Time 50m

Yield 18 to 20 servings

Number Of Ingredients 9

One 8-ounce block cream cheese, at room temperature
1 tablespoon Worcestershire sauce
1 1/2 teaspoons grated lemon zest (from 1 lemon)
5 cups shredded white Cheddar (1 pound)
Fine salt 1 small carrot
2 asparagus spears, blanched
3 black olives, sliced in half
One 12-inch strip English cucumber or one 12-inch piece celery shaved thinly with a vegetable peeler
Crackers, for serving

Steps:

  • Thoroughly combine the cream cheese, Worcestershire, lemon zest, 3 cups Cheddar and 1 teaspoon salt in the bowl of a stand mixer fitted with the paddle attachment, scraping down the sides with a rubber spatula as needed. Transfer to a bowl, then cover with plastic wrap and chill in the refrigerator until firm, about 30 minutes.
  • Roll the cheese mixture into three balls to form the base, body and head of the snowman. (They should be just over 4-, 3-, and 2-inches in diameter.) Roll the balls in the remaining 2 cups Cheddar to create a snowy exterior. Insert a 6- to 8-inch wooden skewer vertically into the largest ball; use it to attach the body and then the head of the snowman.
  • Cut an inch off the tapered tip of the carrot and use it for the snowman's nose. Insert the asparagus spears into the body for arms. Use two olive halves for eyes, and the remaining four for buttons. Wrap the thinly shaved cucumber or celery around his neck to form a scarf.
  • Serve the snowman on a platter surrounded by crackers.

This adorable Snowman Cheese Ball recipe is sure to be a crowd-pleasing appetizer at your next holiday party. Mix up cream cheese, cheddar cheese and seasonings-and then let your kids use their imaginations to frost and decorate this "Frosty the Cheeseman" appetizer recipe. Provided by By Tina Stamos and Jennifer Fujita

Yield Yield: Serves-a lot!

Number Of Ingredients 17

4, 8 oz. packages cream cheese, at room temperature (2 oz. reserved for cheese ball frosting)
12 oz. grated cheddar cheese
1, 4.5 oz. package dried (chipped) beef, chopped
3 Tbsp. finely chopped chives
1 Tbsp. finely diced shallot
1 Tbsp. finely chopped Italian parsley
1 Tbsp. Dijon mustard
1 tsp. Worcestershire sauce
1 cup sour cream
2 oz. reserved cream cheese
4 black olives, cut into small circles for the eyes and small squares for the coal buttons and nose
1 piece baby corn (buy a few pieces from your grocery store salad bar), cut into ¼ inch piece for the corncob pipe
Small red pepper, slice off small round end piece for the mouth
Zucchini, cut into 1 inch piece and hollowed out for the hat
Fresh thyme for the scarf and hat brim, plus two leaves for the eye centers
Toothpick for the corncob-pipe mouthpiece
2 wooden skewers

Steps:

  • Directions For the cheese ball Place ingredients in bowl and beat with an electric mixer until all ingredients are mixed together well. Divide cheese mixture into two sections-one larger for the snowman's body and one smaller for the head. Wrap in plastic wrap and shape into balls. Refrigerate for two hours or until well chilled. For frosting and decorating the cheese ball Beat together sour cream and 2 ounces cream cheese with an electric mixer until smooth. Refrigerate until ready to use. Before removing cheese balls from plastic wrap, re-form cheese into round balls. This will be easier to do after the cheese has chilled. Place larger cheese ball onto serving tray in desired spot. If you would like, place small pieces of parchment paper around base of cheese ball to protect tray from getting messy during frosting. Place two wooden skewers into the center of the cheese ball to secure the head. Gently place head on the cheese ball body. After the head and body are attached, begin frosting the cheese ball. Using a small, offset spatula, completely cover the outside of the snowman with the chilled sour cream frosting. Finish the face, and dress the snowman using the remaining ingredients. Make sure his hat is jaunty!

Found this in a Women's Magazine and had to make it the first chance I had. Goes together so easy and so cute, I've posted the recipe as directed but myself used pepper corns for eyes and buttons. Great for the holidays. Recipe states use a processor, but I just mixed up in my Kitchen Aid and think you could even just do it by hand. Cook Time is chilling time
