FRANGELICO TIRAMISU

1 cup espresso coffee, or 8 teaspoons espresso powder dissolved in 1 cup boiling water
1 cup Frangelico hazlenut liqueur, plus more for the filling
2 eggs, separated
1/3 cup superfine sugar
1/4 cup Frangelico hazlenut liqueur
1 pound (2 cups) mascarpone
30 Savoiardi biscuits (lady fingers), approx. 14 ounces
3/4 cup chopped roasted hazelnuts
3 teaspoons unsweetened cocoa powder

Steps:

  • Combine the coffee and 1 cup Frangelico in a pitcher, and allow to cool if the coffee is hot.
  • Whisk the egg whites till frothy. In a separate bowl beat the yolks and sugar with the 1/4 cup Frangelico for the filling. Add the mascarpone to the yolks and sugar mixture, beating it in well to mix. Gently fold in the foamy egg whites, and mix again.
  • Pour half of the coffee and Frangelico mixture into a wide shallow bowl and dunk enough Savoiardi cookies for a layer, about 4 at a time, into the liquid, coating both sides. Line your tiramisu dish with the soaked Savoiardi cookies; they should be damp but not falling to pieces (though it wouldn't matter if they did). Pour any leftover liquid from the dipping process over the layer you have made.
  • Put half the mascarpone mixture on top of the soaked cookies and spread to make an even layer. Pour the remaining coffee and Frangelico mixture from the pitcher into the shallow dish and make another, final, layer of Savoiardi, dipping as before and layering on top of the mascarpone in the dish.
  • Pour any leftover liquid over the Savoiardi layer, and then cover with the final layer of mascarpone. Cover the dish with plastic wrap and leave overnight, or for at least 6 hours, in the refrigerator.
  • When you are ready to serve, take the tiramisu out of the refrigerator and remove the plastic wrap. Mix the chopped roasted hazelnuts with 2 teaspoons of cocoa and sprinkle over the top layer of mascarpone. Then dust with the final teaspoon of cocoa powder, pushing it through a strainer for lighter coverage, over the nut-rubbly tiramisu.

1/4 cup fresh lemon juice (from 1 lemon)
1/4 cup water
1/3 cup sugar
1 1/2 cups whipping cream
1/2 teaspoon ground cinnamon
5 tablespoons sugar
1 (15-ounce) container mascarpone cheese, at room temperature
1/2 cup hazelnut liqueur (recommended: Frangelico)
48 soft or hard ladyfinger cookies
1 1/4 cups lightly chopped (about 5 ounces) toasted and skinned hazelnuts
1 lemon, zested

Steps:

  • In a small saucepan, combine lemon juice, water and sugar over medium heat. Bring to a boil, reduce heat and simmer for 2 minutes, stirring occasionally, until the sugar has dissolved. Take the pan off the heat and allow the syrup to cool.;
  • Whip the cream in a large bowl until thick. Add the cinnamon and 2 tablespoons of the sugar and continue to whip until the cream holds soft peaks. In another bowl, cream together remaining sugar and mascarpone cheese for 30 seconds. Mix 1/4 of the cream into the mascarpone. Using a rubber spatula, fold in the remaining whipped cream. Set aside.
  • Place the hazelnut liqueur in a small shallow bowl. Dip 16 of the ladyfinger cookies in the hazelnut liqueur and line the bottom of a 13 by 9 by 2-inch serving dish or other decorative serving dish. Spoon any remaining hazelnut liqueur over the dipped cookies. Spread 1/3 of the mascarpone mixture over the cookies. Top with 1/3 of the hazelnuts.
  • Place the lemon syrup in a small shallow bowl. Dip 16 of the ladyfinger cookies in the syrup and place on top of the hazelnuts. Spread 1/3 of the mascarpone mixture over the cookies. Top with 1/3 hazelnuts. Dip remaining cookies in remaining syrup and place on top. Spoon any remaining syrup over the dipped cookies. Spread with remaining mascarpone and top with remaining hazelnuts and lemon zest.
  • Cover and refrigerate for at least 6 hours or preferably overnight. Remove the tiramisu from the refrigerator for 1 hour before serving.

1/2 cup sugar
1/4 cup water
1 cup hazelnuts, toasted
Filling
1 cup fresh tangerine juice (from about 5 tangerines)
1 cup plus 10 tablespoons sugar
8 large egg yolks
1 cup plus 10 tablespoons water
1/2 cup whipping cream
1 tablespoon grated tangerine peel
1 8.8-ounce containers mascarpone cheese or 16 ounces whipped cream cheese
7 tablespoons Grand Marnier or other orange liqueur
5 teaspoons instant espresso powder or instant coffee powder
3 (about) 4.4-ounce packages Champagne biscuits (4-inch-long ladyfinger-like biscuits)
Unsweetened cocoa powder
Tangerine slices (optional)

Steps:

  • For Praline:
  • Lightly oil baking sheet. Stir sugar and water in heavy medium saucepan over medium heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, brushing down sides of pan with pastry brush dipped into water and swirling pan occasionally. Mix in nuts. Pour onto prepared sheet; cool. Coarsely chop praline.
  • For Filling:
  • Boil tangerine juice in heavy large saucepan until reduced to 1/4 cup, about 12 minutes. Set aside. Whisk 1 cup sugar and yolks in large metal bowl. Whisk in 1 cup water. Set bowl over saucepan of simmering water and whisk constantly until candy thermometer registers 180°F., about 5 minutes. Remove from over water. Using electric mixer, beat mixture until cool, about 5 minutes. Mix in tangerine juice, cream and peel. Add mascarpone and 2 tablespoons Grand Marnier and beat until smooth. Fold in 1 cup praline (reserve remaining praline for another use). Chill filling while preparing biscuits.
  • Line 9-inch-diameter springform pan with 2 3/4-inch-high sides with plastic wrap. Stir remaining 10 tablespoons sugar, 10 tablespoons water and espresso powder in heavy small saucepan over low heat until sugar dissolves. Mix in 5 tablespoons Grand Marnier. Cool syrup.
  • Using sharp knife, trim 1 biscuit to 3-inch length. Soak biscuit in syrup 10 seconds per side. Place rounded end up and sugared side against side of prepared pan. Repeat with as many biscuits as necessary to cover sides of pan. Soak more biscuits in syrup and place on bottom of pan, covering completely. Pour half of filling into pan. Soak more biscuits in syrup 10 seconds per side; place atop filling, covering completely. Spoon remaining filling over. Freeze overnight.
  • Release pan sides from cake. Fold down plastic. Sift cocoa over dessert. Garnish with tangerine slices, if desired.

1/3 cup Kahlúa liqueur (optional)
Vanilla Sponge Cake (recipe follows)
1/4 cup finely ground espresso
2 pints espresso ice cream, such as Starbucks Dark Roast Espresso Swirl (see the Guide)
2 pints coffee ice cream, such as Breyers All Natural Ice Cream
Chocolate Curls (recipe follows)

Steps:

  • Place sugar and 2/3 cup water in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Remove from heat; stir in espresso and Kahl�a. Let the syrup cool.
  • Using a serrated knife, cut the sponge cake in half horizontally, making two layers. Place one layer in the bottom of a 9-by-9-by-2-inch baking pan. Using a pastry brush, brush with 3/4 cup cooled syrup. Sift 2 tablespoons ground espresso over cake.
  • Place espresso ice cream in the bowl of an electric mixer. Beat on low speed with the paddle attachment until spreadable. Spread ice cream over cake; top with second layer of sponge cake. Brush with remaining syrup. Transfer cake to freezer for 20 minutes.
  • Remove cake from freezer; sprinkle with remaining 2 tablespoons ground espresso. Place coffee ice cream in mixer bowl. Beat on low speed until spreadable. Spread ice cream over cake, forming large swirls. Return to freezer; freeze until completely hardened. To serve, garnish with chocolate curls.

  • Dissolve coffee granules in hot water. Cool to room temperature; set aside., Meanwhile, line the bottom and sides of a 9-in. springform pan with ladyfingers. Set aside 1/4 cup crushed candy for topping. Stir coffee mixture and remaining crushed candy into ice cream. Spoon into prepared pan. Freeze for 30 minutes., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold in creme de cacao if desired. Spread over ice cream. 3 tablespoons rum (dark or light)
2 (3 ounce) packages ladyfingers
½ gallon coffee ice cream, softened on microwave's defrost setting for 1 minute
4 ounces bittersweet chocolate, coarsely grated
1 (8 ounce) container mascarpone cheese
3 tablespoons coffee flavored liqueur
1 tablespoon sugar
⅓ cup half-and-half

Steps:

  • Mix coffee and rum. Line a 2-quart metal loaf pan with plastic wrap, leaving an overhang. Use a pastry brush to paint the spiked coffee onto the ladyfingers. Then line the bottom and sides of the pan with ladyfingers, rounded side out.
  • Reserving 1/2 cup of chocolate for garnish, stir rest of chocolate into ice cream. Turn ice cream into loaf pan, using a rubber spatula to press ice cream evenly into pan. Cover with plastic wrap and freeze for at least 2 hours or up to 5 days.
  • When ready to serve, mix cheese, liqueur and sugar until smooth; whisk in half-and-half to form a thick but pourable sauce. Unmold dessert, using ends of plastic wrap to remove it from pan; peel away wrap. Slice loaf, drizzle with sauce and sprinkle with chocolate.

2 (3 ounce) packages ladyfingers
1/2 cup coffee liqueur or 1/2 cup strong coffee
6 ounces semi-sweet chocolate chips or 6 ounces bittersweet chocolate chips, melted
14 ounces sweetened condensed milk
1 (48 ounce) coffee ice cream
8 ounces cream cheese, softened
2 tablespoons sugar
1 teaspoon vanilla extract
1 cup whipped topping, thawed or 1 cup whipped cream
1 teaspoon unsweetened cocoa powder

Steps:

  • Line bottom and sides of a 9" springform pan with the ladyfingers. Brush with the coffee liqueur. Freeze at least 20 minutes.
  • In a small bowl, combine the melted chocolate with sweetened condensed milk; chill 10 minutes. Scoop 1/2 of the ice cream into the prepared pan, pressing down to level the layer. Evenly top with the chocolate mixture. Finish by scooping the last 1/2 of the ice cream over the top, pressing down to level the layer. Cover and freeze 5 hours or overnight.
  • To serve, remove ring from pan and arrange cake on serving platter. Beat the cream cheese, sugar and vanilla; fold in the whipped topping. Evenly spread over the ice cream layer, then sprinkle with cocoa powder.

Try these indulgent chocolate and nutty tiramisu pots as a weekend treat, or to impress your dinner guests

2 large eggs, seperated
30g caster sugar
150g mascarpone
100g chocolate hazelnut spread
100ml strong coffee
50ml hazelnut liqueur or Irish cream liqueur
8 sponge fingers
cocoa powder, for dusting
50g hazelnuts, toasted and finely chopped

Steps:

  • Whisk the egg whites until soft peaks form and they hold their shape. In a separate bowl whisk together the egg yolks and sugar. Gently beat in the mascarpone and chocolate hazelnut spread. Mix a spoonful of the egg white mix into the chocolate mixture to loosen, then very gently fold the remaining egg white into the bowl, being careful not to knock out the air.
  • Pour the coffee and alcohol into a shallow bowl. Break the fingers in half to fit into the glasses. Dip them in the boozy coffee mixture on each side for 1 second. Spoon some of the chocolate mixture into the base of each glass. Top with 2 halves of a sponge finger, then gently spread over another layer of chocolate. Repeat this process again. Chill overnight.
  • Finish the pots with a dusting of cocoa and the chopped hazelnuts.
