This version of the traditional Kansas City BBQ Sauce is a thick, sweet tomato-based sauce with a touch of heat to give it a little kick.

1 1/4 cup/300 milliliters ketchup
1 cup/240 milliliters water
1/3 cup/80 milliliters cider vinegar
1/4 cup/60 milliliters ​ dark brown sugar
2 tablespoons/30 milliliters molasses
1 tablespoon/15 milliliters onion powder
1 tablespoon/15 milliliters garlic powder
1 tablespoon/15 milliliters black pepper
1 teaspoon/5 milliliters celery salt
1 teaspoon/5 milliliters allspice
1 teaspoon/5 milliliters cayenne (use less if desired)

Steps:

  • Gather the ingredients.
  • Combine all ingredients in a saucepan over medium heat. Stir constantly for 5 minutes.
  • Reduce heat to low and simmer for 20 minutes, stirring occasionally. The sauce should be good and thick.
  • Remove pot from heat and allow the sauce to cool for 10 to 15 minutes before using it. If making ahead of time, cool sauce for 30 minutes and then store in an airtight container.
  • Enjoy!

2 tablespoons neutral-tasting oil, such as grapeseed or vegetable
6 cloves garlic, smashed
2 tablespoons tomato paste
1 slightly heaping tablespoon chili powder
1 tablespoon paprika
1 teaspoon crushed red pepper
1/4 teaspoon ground allspice
Pinch ground cloves
2 cups ketchup
2 cups water
1/2 cup cider vinegar
1/4 cup dark molasses
1/4 cup firmly packed dark brown sugar
1 tablespoon kosher salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons English-style dried mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, tomato paste, chili powder, paprika, red pepper, allspice, and cloves and cook, stirring, until paste is dark brick red, about 3 minutes. Add the ketchup, water, vinegar, molasses, brown sugar, salt, soy sauce, Worcestershire, mustard, black pepper, and bay leaf. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove and discard bay leaf before using.

Kosher salt and freshly ground black pepper
2 cups Kansas City-Style BBQ Sauce, recipe follows
2 tablespoons neutral-tasting oil, such as grapeseed or vegetable
6 cloves garlic, smashed
2 tablespoons tomato paste
1 slightly heaping tablespoon chili powder
1 tablespoon paprika
1 teaspoon crushed red pepper flakes
1/4 teaspoon ground allspice
Pinch ground cloves
2 cups ketchup
2 cups water
1/2 cup cider vinegar
1/4 cup dark molasses
1/4 cup firmly packed dark brown sugar
1 tablespoon kosher salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons English-style dried mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • 1. Preheat a grill with high, medium high, and medium zones. Lightly oil grates.
  • 2. Season chicken with salt and black pepper, to taste and place it skin-side down on grate on high heat. Cook until skin is crisp, turning once, about 5 minutes. Dip each piece of chicken in sauce, shake off excess, and return to grill-dark meat pieces over medium high and white meat over medium heat. Cook, covered, basting once more, until glazed and an instant-read thermometer inserted in thickest part of each piece of chicken registers 170degreesF, about 25 to 30 minutes.

I prepared BBQ sauce (Recipe #463351) for a Photo Tag/Fall Game recently and used it for inspiration in preparing this simple egg dish. A big thank you to Chef breezermom! Measurements are estimated. Perfect for a light and simple meal.

olive oil, for frying
3/4 cup baby arugula leaf
1 -2 lightly fried egg (depends on how hungry you are)
2 -3 tablespoons barbecue sauce (*homemade* only!)
2 -3 tablespoons sharp white cheddar cheese, freshly grated (I used New Zealand grass fed white cheddar)
2 -3 tablespoons fresh cilantro (*fresh * only!)
cracked black pepper

Steps:

  • Heat up a skillet on medium heat then add the olive oil.
  • Arrange the arugula leaves on a plate.
  • Gently crack the egg(s) and lightly fry for 3 minutes, or to your preference.
  • Carefully arrange the fried egg on the arugula leaves.
  • Spoon barbecue sauce on and around the egg and greens.
  • Grate cheese on top followed by a garnish of fresh cilantro.
  • Season with cracked black pepper.

Steps:

  • In a 7- or 8-in. skillet or omelet pan, melt butter over medium heat. Break eggs, 1 at a time, into a custard cup or saucer, then gently slide into the pan. Immediately reduce heat to low. Cook slowly until whites are completely set and yolks begin to thicken. , For eggs sunny-side up, cover pan and cook until yolks thicken, but are not hard. For basted eggs, spoon butter in pan over eggs while cooking. For over-easy eggs, carefully turn eggs to cook both sides but do not cover pan.
