COOKED FRUIT SALAD DRESSING
My mother handed this recipe down to me, and it has never failed to receive raves from my guests, especially the men. They enjoy it so much that they always put huge servings on their salads, so I rarely have leftovers!

Steps:
- Drain pineapple, reserving the juice. Set pineapple aside for salad. In a saucepan, combine sugar and cornstarch. Stir in the pineapple juice, orange juice and lemon juice. Add egg, mix well. Cook over medium heat, stirring constantly, until slightly thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat and stir in butter. Cover and chill. Serve over a mixture of fresh or canned fruit.

FRUIT COCKTAIL SALAD

Steps:
- Drain the juice out of the canned fruit cocktail. Reserve 1/4 of the fruit cocktail for the top.
- Add fruit cocktail, mini marshmallows, and cool whip to a medium to large sized bowl.
- Stir or fold the cool whip together with the fruit and marshmallows until well combined.
- Serve the salad in a clear glass bowl and flatten the top out with a spatula. Add some extra marshmallows and the reserved fruit cocktail to the top of the salad. This lets people know what is in the salad.
- Makes a total of 10 servings and I used a ½ cup for each serving.

FRUIT COCKTAIL DE LUXE W/ COOKED FRUIT SALAD DRESSING CA. 1927
The posting of this recipe is a result of a fun bit of sleuthing on my part, on Thanksgiving Day, 2009. A member of Zaar had lost her original recipe, which her Mother-In-Law had made and was beloved by her son. Every recipe she tried did not yield the same results so she asked for help in locating it in the Q & A forums. Several days of Internet searches by various members couldn't locate teh recipe. Fortunately, I have a 1927 cookbook at home and spent the last hour having a ball, trying to figure out "what in the world" would that fruit salad and dressing be called. How about "Fruit Salad Dressing"? LOL According to this cookbook from The Culinary Institute of Chicago, this recipe was called "Fruit Cocktail De Luxe" and was meant to be served at Ladies Luncheons over a bed of "crisp lettuce leaves on a glass plate". I can see a coterie of primly dressed ladies, all with white cotton gloves and netted hats, demurely sitting in stiff backed chairs, delicately dining on this fruit cocktail "de-luxe". Bless their wee cotton gloves! Note: Variations on the dressing are listed in Directions.

- FRUIT COCKTAIL DE LUXE DIRECTIONS:.
- Combine fruit of choice, marshmallows and cooked dressing and whipped cream and chill. Serve on a bed of fresh lettuce and garnish with a sprig of fresh mint and pineapple cubes.
- FRUIT SALAD DRESSING:.
- Mix the beaten eggs, sugar,flour, salt, pineapple juice, lemon and orange juices in a medium saucepan.
- Over very low to medium low heat, stir all ingredients constantly until the mixture begins to thicken. This will take about 10 minutes. Low heat and constant stirring will prevent the eggs from curdling. (This is actually a Fruit Curd that you are making.).
- After mixture thickens and coats the back of a clean spoon, remove from heat and allow to cool completely.
- In the meantime, whip the whipped cream, starting on low speed for 2-3 minutes. As cream thickens, add both vanilla and almond extracts and then the 1/4 cup sugar. Beat until whipped cream holds soft peaks.
- When ready to serve, fold the whipped cream into the cooled Dressing. Add mixture to fruit pieces and serve.
- Variation I: Golden Pineapple Dressing--Omit orange juice. Use 2 egg yolks in place of whole egg. Use only 1 tablespoon fresh lemon juice. Add 1/4 cup butter.

24 HOUR FRUIT SALAD
This is a wonderful salad that is easily adaptable, and can be served as a salad with a holiday meal or as a dessert. The original recipe called for canned fruit cocktail, but I have modified it from that. I'm also allergic to pineapple, so I either pick it out or substitute more of the other fruits instead. All the fruits are really to taste. I could eat myself sick on this stuff, it is so good.

- The canned fruit needs to be completely dry, so recommend starting this 2 days in advance - draining the fruit overnight on the first day.
- On the day before you need the salad, whip the cream. You can sweeten it with a bit of sugar if desired, but it's not needed.
- Mix the pudding mix and milk together until thick.
- Fold the whipped cream and pudding together.
- Fold the fruits and marshmallows into the cream and pudding mixture.
- Refrigerate overnight.

- Important! Retain all juices from fruits as you cut them!
- Peel and cut apples, oranges and pears into chunks.
- Cut pineapple into chunks.
- Quarter red globe grapes, removing seeds.
- Add entire jar of undrained cherries.
- Sprinkle dry pudding mix over fruit.
- Toss fruit well until coated with pudding.
- Add splashes of soda and toss fruit until your fruit cocktail has a nice "sauce" but not too "soupy". This varies depending on how much juice you had from the fruits.
- Refrigerate to chill and let flavors blend. Cook time is chill time.

My Aunt Mona served this dressing with a large bowl of mixed fruit 60 years ago. It has been a family favorite for special occasions ever since. She layered the fruits in a glass bowl so their colors and textures could be admired by everyone. The dressing was offered in a gravy boat or served in a separate bowl. These are some of the fruits she liked to use: pineapple pieces; diced apples; peaches; pears; melon chunks or balls; grapes; bananas; Mandarin orange segments--and even nuts and chopped dates. Feel free to use your favorites. Amount of servings depends upon how much fruit is used and how big the bowl is.

- Whisk the flour & sugar together. Beat eggs until light, and whisk in flour & sugar.
- Drain a can of pineapple tidbits into a 2-cup measure, add the lemon and orange juices, and pour in enough vinegar to make 1-1/4 cups total liquid.
- Add to the egg mixture. Cook in double boiler, stirring constantly, until thickened.
- Chill thorougly, then fold in whipped cream.
- Fold into your mixed fruit--you really can use whatever fruit you have on hand. I've added mango, pears, starfruit, kiwi, and I can't remember what all!
- Chill and enjoy!

- In a blender or food processor, combine sugar, lemon juice, onion, mustard and salt.
- Process until well blended.
- With machine still running add oil in a slow steady stream until mixture is thick and smooth.
