2 tablespoons dried basil
2 tablespoons dried thyme
½ teaspoon salt
¾ teaspoon white pepper
5 teaspoons olive oil
2 Roma (plum) tomatoes, halved lengthwise
2 tablespoons olive oil

Steps:

  • In a small bowl, mix together basil, thyme, salt, and white pepper. Mix in 5 teaspoons olive oil to make a spreadable paste. Spread paste on cut side of each tomato half.
  • Heat remaining 2 tablespoons olive oil in small skillet over medium-low heat. Place tomatoes herb-side down in skillet, and cover. Simmer for 5 minutes; tomatoes should be hot but not stewed. Serve immediately.

1 cup loosely packed fresh basil leaves
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon Dijon mustard
Kosher salt and freshly cracked black pepper
16 (1/8-inch thick) slices pancetta
8 slices country sandwich bread
1 cup loosely packed arugula
Kosher salt and freshly cracked black pepper
1 cup rice flour, divided
1 large egg
1/4 cup buttermilk
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup cornmeal
Kosher salt
Pinch cayenne pepper
8 slices green tomato, 3/4 to 1-inch thick (about 2 medium green tomatoes)
Vegetable oil, for frying

Steps:

  • For the mayo: In a food processor, puree the basil, mayonnaise, lemon juice and mustard. Season with salt and pepper and set aside. For the sandwich: Place the pancetta slices in a large nonstick saute pan set over medium heat and saute on both sides until crispy, about 3 minutes per side. Set aside on a paper towel-lined plate until ready to assemble the sandwich. For the tomatoes: In a large shallow dish, add 1/4 cup flour. In a separate baking dish, beat the egg, buttermilk, baking powder and baking soda. In a separate large shallow dish, add the remaining 3/4 cup flour, cornmeal, salt and cayenne pepper. Dredge the tomatoes in the flour, followed by the egg mixture and finally coat with the cornmeal mixture, shaking off any excess in between dredges. Place the tomatoes on a wire cooling rack set inside a rimmed baking sheet. Repeat the process with all the tomatoes. Pour a 1-inch layer of vegetable oil into a cast-iron skillet. Heat the oil over high heat until it reaches 350 degrees F. Carefully add 4 tomato slices to the oil and fry until the tomatoes are golden brown, about 2 minutes on each side. Transfer the fried tomatoes to a baking sheet or plate lined with paper towels, season with salt and cool. Repeat with the remaining slices. To assemble the sandwich: Slather each slice of bread with a generous amount of the basil mayo. Top 4 of the bread slices with 4 pieces of crispy pancetta, 2 fried green tomatoes and top with arugula. Finish by topping the sandwich off with the other slice of bread.;

I cut this out of a newspaper when I lived in Atlanta for a short time in the early 80's. It was in a "cooking for one" column, but I have doubled it here. Use it as a first course for guests, to accompany steak, fish or chicken, or as a light dinner for yourself on a hot summer night when everyone is out. New Jersey tomatoes (the best) really shine in this recipe! Make fresh corn on the cob and have a feast!

2 large ripe tomatoes
1/2 cup shredded cheese
1 tablespoon good quality olive oil
2 -3 teaspoons butter (more if desired)
fresh basil, chopped

Steps:

  • Slice the tomatoes thickly. Melt the butter and olive oil in a frying pan over medium heat.
  • Add the tomato slices and fry on one side for about one minute. Turn each slice and sprinkle with cheese. You can use any cheese - mozarella or cheddar work well.
  • Sprinkle with chopped basil and continue to fry until cheese melts. Cover the pan if you want to speed up the process.

10 ounces flank steak
4 teaspoons cornstarch, divided
5 teaspoons vegetable oil, divided
1/4 teaspoon salt
Dash white pepper
1 small white onion
2 medium tomatoes
12 leaves fresh basil
1 teaspoon minced garlic
2 tablespoons hoisin sauce

Steps:

  • Cut the beef lengthwise into thin 2-inch long strips. Toss the beef with 2 teaspoons cornstarch, 1 teaspoon vegetable oil, the salt, and pepper. Cover and refrigerate for 30 minutes.
  • Cut the onion into 1-inch squares. Cut the tomatoes into 8 wedges. Wash the basil and pat dry. In a small bowl, combine the remaining 2 teaspoons cornstarch and 1 tablespoon water and set aside.
  • Heat a nonstick skillet over high heat. Add the remaining 4 teaspoons vegetable oil, the beef, garlic, and onion and stir-fry for 1 minute, or until the meat browns. Continue stirring for about 2 minutes over high heat. Stir in the hoisin sauce and cornstarch mixture. As the mixture begins to thicken, after about 1 minute, add the tomatoes and basil, stir for 1 minute. Divide among plates and serve.

2 cups 2 percent milk
2 cups cornmeal
1/4 cup diced roasted red peppers, optional
1/2 cup crumbled blue cheese, optional

2 tomatoes, diced
3 cloves garlic, chopped
1/2 cup dry white wine
1/2 cup butter
1/2 cup fresh basil leaves, chopped
1/2 bunch fresh thyme leaves

Steps:

  • Butter a 12 by 14-inch baking dish and set aside.
  • In a large pot, bring the stock and milk to a boil. While whisking, slowly add the cornmeal and continue to whisk until thick, about 15 minutes. Stir in the red peppers and the blue cheese, if using. Pour the mixture into the baking dish and cool completely in refrigerator. When the polenta has cooled, cut into squares. Heat 1 tablespoon olive oil in a saute pan. Place the polenta squares in the pan and cook until golden brown, about 3 minutes on each side. In another saute pan, heat the remaining olive oil and add tomatoes and garlic and cook for 2 to 3 minutes. Whisk in the wine and butter and reduce until sauce has thickened and then add the basil and thyme. Transfer the polenta to a platter and pour the tomato sauce over the squares.

1 clove garlic, roughly chopped
3 egg yolks or 9 Tbsp pasteurized egg substitute
2 tsp lemon juice
1/2 tsp Dijon mustard

1/4 tsp ground black pepper
1 Tbsp fresh oregano, chopped
1/4 cup fresh basil, chopped
Tomatoes:
4 green tomatoes, ends removed and sliced 1/4" thick
1/2 cup cornmeal

1/8 tsp cayenne pepper
1-1/2 tsp kosher salt, divided

Steps:

  • To prepare the aioli, combine the olive oil and the blended oil in a measuring cup. Set aside. Place the garlic, egg yolks, lemon juice, Dijon mustard, salt, and pepper in a blender. Pulse the ingredients until combined. Slowly pour the oil through the opening at the top of your blender. (The speed should be on low.) After the ingredients are well-blended and creamy, use a spatula to scoop the aioli into a small bowl. Fold in the fresh basil and oregano. To prepare the tomatoes, combine the cornmeal, Parmesan cheese, cayenne pepper, 1 tsp of salt, 1/2 tsp of black pepper, dried basil, and dried oregano into a medium-size bowl. Set aside. Combine the flour and the remaining salt and pepper into a second bowl. Set aside. Whisk the eggs together in a third bowl. First, dip the tomatoes in the flour mixture; coat completely. After the oil is ready, add in the tomatoes (in batches, if necessary). Fry the tomatoes until golden brown on one side for about 3-4 minutes. 2 pounds green tomatoes (about 4 medium), cut into 1/4-inch-thick slices
1/2 cup yellow cornmeal
1 pound sliced bacon, cooked until crisp, reserving 1/3 cup drippings, and drained on paper towels
8 large slices firm white sandwich bread
3/4 pound fresh mozzarella, cut into 1/4-inch-thick slices
24 fresh basil leaves, washed well and spun dry

Steps:

  • Preheat broiler.
  • In a small bowl coat 4 tomato slices evenly with cornmeal and season with salt. In a 10- to 12-inch heavy skillet heat 1/4 cup reserved bacon drippings over moderate heat until hot but not smoking and cook tomatoes until golden brown on both sides, about 5 minutes, transferring them as cooked to paper towels to drain. Coat and cook remaining tomatoes in same manner, using additional drippings if necessary.
  • On a baking sheet broil one side of bread slices about 3 inches from heat until golden. Make sandwiches by layering, on untoasted sides of bread, mozzarella, basil, tomatoes, and bacon. Top with remaining bread slices, toasted sides up.

I made this up because I was the only adult home and I had one chicken breast and a very fresh tomato from my garden. I don't usually measure ingredients when I'm making something up, so this is an approximation of what it would take to make the meal for two. I'm pretty sure its tastiness was enhanced by the garden-picked, juicy tomato.

2 boneless skinless chicken breasts
1/4 cup flour
1/4 cup cornmeal
1 teaspoon chili powder
1/2 teaspoon coriander
1/2 teaspoon lemon pepper
1 egg, beaten
2 tablespoons olive oil, divided
1 large tomatoes, cut into cubes
1 teaspoon garlic, minced
2 teaspoons basil

Steps:

  • Rinse and thoroughly dry chicken breasts. Pound them to a more even consistency, if needed.
  • Mix flour, corn meal, chili powder, coriander, and lemon pepper.
  • Heat 1 T of olive oil in a pan at medium-high heat.
  • Dip each chicken breast in egg and then thoroughly dredge in flour mixture (I like to sprinkle some additional chili powder on each chicken breast before it goes in the pan).
  • Fry the chicken breasts on the first side for about 7 or 8 minutes, or whenever they are about half-cooked.
  • Turn chicken breasts.
  • After a minute or two, add the remaining olive oil and the garlic to the pan. Put the tomato chunks in the pan, keeping them separate from the chicken but allowing them to benefit from the drippings in the pan. Sprinkle basil over tomatoes. Do not stir.
  • Cook until chicken is cooked through (another 5 - 7 minutes).
  • Serve with corn bread, roasted red potatoes, or a side salad. I wouldn't serve this with rice as it might absorb the tomato/ chicken juices.

My new neighbor has just given me some fresh tomatoes from his garden. This is one of the dishes I used them in! This is also a great recipe to use up any leftover tomato sauce you might have in the fridge.

1 lb white fish fillet (flounder, cod, halibut, or turbot will work well)
1/4-1/2 cup tomato sauce (great for leftover sauce!)
1/4 cup breadcrumbs
1/2 cup scallion, minced
1/2 fresh basil leaf, shredded
1 -2 fresh summer tomatoes, thinly sliced
fish seasoning, to taste
salt & freshly ground black pepper, to taste

Steps:

  • Add tomato sauce to the bottom of a baking dish.
  • Rinse fish filets and pat dry.
  • Sprinkle salt and pepper to taste on both sides and the fish, and lay in baking dish.
  • I like to also sprinkle my filets with a bit of fish seasoning, or flavored salt, to taste.
  • On a cutting board, mince the scallions, and chop basil.
  • I add the breadcrumbs right to the pile of fresh herbs, and roughly chop.
  • Top the filets with the herb and bread crumb mixture, and then top with the slices of fresh tomato.
  • Bake in a 375 degree oven for 20 minutes, or until fish is cooked through.

Kosher salt
Freshly ground black pepper
3/4 cup all-purpose flour
3/4 cup well-shaken buttermilk
Dash hot sauce
3/4 cup yellow cornmeal
1 1/2 cups Japanese panko bread crumbs
Vegetable oil, for frying
1 recipe Basil Mayonnaise (recipe follows)
Basil Mayonnaise
2 cups loosely packed fresh basil leaves
1 cup mayonnaise
2 tablespoons fresh lemon juice
1 tablespoon Creole mustard (see page 93)
Kosher salt
Freshly ground black pepper
(makes about 1 1/4 cups)

Steps:

  • Season the tomatoes with salt and pepper. Place the flour on a plate. Whisk together the buttermilk and hot sauce in a shallow bowl or a pie tin. Whisk together the cornmeal and panko bread crumbs in a separate pie tin.
