12 ounces linguine
2 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon crushed red pepper
2 tablespoons capers, drained
1/2 cup roughly chopped kalamata olives
One 28-ounce can San Marzano tomatoes
4 basil leaves, torn, plus more for garnish
One 5-ounce can albacore tuna packed in olive oil
Freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook until al dente.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and crushed red pepper and cook, stirring, until slightly toasted, 1 to 2 minutes. Add the capers and olives and fry 2 more minutes. Crush the tomatoes into the skillet with your hands and reserve the juices. Cook until the tomatoes are slightly dry, about 2 minutes. Add the reserved tomato juices, the basil, and salt to taste and cook until the sauce thickens, 1 to 2 minutes. Add the tuna with its oil, breaking it up with a fork, and season with salt.
  • Drain the pasta, reserving 1/2 cup of the cooking water, and return it to the pot. Add the sauce and the reserved cooking water and toss. Season with black pepper and garnish with more basil.

1 pound pasta noodles such as: penne
1 teaspoon extra-virgin olive oil
6 medium garlic cloves, thinly sliced
2 tablespoons capers rinsed, roughly chopped
2 anchovies, finely minced
1/2 cup pitted black olives such as kalamata, roughly chopped
1 pint cherry tomatoes, halved or 1 (28-ounce) can whole, peeled tomatoes, chopped
1/2 cup loosely packed, roughly chopped parsley or basil leaves
1 can rinsed and drained, white albacore tuna
1 teaspoon salt
Cracked black pepper

Steps:

  • Cook pasta in large pot of rapidly boiling water until al dente or done to your liking.
  • Meanwhile, prepare the sauce. Place olive oil and the garlic in a large saute pan and turn heat to medium. Cook until the garlic is fragrant and lightly golden. Add capers, anchovies, olives, and tomatoes. Cook until the tomatoes start to break down and become a sauce, about 8 minutes. Toss with cooked pasta. Add parsley and tuna and season, to taste, with salt and pepper. Serve immediately.

8 ounces dried linguine
1/4 cup extra virgin olive oil
2 teaspoons minced fresh garlic
1/2 teaspoon crushed fresh garlic
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon fennel seed, crushed
1 (7 ounce) can tuna packed in oil, drained
1/2 teaspoon sea salt
1 cup chopped canned tomato
1/2 teaspoon grated lemon zest
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. When boiling, cook the linguini.
  • Heat oil in a large skillet and add the garlic, red pepper flakes and fennel seeds. Cook until garlic is golden.
  • Add the tuna and sea salt. Then add the tomatoes and bring to a boil. Reduce heat to a simmer and simmer 4 minutes. Add the lemon zest.
  • Drain the cooked linguini and add to the pan with the tuna mixture. Toss gently and serve, garnished with chopped parsley.

4 tbsp extra-virgin olive oil
3 tbsp fresh flatleaf parsley , chopped
2 garlic cloves , finely chopped
1 red chilli , deseeded and finely chopped
1cm fresh ginger , peeled and finely chopped
450g creamed tomatoes (passata)
2 x 200g cans tuna in olive oil, drained and flaked
375g linguine

Steps:

  • Prepare the sauce: Heat the oil in a medium pan. Toss in 2 tbsp of the parsley, the garlic, chilli and ginger and fry for a few minutes until slightly soft. Tip in the tomatoes and cook for another few minutes. Fold in the tuna and season the sauce generously. Leave the sauce to simmer for 10 minutes.
  • Boil the pasta: Meanwhile, cook the pasta for 8-10 minutes, or as directed on the pack. Drain, then return to the pan. Pour the tuna sauce into the pasta and toss well. Sprinkle over the remaining parsley, divide between four bowls and serve.

Recipe source is the 'Good Food' magazine (April 2004). Use spaghetti instead of the linguine if you like, or try the sauce with Asian style noodles.

4 tablespoons extra virgin olive oil
3 tablespoons fresh flat leaf parsley, chopped
2 garlic cloves, finely chopped
1 red chile, deseeded and finely chopped
1/2 inch fresh ginger, peeled and finely chopped (1cm)
1 lb passata (creamed tomatoes, 450g)
400 g canned tuna in olive oil, drained and flaked (14oz)
375 g linguine (14oz, or spaghetti or Asian style noodles)

Steps:

  • Prepare the SAUCE:.
  • Heat the oil in a medium pan. Toss in 2 tbsp of the parsley, the garlic, chilli and ginger and fry for a few minutes until slightly soft. Tip in the tomatoes and cook for another few minutes. Fold in the tuna and season the sauce generously. Leave the sauce to simmer for 10 minutes.
  • Boil the PASTA:.
  • Meanwhile, cook the pasta as directed on the package. Drain, then return to the pan. Pour the tuna sauce into the pasta and toss well.
  • SERVE:.
  • Divide between four bowls, sprinkle over the remaining parsley and serve.

8 ounces linguine
1/4 cup lemon juice
1/4 cup light olive oil
1/4 cup green onion, chopped
1 tablespoon sugar
1 teaspoon italian seasoning
1 teaspoon seasoning salt
2 (6 ounce) cans tuna, drained
10 ounces frozen green peas, thawed
2 medium tomatoes, chopped (firm)

Steps:

  • Break linguine lengthwise into thirds and cook according to package directions; drain.
  • Meanwhile, in a large bowl, combine lemon juice, oil, onions, sugar, Italian seasoning, and salt, mix well.
  • Add HOT linguine; toss.
  • Flake tuna with a fork, then stir tuna and thawed peas into the linguine mixture. Gently toss in chopped tomatoes.
  • Cover; chill several hours or overnight to blend flavors. Serve cold.

150g spaghetti or linguine
1 tbsp olive oil
1 garlic clove, sliced
1 red chilli, deseeded and finely chopped, plus extra to serve (optional)
1 tbsp drained capers
small bunch of parsley, finely chopped (stalks included)
145g tuna in spring water, drained
90g rocket or baby spinach leaves
½ lemon, juiced

Steps:

  • Cook the spaghetti for 9-11 mins in a large pan of well-salted water until al dente.
  • Heat the oil in a wide frying pan over a very low heat, and gently cook the garlic and chilli to infuse the oil. Remove from the heat if the garlic is turning past light golden, as this will make it bitter.
  • Drain the pasta, keeping a cupful of the cooking water, and tip the spaghetti into the frying pan. Toss the pasta in the oil over a low heat, adding a little of the pasta water to emulsify into a sauce that coats the pasta, then fold in the capers, parsley, tuna and some seasoning. Don't stir too vigorously - you want to keep larger chunks of tuna. Toss the rocket and lemon juice through the spaghetti, and serve with extra chilli scattered over, if you like.

1 (6 ounce) can tuna, drained
1 (6 1/2 ounce) jar marinated artichokes, chopped, but with marinade reserved

3 tablespoons chopped black olives
1 tablespoon minced red onion (optional)
1 garlic clove, minced
1/4 teaspoon crushed red pepper flakes

Steps:

  • Lift the tuna from the jar with a fork, leaving the oil in the jar. Put the tuna into a small bowl and break into smaller pieces with the fork - don't shred too much as large chunks have a nice texture.
