in this recipe except, of course, the eggs).
  • Pour into a greased 9 inch x 13 inch pan.
  • Bake at 350°F for about 30 minutes or until toothpick inserted near center comes out clean.
  • This cake is best with Fruit Cocktail Cake Icing #7062.

It is just a good basic recipe--only your imagination limits what you can do with it. It is just a good ole southern recipe and super simple. Awesome with fresh strawberries.

½ cup butter
1 cup white sugar
1 egg
1 cup self-rising flour
1 teaspoon vanilla extract
¼ cup milk, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a 9-inch cast iron skillet over low heat. Transfer 1/2 of the melted butter to a mixing bowl, leaving remaining butter in the skillet.
  • Add sugar to the mixing bowl and beat with the melted butter until well blended. Add egg and mix until well beaten. Mix in flour and vanilla. Add milk, 2 tablespoons at a time, until mixture is the consistency of pancake batter. Pour batter into the skillet.

Here's a dessert that's perfect for a large fall dinner party, like ones we have at our friend's house upstate. Bring the two rustic skillets straight from the oven to the table to serve up. This cake is a cross between an apple cake and English pudding, so it is best eaten warm. Sprinkling melted butter, sugar, and cinnamon on the apples enables them to be slightly caramelized before they are enveloped by the batter. It's not like a pie or a tart, so don't hate me when the apple slices sink in. I've baked this cake in numerous ways and prefer it when the apples get all gooey and delicious from baking in the batter. Serve with creme Anglaise, whipped cream or vanilla bean ice cream.

4 apples, cored and thinly sliced
1/2 cup (120 milliliters) freshly squeezed lemon juice
Milk and Honey Cake
2 tablespoon unsalted butter, melted
6 tablespoons (80 grams) cane sugar
1/2 teaspoon ground cinnamon
Confectioners' sugar, for dusting
Vanilla bean ice cream, for serving (optional)
2 1/4 cups (290 grams) all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoon baking soda
1/4 teaspoon salt
3 eggs, at room temperature
1 cup (240 milliliters) buttermilk, shake carton
3/4 cup (255 grams) honey
1/2 teaspoon pure vanilla extract
12 tablespoons (1 1/2 sticks/170 grams) unsalted butter, at room temperature
3/4 cup (150 grams) granulated sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease two 9-inch cast iron skillets with butter or prepare springform pans, making sure they're lined.
  • In a small bowl, toss the apple slices in lemon juice to stop them from browning, cover with plastic wrap, and set aside.
  • Make the batter for the Milk and Honey Cake according to directions.
  • For the Milk and Honey Cake:
  • Place a large sifter or a sieve in a large bowl. Add the flour, baking powder, baking soda, and salt and sift.
  • In a small bowl, whisk the eggs together. Set aside.
  • In another small bowl, whisk together the buttermilk, honey, and vanilla. Set aside.
  • Using an electric mixer with beaters or a paddle attachment, beat the butter for 30 to 45 seconds on medium speed, then gradually add the sugar. When all the sugar has been added, stop and scrape down the sides of the bowl with a spatula. Continue beating on medium speed for another 4 minutes or until light in color and fluffy.
  • With the mixer still on medium speed, add the eggs 1 tablespoon at a time, over 3 minutes. If the batter curdles, add 1 to 2 tablespoons of the flour to bind it back together.
  • With the mixer on low speed, add the dry and wet ingredients alternately two times, starting and ending with the dry. Mix until just combined and smooth. Don't overbeat. Scrape down the sides and bottom of the bowl with a spatula to make sure it's well combined.
  • Divide the batter evenly between the skillets or pans and smooth the tops with a spatula. Working from the center out, gently lay the apple slices on top of the batter; leave behind any excess juice. Brush or drizzle the melted butter over the apple slices. Mix the sugar and cinnamon together and sprinkle evenly over the apple slices.
  • Bake for approximately 30 minutes or until golden. A skewer may not come out completely clean due to the moisture of the apple, but it shouldn't be wet. If baked in a springform pan, let sit for 10 minutes then release and remove parchment paper.
  • Serve with a dusting of confectioners' sugar and vanilla bean ice cream.

PAN-FRIED ANGEL'S FOOD CAKE

Do you have leftover angel's food cake that is starting to get stale. Here's an unusual but delicious thing to do with it: pan-fry it in your skillet. Sound unlikely? Try it. The buttery crust that develops on the cake is heavenly. I used a chocolate angel's food from the bakery when I first made this and I didn't think it could be improved upon. Then I thought about giving the slices other toppings: ice cream, whipped cream or Cool Whip, fruit salsa, strawberries and cream for an unusual strawberry shortcake -- the possibilities seem endless. This recipe is a keeper! It came from BH&G.

1 angel's food cake or 1 partial cake
8 tablespoons butter, softened
honey (homemade or purchased) or jam (homemade or purchased)

Steps:

  • Cut the cake into 16 slices. If you have only a part of a cake, knowing that 1/4 of the cake yields 4 slices will help you determine the approximate size of the slice.
  • Lightly spread cut sides of 8 cake slices with 1/2 of the butter. Add cake slices to a large nonstick skillet.
  • Place skillet over medium-high heat. Cook 3 minutes or until golden brown. Transfer slices to serving plate. Remove pan from heat and allow to cool while heating jam.
  • In small saucepan heat jam until it begins to melt. Transfer to serving bowl.
  • Lightly spread remaining cake slices with remaining butter, add to cooled pan, and toast as instructed above. Serve with heated jam (or your choice of other toppings). Recipe is easily reduced to meet your amount of cake.
