When you don't know what's for dinner but it needs to be comforting, we suggest this soup. It has a brothy tomato base that's loaded with rich Italian sausage, sweet carrots, caramely onions, tender cannellini beans, silky spinach and just the right amount of pasta. Top it off with a handful of garlicky butter-toasted Progresso™ bread crumbs and a handful of Parmesan, and you've got dinner. Extra credit if you serve it alongside a green salad and loaf of crusty bread.

1 lb Italian ground pork sausage
1 cup chopped onions
1 large carrot, peeled, cut into quarters lengthwise and into 1/4-inch slices (about 1 cup)
1 tablespoon finely chopped garlic
1/4 teaspoon crushed red pepper flakes
6 cups Progresso™ reduced sodium chicken broth (from two 32-oz cartons)
1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
1 can (28 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
2 teaspoons chopped fresh oregano
1 bay leaf
3/4 cup (3 oz) small ring pasta, such as ditalini
3 cups baby spinach, coarsely chopped
1 tablespoon olive oil
1/2 cup Progresso™ plain panko crispy bread crumbs
1/2 cup grated Parmesan cheese

Steps:

  • Heat 5-quart Dutch oven over medium-high heat. Add sausage, onions and carrot; cook 8 to 10 minutes, stirring occasionally to break up sausage, until sausage is no longer pink. Stir in garlic and pepper flakes; cook 1 to 2 minutes or until garlic is fragrant.
  • Stir in broth, beans, tomatoes, oregano and bay leaf. Heat to boiling; reduce heat to medium-low, and simmer uncovered 10 minutes. Add pasta; simmer 8 to 9 minutes or until pasta is tender. Remove bay leaf, and discard.
  • Stir in spinach; cover and remove from heat. Let stand 5 minutes; stir.
  • Meanwhile, in 8-inch nonstick skillet, heat oil over medium heat Add bread crumbs; cook and stir 2 to 3 minutes or until toasted and golden brown. Remove from heat.
  • Divide soup among serving bowls; garnish each with cheese and toasted bread crumbs.

1 ¼ teaspoons crushed red pepper flakes
4 slices bacon, cut into 1/2 inch pieces
1 large onion, diced
1 tablespoon minced garlic

6 potatoes, thinly sliced
1 cup heavy cream
¼ bunch fresh spinach, tough stems removed

Steps:

  • Cook the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside.
  • Cook the bacon in the same Dutch oven over medium heat until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings with the bacon in the bottom of the Dutch oven. Stir in the onions and garlic; cook until onions are soft and translucent, about 5 minutes.
  • Pour the chicken broth into the Dutch oven with the bacon and onion mixture; bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 20 minutes. Reduce the heat to medium and stir in the heavy cream and the cooked sausage; heat through. Mix the spinach into the soup just before serving.

1 clove garlic, minced
2 (14 ounce) cans beef broth

1 cup pearled barley

2 lb sweet Italian sausage; cut up in chunks
3 can(s) 15 oz. canellini beans, drained (1 can reserved for puree)
olive oil
1 c vidalia onion, diced
1 c carrots, diced
1 1/2 c celery, diced
2 1/3 c zucchini, diced (skins on)
1 Tbsp chopped fresh thyme leaves (1 1/2 dried if you can't get fresh)
1 Tbsp fresh sage leaves (1 tsp dried if you can't get fresh)
1 tsp dried Italian seasonings
a little salt and pepper to your taste (I use very little because of grated Parmesan cheese on top)
32 oz chicken broth
2 can(s) 14.5 oz. no salt added diced tomatoes
3 c baby spinach leaves chopped
grated Parmesan cheese for each bowl of soup

Steps:

  • 1. I do all my chopping and dicing and set everything aside and get ready to do it all at once. I also puree 1 can of canellini beans and get that ready to add with all the cans of beans and tomatoes are added.
  • 2. SOUP: Heat olive oil in a large soup pot over medium heat. I use just enough to cover bottom of pot.
  • 3. Add the onion, carrots, celery, zucchini, garlic, thyme, sage, Italian seasonings and a little bit of salt and pepper. Cook stirring occasionally.
  • 4. Cover pot and leave on simmer until vegetables are tender about 5 minutes or so.
  • 5. Add cut up Italian sausage pieces stir through and allow to loose pinkness.
  • 6. At this point add broth, tomatoes with the juices mix. Add pureed beans and whole beans. Put lid on and simmer on low heat 1 hour. Towards the end of the hour, add the 3 cups of spinach.
  • 7. I also put in a whole piece of Italian Parmesan cheese and remove it at the end. You can serve this with ditalini or orzo pasta. I don't only because I rather all the veggies and no carbs but kids may like it with little pasta or alphabets in it. If you do keep the pasta separate and put soup on top of it and then serve. Use Italian bread for dunking if desired. Enjoy!

5 links sweet italian sausage, removed from casings and crumbled
1 cup thinly sliced onions
1 cup diced carrots

3 cups shredded savory curly cabbage
6 to 8 cups meat or chicken broth, fresh or canned
1 cup canned diced italian tomatoes with juice
2 to 3 cups water
1 1/2 cups canned cannellini beans, drained
salt and pepper
1 cup white rice
pesto or grated parmesan cheese

Steps:

  • 1. Heat olive oil and butter in large soup pot or stockpot. Add sausage meat and sauté over high heat just to brown. Add fresh vegetables in order listed, cooking over high heat for 3 to 4 minutes after each addition. After adding cabbage, cook for 8 to 10 minutes. Add broth, tomatoes, and water. Bring to simmer and add beans. Simmer, uncovered for 2 hours. Season to taste with salt and pepper. Add rice, cover and simmer for 30 minutes. Check seasoning and serve with pesto or grated Parmesan. 1 shallot or small onion, chopped

homemade seasoned salt and pepper
2 teaspoons Italian seasoning
15oz can petite diced tomatoes, undrained
15oz can great northern OR garbanzo beans, drained and rinsed
4 cups chicken broth or stock
parmesan cheese rind (optional)
2 cups diced peeled Russet potatoes (~1 medium-sized potato)
2 packed cups baby spinach, roughly chopped
freshly grated parmesan cheese, for topping

Steps:

  • Heat oil in a large soup pot or Dutch Oven over heat that's just a touch above medium. Add kielbasa, celery, carrots, shallot, and garlic then season with seasoned salt and pepper and stir to coat. Place a lid on top then cook for 7 minutes, stirring a couple times. 6 cups chicken broth
1 onion, chopped
3 (3.5 ounce) links spicy Italian sausage
3 large potatoes, cubed
1 bunch fresh spinach, washed and chopped
¼ cup evaporated milk
salt to taste

Steps:

  • Remove skin from sausage and crumble into frying pan. Add chopped onion, and cook over medium heat until meat is no longer pink. If you are trying to cut fat, remove meat from pan, place in a colander, and rinse under cold water.

1/2 medium onion (chopped)
3 sticks celery (chopped)
2 cloves garlic (minced)

2 large Russet potatoes (peeled & diced)
1 red bell pepper (chopped)
1 cup corn ((I used frozen))

Steps:

  • Take the sausage meat out of the casings and crumble it into a large soup pot over medium-high heat. Cook for 5 minutes, stirring occasionally. Drain a bit of the fat, leaving some in for flavor. I prep as I go along, so I chop the onion and get the other ingredients started as the sausage cooks.
  • Add the onion, celery, and garlic to the pot. Continue cooking it for another 5 minutes. Meanwhile, chop any remaining ingredients.
  • Add in the chicken broth, water, carrots, potatoes, red pepper, and corn. Increase the heat to high and bring the soup to a boil. Once it's boiling, reduce the heat and let it simmer for 15-20 minutes or until the potatoes and carrots are tender.
  • Season with salt & pepper as needed.

Steps:

  • Use bulk sausage or remove the casings from the sausage and discard.
  • Brown the sausage in a heavy Dutch oven or large saucepan, mashing it with the back of a spoon until the meat is no longer pink and has rendered most of its fat.
  • Spoon out most of the fat from the cooked sausage and discard.
  • Add the onions and garlic and cook, stirring,until soft but not browned.

16 ounce package of sweet Italian sausage
1 tablespoon olive oil
2 large carrots cut in to 1/4" thick half moons (about 1.5 cups)
2 medium zucchini cut in to 1/4" thick half moons (about 1.5 cups)
4 celery stalks cut 1/4" thick (about 1.5 cups)
1 medium yellow onion chopped medium (about 1.5 cups)
2 garlic cloves chopped fine
14.5 ounce can diced tomatoes
32 ounces chicken stock
1 tablespoon thyme
1/4 cup orzo pasta (optional)
2 cups fresh spinach
Salt and pepper
Freshly grated Parmesan for topping (optional)

Steps:

  • 1. In a heavy bottom pot, heat 1 tbs olive oil over medium high heat. Add in the whole sausages and brown the outside, about 5 minutes, turning every minute. Put the sausages aside on a plate.
  • 2. In the oil, add in the carrots, zucchini, celery and onions. Add in 2 tsp salt and 2 tsp pepper. Cook over medium heat, scraping up any brown bits from the sausage on the bottom of the pot, and stirring occasionally. Cook until the onions turn translucent, about 10 minutes.
  • 3. While the vegetables are cooking, slice the sausages a little more than 1/4" thick. It is ok if they are still pink in the middle, they will continue cooking in the soup.
  • 4. When the onions have turned translucent, and the vegetables have cooked through, add in the garlic and cook until fragrant, about 1 minute. Then add in the can of diced tomatoes, chicken stock, sliced sausages, and 1 tablespoon of thyme. Cook over low heat, uncovered, for 40 minutes.
  • 5. After the soup has cooked for 40 minutes, add in 1/4 cup of orzo. Stir and continue cooking for 15 minutes, uncovered.
  • 6. After the orzo has cooked for 15 minutes, add in 2 big handfuls of fresh spinach, stir to combine.
  • 7. Taste to see if it needs more salt and pepper.
  • 8. Take the soup off heat and allow to sit for 5 minutes. After the soup has rested for 5 minutes serve it topped with fresh Parmesan and warm bread.
  • 9. Will keep in an air tight container for 1 week in the fridge. Can be frozen for up to 6 months.

3 tablespoons extra virgin olive oil
4 tablespoons sage leaves, coarsely chopped (NOT dried)
3 garlic cloves, minced
1 cup fresh green peas or 1 cup frozen green pea
1 cup green beans, cut into 1/2-inch pieces
1 cup carrot, cut into coins
1 cup zucchini or 1 cup yellow squash, diced
1/2 cup celery & leaves, stalks diced and leaves minced
1 medium sweet potatoes or 1 potato, peeled and diced
1 (16 ounce) can cannellini beans, rinsed and drained
6 cups sodium-free vegetable broth
1/4 teaspoon red pepper flakes
salt, to taste
fresh ground black pepper, to taste

Steps:

  • In a soup pot heat up the olive oil on low-medium heat and lightly saute the sage leaves; about 5 minutes. With a slotted spoon, remove leaves from pot and set aside. In same pot, saute the garlic until soft, only a minute or two.
  • Add the green peas, green beans, zucchini, carrots, potato and cannelini beans. Stir mixture over medium heat for 5 minutes.
  • Add the vegetable broth and red pepper flakes. Simmer until the vegetables are tender, about 15-20 minutes.
  • Season with salt and pepper to taste. Divide and ladle the soup into 4 individual soup bowls. Garnish each serving with the sauteed sage leaves.
  • Enjoy immediately! Don't forget the Italian bread and pop in a Bocelli CD (Furtiva Lagrina on the Viaggio Italiano recording) while you're at it!
