FROZEN CHOCOLATE-COVERED BANANAS
The secret to whipping up the best-ever frozen bananas is to freeze the bananas both before and after dunking them in your chocolate of choice. Doing so ensures the bananas are completely frozen and gives the chocolate a solid surface to grab onto. It also firms up the chocolate much more quickly, so make sure you have those toppings ready. And speaking of toppings...A few of my favorites include: sprinkles, chopped nuts, toasted coconut, toffee chips, crushed candies ...but don't stop there! A drizzle of melted peanut butter or chopped bacon would be welcome complements to this frozen treat.

Steps:
- Line a baking sheet with wax paper.
- Peel the bananas and then slice them in half widthwise. Carefully insert an ice-pop stick into the bottom of each banana, then place on the prepared baking sheet. Freeze the bananas for 1 hour.
- Melt the chocolate chips with the vegetable oil in a deep metal bowl set over a saucepan of barely simmering water, stirring occasionally, until the mixture is smooth. Remove the bowl of chocolate and set it aside.
- Remove the bananas from the freezer. Dip a banana in the chocolate, smoothing it over the entirety of the banana with a spoon. Immediately sprinkle the banana with the assorted sprinkles, crushed candy or pretzel pieces, then return it to the baking sheet. Repeat the dipping and decorating process with the remaining bananas. Return them to the freezer for 10 minutes, or until the chocolate is firm. Serve immediately or store the bananas in an airtight container in the freezer.
FROZEN BANANAS
Based on a recipe from Jennifer Cornbleet's book, Raw Food Made Easy for 1 or 2 People. She says in its introduction, "Freeze your extra bananas so you will always have some on hand for quick shakes." Unfortunately for me, I froze my bananas before reading her recipe! I will update after I discover how truly difficult it is to peel a frozen banana! UPDATE: it's truly difficult! :( I will definitely go with this recipe the next time! :)

Steps:
- Place bananas so they are not touching on a plate and freeze for one hour. (This will prevent the bananas from sticking together.).
- Transfer to a resealable freezer bag, pressing out as much air as possible before sealing the bag, and return bananas to freezer.
- Frozen bananas will keep for up to one month.

CHOCOLATE DIPPED FROZEN BANANAS
This is me and my brothers recipe for yummy frozen bananas.You will sure be surprised how quick and easy these are to make.

Steps:
- Cut off a inch off the bottom of each unpeeled banana, and gently insert a popsicle stick into each one. Then unpeel bananas. Place banana's onto a baking sheet and freeze until frozen.
- In a double boiler melt chocolate chips and shortening. Dip frozen bananas into melted chocolate, then roll in coconut, chopped nuts, sprinkles, or anything you want.
- Eat immediatly or freeze to eat them another time. Enjoy!

Steps:
- Unpeel bananas, slice in half, insert wooden skewers, and press halves back together.
- Wrap tightly with plastic wrap and place in freezer until firm, about 3 hours.
- In microwave or on stovetop, melt chocolate bars.
- Remove bananas from freezer (work on one or two at a time).
- Dip into melted chocolate and coat thoroughly.
- If desired, allow chocolate to firm slightly, then roll in any of the optional ingredients.
- Place bananas back in freezer on sheets of wax paper to harden, at least 30 more minutes.
- Remove, eat and enjoy!
