COUNTRY HAM AND RED EYE GRAVY

Steps:
- Cut large ham slices in half for ease in cooking.
- Cut slits in the skin and fat around the ham edges to prevent curling while cooking.
- Place a skillet over medium heat on your stove top.
- Add Butter.
- Add ham slices.
- Cook ham slices, turning at least once, until cooked as desired.
- Ham should reach at least 165º surface temperature to be fully cooked.
- Remove ham slices and place on platter.
- Pour cool coffee into skillet, scraping pan to deglaze and loosen any ham bits.
- Add the cool water. Stir well.
- Let the gravy simmer and reduce for about 5 minutes. Continue to stir the bottom of the pan.
- Serve red eye gravy over grits and the ham slices.
- Enjoy!
HAM GRAVY

- Into the pan that the ham was cooked in (or use bacon grease if you don't have ham juices), add the butter. Once melted, add 1/4 cup of the flour and whisk to combine. Continue adding flour, whisking constantly, until a smooth paste is achieved. Cook the roux over a medium heat until you get a nice deep golden color, about 3 minutes. Add the milk, whisking the whole time to prevent lumps forming. Cook until thick and season to taste. Serve over biscuits!
HOMEMADE GRAVY
Ina Garten's Homemade Gravy recipe, from Barefoot Contessa on Food Network, gets its flavor from leftover turkey drippings and a touch of cognac.

Steps:
- In a large (10 to 12-inch) saute pan, cook the butter and onions over medium-low heat for 12 to 15 minutes, until the onions are lightly browned. Don't rush this step; it makes all the difference when the onions are well-cooked.
- Sprinkle the flour into the pan, whisk in, then add the salt and pepper. Cook for 2 to 3 minutes. Add the hot chicken stock mixture and Cognac, and cook uncovered for 4 to 5 minutes until thickened. Add the wine and cream, if desired. Season, to taste, and serve.
OVER EASY HAM STEAK WITH RED-EYE GRAVY

- In a medium saucepan over moderate heat, melt the butter. Add chicken and brown skin side down. Turn over and add chopped onion. Cook until soft and starting to color about 6 to 8 minutes. Cover with chicken stock, and add the coffee and brown sugar, if using. Reduce heat to medium and cook the red eye gravy until thick enough to coat the back of the spoon, about 2 to 4 hours. Strain stock into a large bowl and reserve. The chicken can be used for another recipe or discarded.
- Preheat a large heavy bottomed frying pan over medium-high heat. Season ham steaks with black pepper and add to the hot skillet. Cook until golden brown on each side, 6 to 8 minutes and transfer to serving plates.
- In the same skillet, once steaks have been removed, reduce heat to medium and fry the eggs to desired doneness.
- Cover the steaks with red-eye gravy and crown with a fried egg. This dish can be served with potatoes, hash browns or biscuits, if desired.
GRITS, COUNTRY HAM AND RED-EYE GRAVY

- For the grits, bring the water and milk to a boil in a pan, whisk in the grits, and then reduce the heat and cook for an hour. Season with salt and pepper and set aside.
- For the poached eggs, bring a pan of water to a gentle simmer and add salt and vinegar. Using a spoon, swirl the water in a circle and crack the eggs into the center of the water. Simmer for about 2 minutes. Set aside.
- For the gravy, to a pre-heated skillet, add a slice of ham and warm it through. Then remove the ham to a plate. Into the same skillet add the coffee and pork stock and reduce.
- To a bowl or plate add a serving of grits, the ham, a poached egg and sprinkle with chives. Drizzle the red-eye gravy over the grits and serve.
HAM GRAVY

- Roast ham on a roasting rack in the oven. My 9 lb ham took about 3 hours at 325 degrees.
- Drain drippings and broth from the roasting rack.
- Pour broth in a measuring up. If you don't have 2 cups of broth add water, store bought broth, milk or cream to have two total cups of liquid.
- Melt two tablespoons of butter in a skillet on low to medium-low heat. Be careful to not burn the butter.
- Add two tablespoons of flour to the butter. Whisk continuely for two minutes to smooth out any flour lumps.
- Flour and butter mixture should be slighly golden and smooth.
- Slowly pour in a little broth at a time. Whisk well then add more broth.
- *instead of using 2 cups of ham broth, use 1/2 cup ham broth with 1.5 cups milk, cream or coffee.
- Whisk and simmer gravy until reduced to your perfered thickness.

SOUTHERN FRIED CHICKEN W/CREAM GRAVY
This chicken is crispy and the best I've eaten! It is important to follow the instructions on when to cover or uncover chicken during frying. That's what makes it crispy. To me, this is the ultimate comfort food with the delicious cream gravy. Prep and cook times are approximate.

- Wash and dry chicken pieces; shake in a bag with flour, salt, pepper and poultry seasoning.
- Dip coated pieces in cream in pie plate; then dip in remaining flour mixture again to coat evenly.
- Pour enough oil into a large skillet to make a depth of 1".
- Heat over moderate heat to 375 degrees on deep-fat frying thermometer (if you have one).
- If not, just test heat by sprinkling a drop of water into grease, if it pops, it's ready enough.
- (Stand back, so you don't get splattered).
- Add chicken, skin side down.
- When underside of chicken starts to brown, lower heat and partially cover skillet with lid.
- Turn chicken pieces after 15 minutes.
- Continue cooking second side, uncovered, until browned and chicken is tender, 10 minutes longer.
- Drain on paper toweling, keep warm.
- Serve with Cream Gravy, if you wish.
- For Cream Gravy: Pour off fat from skillet, leaving brown bits; return 2 tablespoons fat to pan.
- Stir in 2 tablespoons flour; heat until light brown.
- Remove from heat; gradually stir in 1 cup light cream.
- Return to heat; cook, stirring constantly, until thickened and bubbly.
- If too thick, add more cream.
- Taste; add salt and pepper as needed.
- Makes about 1-1/4 cups.
COUNTRY HAM,FRIED GREEN TOMATOES W/ CREAM GRAVY
A real down home recipe and so simple. i can never find green tomatoes but use less ripe ones..serve with eggs on the side.

- Melt 4 tablespoons of the butter in a heavy skillet and sauté the ham slices about 3 minutes on each side. Remove the ham to a heated platter and keep warm.
- Drain the tomatoes and dust them with the seasoned flour. Add more butter to the pan if necessary and fry the tomatoes 3 minutes on each side or until tender, sprinkling each side with a little sugar. Remove and drain on paper towels, then arrange on the platter with the ham.
- While the tomatoes are cooking, make the gravy:Pour off all but 3 tablespoons of the cooking fat. Stir in the flour and cook, stirring, for 1 to 2 minutes. Slowly whisk in the milk. Stir constantly until thickened, about 4 to 5 minutes. Season with salt and pepper.
- Pour the gravy over the ham and tomatoes and serve immediately.

- Melt the butter and brown sugar in a heavy skillet.
- Season the ham steaks with pepper.
- Cook the ham steaks in the butter/brown sugar mixture until done.
- Remove the steaks from the skillet.
- Cook the onions and mushrooms in the same skillet until the onions are translucent.
- Add the flour to the skillet.

FRIED HAM AND CREAM GRAVY

- Wipe meat with damp cloth. Trim rind, notch fat at edge of slice. Brown meat on both sides in hot frying pan, lower heat and cook 10 min. Remove ham to warm plate. Pour off all but 2 Tablespoons of fat from pan. Blend in flour, mustard and sugar. Add milk, cream or evaporated milk and worcestershire. Return ham to pan and spoon sauce over. Cover and simmer 15 min. Serve with sauce spooned over.
