Pineapple chunks, mandarin oranges, strawberries and grapes are treated to a dressing of wine and sparkling club soda in this delightful salad. Serve in dessert dishes or set the whole bowl on the table for a fetching presentation. -Taste of Home Test Kitchen, Milwaukee, Wisconsin

1 fresh pineapple, peeled and cut into chunks or 1 can (20 ounces) pineapple chunks, drained
1 can (11 ounces) mandarin oranges, drained
1 cup halved fresh strawberries
1 cup halved green grapes
1 cup white wine or white grape juice
1/2 cup chilled club soda

Steps:

  • In a large serving bowl, combine the pineapple, oranges, strawberries and grapes. Combine wine or grape juice and club soda; pour over fruit. Cover and refrigerate for at least 2 hours, stirring occasionally. Serve with a slotted spoon.

Cherry gelatin dissolved in cranberry juice and club soda is laced with blueberries, raspberries and strawberries for a dazzling salad or dessert.

2 cups boiling reduced calorie cranberry juice cocktail
1 pkg. (8-serving size) JELL-O Cherry Flavor Sugar Free Gelatin
1-1/2 cups cold club soda or seltzer
1/4 cup creme de cassis
1 tsp. lemon juice
1 cup blueberries
1 cup raspberries
1 cup sliced strawberries

Steps:

  • Stir boiling juice into gelatin in large bowl 2 minutes until completely dissolved. Stir in cold club soda, liqueur and lemon juice. Refrigerate about 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  • Toss berries gently. Stir in 2 cups of the berries. Spoon into 6-cup mold or bowl sprayed with cooking spray; cover. Refrigerate 4 hours or until firm.
  • Unmold. Garnish with remaining 1 cup berries.

I make this Jello often in the spring/summer. It looks really nice in a mold and sets up great. The fresh berries in the center of the mold makes a beautiful presentation.

2 cups cranberry juice cocktail (or cran-raspberry is good)
1 (6 ounce) package red Jell-O (black cherry or raspberry is what I love)
1 1/2 cups club soda
1/4 cup creme de cassis (I've never used but someday....) (optional)
1 teaspoon fresh lemon juice
3 cups raspberries or 3 cups sliced strawberries

Steps:

  • Stir boiling cranberry juice (heat in pan) into gelatin in large bowl at least 2 minutes (until well dissolved).
  • Stir in club soda, liqueur, and lemon juice.
  • Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites-I set my bowl inside a larger bowl of ice water and it takes about 20 minutes).
  • Stir in 2 cups of the berries.
  • Spoon into 5-cup mold.
  • Refrigerate about 4 hours or until firm.
  • Unmold and top with remaining 1 cup of berries in center.

1-1/2 cups boiling water
1 pkg. (8-serving size) JELL-O Orange Flavor Sugar Free Gelatin
2 cups cold diet ginger ale
1/2 cup seedless green grape halves
1/2 cup seedless red grape halves
1 can (11 oz.) mandarin oranges, drained

Steps:

  • Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Refrigerate 15 minutes. Gently stir in ginger ale. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Gently stir for 15 seconds. Stir in grapes and oranges.
  • Pour into 6-cup mold sprayed with cooking spray. Cover.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin in refrigerator.
