I got this recipe from my English teacher who wanted us to do a project on medieval times. I expected this medieval bread to turn out tasteless and gray but it was surprisingly good! My brother enjoyed it the most and hes not one for complimenting me on my cooking ;). It is a sweet bread that is good at breakfast or with coffee and tea. It tastes the best with Recipe #128436.

Number Of Ingredients 11

1/4 cup warm water
2 (1/2 ounce) packages dry yeast
3/4 cup sugar
3 room temp. eggs
1/2 cup room temp. butter
13 ounces evaporated milk
2 teaspoons salt
1 teaspoon cardamom
8 cups approximate flour
1 egg
1 tablespoon milk or 1 tablespoon water

Steps:

  • Combine water, yeast, and 1 Tbs. of sugar in a bowl. Stir to dissolve yeast.
  • Add the rest of the sugar, eggs, butter, evaporated milk, and cardamom. Mix well.
  • Stir in 3 cups of the flour and beat well.
  • Add remaining flour and mix until a soft dough is formed.
  • Cover and let rest for about 30 minute.
  • Turn out onto a lightly floured surface. Knead until smooth and elastic.
  • Put dough into a greased bowl and turn over to coat both sides.
  • Cover and let rise until doubled in bulk (about 1 hour).
  • Put raised dough onto a lightly oiled surface, and divide into 2 pieces.
  • Shape each into a loaf (I just leave it in a ball) and place on a greased baking sheet.
  • Beat egg and milk (or water) for egg wash. Brush entire surface of dough with the egg wash.
  • Again let rise until doubled, and then brush with the egg wash once more.
  • Bake bread at 375°F for 35 minutes, or until loaf sounds hollow when tapped with a finger.

2 eggs
1 tablespoon sugar
1/4 teaspoon cardamom

Steps:

  • Preheat oven to 350°F; grease bottom of loaf pan.
  • Mix all ingredients, except topping, in a large bowl.
  • Pour into loaf pan. Mix topping ingredients and sprinkle on top.
  • Bake 55-65 minutes, until toothpick inserted in center comes out clean cool 10 minutes; remove to wire rack to cool completely, 1 hour.

2 (1/4 ounce) packages active dry yeast
1/2 cup warm water (110 degrees)
1/2 cup butter, cut into chunks
1 cup milk
3 large eggs
1/4 cup granulated sugar
2 teaspoons vanilla
1 teaspoon grated lemon peel
1/2 teaspoon ground cardamom or 1/2 teaspoon mace
1/2 teaspoon salt
5 1/2 cups all-purpose flour
3/4 cup slivered almonds
1 cup golden raisin
3 tablespoons orange juice
2 tablespoons brandy or 2 tablespoons vanilla
1 cup coarsely chopped peeled apple
1 cup coarsely chopped dried apricot
2 teaspoons ground cinnamon
1 teaspoon grated orange peel
1 large egg yolk
1 tablespoon water
1 1/2 cups powdered sugar
2 tablespoons orange juice

Steps:

  • In the large bowl of an electric mixer, combine yeast with warm water, soften for about 5 minutes. In a 1- to 1 1/2 -quart pan, combine butter and milk; warm over medium heat until milk is 110 degrees. Butter does not need to melt. (Or heat butter and milk in a microwave-safe bowl, uncovered, in a microwave until mixture is 110 degrees.)
  • Add milk mixture, whole eggs, granulated sugar, vanilla, lemon peel, cardamom, salt and 3 cups flour to yeast. Beat at medium speed until dough is stretchy and shiny, 5 to 8 minutes. Stir in 2 1/4 cups flour.
  • With a dough hook attachment, beat at high speed until dough pulls cleanly from sides of bowl, 5 to 8 minutes. If dough still sticks, add flour, 1 tablespoon at a time, until dough pulls free. (Or scrape dough onto a lightly floured board and knead by hand until smooth and elastic, about 10 minutes.)
  • Place dough in a lightly greased bowl and cover with plastic wrap. Let rise in a warm place until doubled, about 1 hour.
  • Meanwhile, heat oven to 350 degrees and make filling. Place slivered almonds in a 9-inch pan and bake until golden, about 10 minutes.
  • Soak 1 cup golden raisins in orange juice and brandy or vanilla until plump, about 30 minutes.
  • In a food processor, finely chop raisin mixture, almonds, chopped apple, dried apricots, cinnamon and grated orange peel.
  • When dough is ready, punch dough down. On a floured surface, roll into a 10-by-36-inch rectangle. Spread fruit filling over dough to within 1/2 inch of long sides. Roll from a long side, jelly roll-style. Cut into three equal-sized loafs. Pinch and smooth ends of loaf to prevent filling from falling out.
  • Place seam-side down on a lightly greased baking sheet. Cover with plastic wrap; let rise in a warm place until puffy, about 25 minutes. Mix egg yolk and water. Brush over tree.
  • Bake in a 350-degree oven until golden brown, 40 to 45 minute. If necessary, cover loosely with foil the last 10 minutes of baking to prevent over browning.
  • Remove from oven and cool. Mix powdered sugar with orange juice until smooth.
  • Spoon glaze over bread. Slice when warm or cool and wrap in plastic.
  • Makes 3 loaves.
  • Christmas tree variation: Before rolling out dough, set aside 1/3 cup. Roll and fill remaining dough as directed. Take the long piece of dough, seam-side down, and zig-zag it into a stacked "S" shape to make a tree that is narrow at top and broad at base. Form reserved 1/3 cup dough into a ball and attach it to the base of tree as the trunk. Continue to rise and bake as directed above. Makes 1 large loaf.

CARDAMOM-FLAVORED CREAM FOR FRUIT

What is required here is not a cream that one can go out and buy. This "cream" is really a kind of pudding or kheer, thickened by boiling milk down, not by adding starch to it. In order to take some of the labor out of the process, Indians have taken to adding condensed milk. This works very well indeed. This is a thinnish cream, ideal to serve with fruit. I put the cut-up fruit (mangoes, guavas, pears, peaches, and bananas are ideal, but I have used berries as well) in individual bowls, or in old-fashioned ice cream cups, and then pour the flavored cream over the top.

Yield makes 2 cups and serves 4¿6

4 cups whole milk
6 cardamom pods
1/4 cup sugar
1/2 cup sweetened condensed milk

Steps:

  • Bring the milk to a boil over medium or medium-low heat in a very heavy, wide pan, deep enough to let the milk rise a bit without boiling over. Stir as the milk heats. (I prefer to heat up my milk in a microwave oven and just pour it into the pan to speed up matters.) As soon as the milk starts bubbling, add the cardamom pods and stir. Adjust the heat, generally to medium low, so the milk simmers steadily without boiling over or catching at the bottom. Cook this way, stirring now and then, for about 25 minutes. Stir in any skin that forms. (It tastes very good when cold.) Add the sugar and condensed milk. Stir and cook another 10 minutes. Remove cardamom pods, cover, and cool in the refrigerator.

2 packages (1/4 ounce each) active dry yeast
1-1/2 teaspoons ground cardamom

1/2 cup honey
2 large eggs, room temperature
2 tablespoons sugar

Steps:

  • In a large bowl, combine 2 cups flour, yeast, cardamom and salt. In a small saucepan, heat 1-1/2 cups milk, butter and honey to 120°-130°. Add to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Stir in enough remaining flour to form a firm dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. 1 cup warm whole milk (110 degrees F (43 degrees C))
⅓ cup warm water (110 degrees F (43 degrees C))
½ cup white sugar
2 tablespoons melted butter
1 (.25 ounce) package active dry yeast
3 ½ cups all-purpose flour, or as needed
½ cup white sugar
1 ½ tablespoons ground cardamom
3 tablespoons ground cinnamon
½ cup melted butter
½ cup raisins
½ cup chopped walnuts
1 egg
1 tablespoon water
½ cup sliced almonds
¼ cup pearl sugar

Steps:

  • Whisk together the warm milk, warm water, sugar, and 2 tablespoons melted butter in a mixing bowl until the sugar has dissolved. Sprinkle yeast over top, and set aside for 5 minutes.
  • Once the yeast is foamy, stir in the flour, adding more if needed to make a stiff dough. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place into an oiled bowl, cover with a cloth, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Combine 1/2 cup sugar with the cardamom and cinnamon in a small bowl; set aside. Deflate the dough and turn it out onto a lightly floured surface. Roll the dough into a 9x13-inch rectangle, and brush with 1/2 cup of melted butter. Sprinkle with the cardamom sugar, raisins, and walnuts. Roll into a log, pinch the edges closed, and place onto a parchment paper-lined baking sheet. Cover with a cloth, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • With a sharp knife score the top layer of the roll with V-shapes that don't quite meet in the middle the whole length of the roll, this will make the bread look braided, and is very pretty, but could be skipped. Beat the egg with 1 tablespoon of water in a small bowl. Brush the egg wash over the top of the bread. Sprinkle with almonds and pearl sugar.
  • Bake in the preheated oven until the bread is golden-brown and sounds hollow when tapped on the bottom, 30 to 35 minutes. Cool completely on a wire rack before slicing.

Compote
8 oz. rhubarb (about 3 medium stalks), cut into ½" pieces (about 2 cups)
4 oz. raspberries (about 1 cup)
¼ cup (50 g) granulated sugar
2 green cardamom pods, cracked
1 vanilla bean, split lengthwise
Filling
¾ cup heavy cream
¾ cup (60 g) unsweetened shredded coconut
2 Tbsp. granulated sugar
⅛ tsp. kosher salt
French toast and assembly
¼ cup (50 g) granulated sugar
2 green cardamom pods, crushed
½ cup whole milk
4 large eggs
½ cup heavy cream
¼ tsp. almond extract
¼ tsp. rose water or ⅛ tsp. rose extract
⅛ tsp. kosher salt
8 (½"-thick) slices bread (shokupan, pain de mie, Pullman, or similar white bread)
Unsalted butter or vegetable oil (for pan)
Pure maple syrup; coconut whipped cream, coconut yogurt, or dairy whipped cream; finely chopped pistachios; sprinkles; food-grade edible rose petals; unsweetened coconut flakes (for serving; optional)

Steps:

  • Compote
  • Preheat oven to 400°F. Gently combine rhubarb and raspberries in a shallow baking dish that will hold them snugly. Scatter sugar over and add cardamom. Scrape seeds from vanilla bean into a small bowl and set aside for making the French toast. Add vanilla pod to dish. Cover with foil and bake fruit 15 minutes. Carefully remove foil, stir gently, and roast, uncovered, until fruit is beginning to collapse but is still bright pink, about 10 minutes more. Remove baking dish from oven; pluck out cardamom pods and vanilla pod and discard. Let cool (juices will thicken as compote cools). Do ahead: Compote can be made 3 days ahead. Transfer to an airtight container; cover and chill.
  • Filling
  • Bring cream, coconut, sugar, and salt to a boil in a medium heavy saucepan over medium heat, stirring. Cook, stirring often, until thickened to a paste and pale yellow (sound should turn from bubbling to a faint sizzle and there should be very little liquid remaining), 6-8 minutes. Scrape into a bowl and let cool. Do ahead: Filling can be made 3 days ahead. Cover and chill.
  • French toast and assembly
  • Reduce oven temperature to 200°F. Pour sugar evenly into a shallow baking dish large enough to accommodate 4 slices of bread. Using your fingers or a spoon, press pods and seeds into sugar, then scrape in reserved vanilla bean seeds and work into sugar. Add milk. (For the fullest flavor, combine spiced sugar and milk in a heatproof jug or bowl and microwave until steaming, 30-60 seconds. Let sit 5 minutes to infuse, then pour back into dish.) Whisk in eggs, cream, almond extract, rose water, and salt.
  • Divide coconut filling among 4 slices of bread (about 3 Tbsp. each). Spread in an even layer, leaving a thin border at edges. Top with a second slice of bread to form sandwiches. Lay sandwiches in custard and let soak 2 minutes. Gently turn over and let sit while you heat the pan.
  • Melt enough butter or pour in oil to thinly coat a large cast-iron or nonstick skillet over medium heat. Cook 2 sandwiches until evenly golden, about 3 minutes per side. Transfer French toast to a baking sheet and keep warm in oven. Repeat with remaining 2 sandwiches.
  • Bake French toast 5 minutes. Remove from oven and transfer to plates. Top with raspberry-rhubarb compote, maple syrup, and other toppings as desired.
