It's easy to make these gooey and chocolaty bars when you get a head start with a cake mix.

1 box Betty Crocker™ Super Moist™ milk chocolate cake mix
1/2 cup butter or margarine, softened
1/4 cup water
1/4 cup packed brown sugar
1 egg
1 cup chopped nuts
3 cups miniature marshmallows
1/2 cup M&M's® chocolate candies, if desired
1/3 cup Betty Crocker™ Rich & Creamy chocolate frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or spray bottom and sides of 13x9-inch pan. In large bowl, stir together dry cake mix, butter, water, brown sugar and egg until well blended. Stir in nuts; spread in pan.
  • Bake 20 minutes. Sprinkle with marshmallows. Bake 10 to 15 minutes longer or until marshmallows are puffed and golden. Sprinkle with candies.
  • In small microwavable bowl, microwave frosting uncovered on High 10 to 15 seconds. Drizzle over bars. Cool completely, about 1 hour. For easier cutting, use plastic knife dipped in hot water. For bars, cut into 6 rows by 4 rows. Store loosely covered.

1/4 pound (1 stick) unsalted butter
1 ounce unsweetened chocolate
1 cup sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 to 1 cup coarsely chopped toasted walnuts, pecans, or peanuts
1 teaspoon baking powder
6 ounces cream cheese, at room temperature
1/2 cup sugar
2 tablespoons all-purpose flour
1/4 cup (4 tablespoons) unsalted butter, at room temperature
1 egg, at room temperature
1/2 teaspoon vanilla extract
1/4 cup toated walnuts, pecans, or peanuts, coarsely chopped
1 cup semisweet chocolate chips
1/4 cup (4 tablespoons) unsalted butter
1 ounce unsweetened chocolate
2 ounces cream cheese
1/4 cup whole milk
1 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the first layer: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Off heat, add the sugar, eggs, vanilla, flour, nuts, and baking powder and mix well. Press into the prepared pan and set aside.
  • To make the second layer: Place the cream cheese, sugar, flour, butter, egg, and vanilla in the bowl of a mixer fitter with a paddle and mix until smooth and fluffy. Scrape down the sides of the bowl, add the nuts, mix to combine, and spread over the first layer. Sprinkle with the chocolate chips and transfer to the oven. Bake until slightly golden on the edges, about 20 to 25 minutes.
  • Sprinkle the second layer with the marshmallows and return the pan to the oven until the marshmallows are just melted but not colored, about 3 minutes.
  • To make the frosting: Place the butter and chocolate in a small pan and cook over the lowest possible heat until almost all the chocolate has melted. Add the cream cheese and milk and mix until smooth. Add the confectioners' sugar and vanilla and mix until smooth. Immediately pour the frosting over the marshmallows and briefly swirl the two mixtures together. Cool in the pan and cut into 36 to 48 bars. Cover and refrigerate.

These yummy chocolate bars are called rocky road because the chocolate chips, nuts and marshmallows make them lumpy and bumpy, just like a "rocky" road.

1 cup semisweet chocolate chips
2 tablespoon butter or margarine
2 cups Bisquick™ Original baking mix
1 cup sugar
1/2 teaspoon vanilla
2 eggs
1 cup miniature marshmallows
1/4 cup chopped nuts, if desired

Steps:

  • Heat oven to 350°. Grease bottom only of rectangular pan, 13x9x2 inches. Heat 1/2 cup of the chocolate chips and the butter in heavy 1-quart saucepan over low heat, stirring occasionally, until melted.
  • Mix baking mix, sugar, vanilla, eggs and chocolate mixture; spread in pan. Bake 15 minutes.
  • Sprinkle with marshmallows, nuts and remaining 1/2 cup chocolate chips. Bake 10 to 15 minutes or until marshmallows are light brown. Cool completely. Cut into about 2-inch squares.

1 3/4 cups semi-sweet chocolate chips
1 ounce unsweetened chocolate, chopped
1/2 cup butter, softened
1 teaspoon vanilla extract
1 pinch salt
1 cup mini marshmallows
3/4 cup finely chopped nuts (any kind--I used cashews)

Steps:

  • In a medium, heavy saucepan over low heat, melt 1 cup of the semisweet chocoalte chips with the unsweetened chocoalte; remove pan from heat.
  • Add the butter, vanilla, and salt to the melted chocolate and stir until the butter melts and is incorporated into the chocolate.
  • Let stand until the mixture is at room temperature.
  • Using an electric mixer at high speed, whip the chocolate until it holds soft peaks.
  • Fold in the remaining chocolate chips, marshmallows, and nuts.
  • Frost as desired.

1/4 cup vegetable oil
2 tablespoons water
1 egg
1/2 tub (16-ounce size) Betty Crocker™ Rich & Creamy chocolate ready-to-spread frosting (1 cup)
1/3 cup miniature marshmallow
1 tablespoon chopped peanuts, if desired

Steps:

  • Heat oven to 350°F. Stir cookie mix, oil, water and egg in medium bowl with spoon until dough forms. Press in ungreased square pan, 8x8x2 inches.
  • Bake 20 to 25 minutes or just until set. Cool completely, about 30 minutes.
  • Stir together frosting and marshmallows; spread over bars. Sprinkle with peanuts. For 16 bars, cut into 4 rows by 4 rows. Store tightly covered.

I do not typically have milk chocolate chips so this is the Rocky Road version I use. I put this onto Sue B's Chocolate Cake. The recipe is from Chocolate from the Cake Mix Doctor. I have only used this for flat surfaces and not the sides of a cake.

1 cup sugar
5 tablespoons butter
1/3 cup milk
1 cup semi-sweet chocolate chips
3/4 cup chopped dry roasted peanuts
3/4 cup miniature marshmallow

Steps:

  • Place the sugar, butter, and milk in a small saucepan over medium-low heat and cook, stirring constantly, until the mixture comes to a boil, 3 to 4 minutes.
  • Boil, stirring constantly, for 2 minutes.
  • Remove the pan from the heat, add the chocolate chips, and stir until they are melted.
  • Let the pan rest off the heat to cool slightly but not completely, 3 to 4 minutes.
  • Fold in the peanuts and marshmallows until they are well combined and the heat from the frosting begins to melt the marshmallows.
  • Turn the frosting out onto the cooled cake, then spread evenly with a spatula until the frosting covers the entire cake.
  • Or spread onto cooled cupcakes.

This is a recipe from my soon to be Mother in Law. It's a family favorite that I made for the first time with rave reviews. I've been told it was originally a Pillsbury Bake-Off recipe.

1/2 cup butter
1 cup sugar
1/2-3/4 cup chopped nuts
1 teaspoon vanilla
1 ounce unsweetened chocolate
1 cup flour
1 teaspoon baking powder
2 eggs
8 ounces cream cheese (reserve 2 oz for frosting)
1/2 cup sugar
1/4 cup butter
1 egg
1/2 teaspoon vanilla
6 ounces semi-sweet chocolate chips
2 tablespoons flour
1/4 cup chopped nuts
2 cups mini marshmallows
1/4 cup butter
1 ounce unsweetened chocolate
1/4 cup milk
1 teaspoon vanilla
2 ounces cream cheese
3 cups powdered sugar

Steps:

  • Heat oven to 350.
  • Grease 9x13 pan.
  • In large saucepan, melt butter and chocolate over low heat.
  • Add remaining bar ingredients and spread into pan.
  • In small bowl combine all the filling ingredients except for the nuts and chocolate chips.
  • Beat one minute at medium speed and stir in the nuts.
  • Spread over bar mixture.
  • Sprinkle with chocolate chips.
  • Bake at 350 for 25-35 minutes or until toothpick comes out clean.
  • Sprinkle with Marshmallows and bake 2 minutes longer.
  • Meanwhile in large saucepan, melt the remaining butter, chocolate and cream cheese and milk over low heat.
  • Remove from heat and stir in powdered sugar and vanilla until smooth.
  • Pour over marshmallows and swirl together.
  • Chill until firm, cut into squares.
