2 teaspoons chili powder
2 teaspoons chicken bouillon granules

1 cup milk

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Slice potatoes into 16 wedges.
  • Combine flour, chili powder, chicken bouillon, paprika, black pepper, and cayenne in a 1-gallon resealable plastic bag.
  • Dip potato wedges in milk, then shake them in the flour mixture. Fry in the hot oil until golden brown, 5 to 6 minutes per batch. Let drain on paper towels.

3 tablespoons extra-virgin olive oil or a neutral tasting oil
2 teaspoons kosher salt
Pinch cayenne, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
  • Transfer potatoes to a serving dish and serve immediately.

4 medium potatoes, choose a nice fluffy variety like Idaho, Russet, King Edward or Maris Piper
olive oil spray
1/2 tsp salt flakes or kosher salt
1/2 tsp seasoning (optional)

Steps:

  • Preheat the air fryer to 360°F (180°C).
  • Scrub the potatoes under running water (no need to peel unless you really want to).
  • Cut the potatoes lengthwise into wedges. Pat the wedges dry with paper towels. The drier they are before air frying, the crisper they will be.
  • Place potato wedges into air fryer basket and spray with oil, add salt and seasoning, then shake and spray with oil again.
  • Air fry potato wedges for 15 minutes.
  • When this time is up, remove the basket, shake the wedges and return to the air fryer for another 10-15 minutes, or until golden brown (air fryer cooking times can vary depending on the brand).
  • Season with salt and pepper to taste.

3 large russet potatoes (2-2 1/2 lbs)
1 1/2 teaspoons salt
1 tablespoon chili powder
1 teaspoon ground coriander
1/4 teaspoon black pepper
2 tablespoons thinly sliced chives
2 tablespoons olive oil
2 tablespoons sour cream

Steps:

  • Preheat oven to 475.
  • Cut each potato (washed and unpeeled) in half lengthwise and then cut each half into 3 long wedges, making 6 wedges per potato.
  • In a small bowl, mix together the salt, chili powder, coriander, pepper and chives. Set aside.
  • In a large bowl whisk together the olive oil and sour cream. Add the potatoes and toss to coat well. Sprinkle in the spices mixture and then toss again, coating potatoes evenly.
  • Place potatoes skin side down on a lightly pan-sprayed baking sheet.
  • Bake in the oven for 25min or until lightly browned.
