1 package stuffing mix, 6 oz ((or 1 ½ cups leftover homemade stuffing))
1 ½ pounds boneless chicken thighs (approx 8 thighs )
8 slices bacon
½ teaspoon garlic powder
½ teaspoon paprika
salt & pepper to taste

Steps:

  • Preheat oven to 425°F. Grease a 9x13 baking dish and set aside.
  • Prepare stuffing according to directions and cool completely.
  • Lay each chicken thigh on a cutting board and place stuffing in the center (approximately 2-3 tablespoons depending on the size of the chicken thighs).
  • Fold each chicken thigh closed around the stuffing and tightly wrap with bacon. Sprinkle garlic powder and paprika on top of the thighs.
  • Place any leftover stuffing on the bottom of the baking dish and place chicken thighs seam side down on top of the stuffing.
  • Bake for 35 minutes or until chicken reaches an internal temperature of 165°F.

1 tablespoon olive oil
1 medium onion (chopped)
3.5 ounce frozen spinach (thawed and chopped)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1/2 teaspoon paprika
1 cup Swiss cheese (shredded (3.5 oz))
2 pounds chicken thighs (boneless and skinless, about 6 thighs)
salt and pepper (to taste)
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 cup white wine
1 teaspoon dried oregano
1/4 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1/2 teaspoon paprika (or to taste)
1/4 cup Swiss cheese (shredded (1 oz))

Steps:

  • Prep: Preheat oven to 350 F degrees.
  • Filling: Add the olive oil to a skillet and heat over medium heat. Add the onion and sauté until the onion is translucent. Add the spinach, 1/4 tsp salt, 1/4 tsp pepper and 1/2 tsp paprika and stir. Cook for 2 minutes then let the mixture cool for a few minutes. Add the 1 cup of the Swiss cheese to spinach mixture and mix.
  • Season: Pat dry chicken thighs; lay them flat, inside up. Season the thighs on both sides with oregano, salt, pepper and paprika to taste.
  • Roll: Place 2 tbsp of spinach and cheese mixture on each thigh, evenly dispersing the remaining filling among the thighs as needed. Roll the thighs and secure with toothpicks, 2 per thigh.
  • Make sauce: Mix the sauce ingredients together, and pour over the thighs.
  • Bake: Place the thighs to a 8x8-inch baking dish or a 9x13-inch baking dish, depending on the size of the chicken thighs. Cover with foil and bake for 30 minutes. Remove foil and sprinkle the remaining cheese over the chicken. Bake for another 5 to 10 minutes or until the cheese has melted.
  • Serve: Serve over cooked rice or mashed potatoes.

2 cups buttermilk
2 tbsp. salt
6 cheddar sticks
2 tbsp. chicken seasoning
18 strips thin cut bacon
Chili flakes to taste

Steps:

  • Whisk salt and buttermilk. Soak chicken thighs in buttermilk brine for 4 hours.
  • Pat thighs dry with paper towels, season with chicken seasoning and let them sit for 5-7 minutes.
  • Place cheese and a pinch of chili flakes in the middle of each thigh.
  • Fold the chicken thighs back over and wrap with bacon.
  • Bake at 190 C (375 F) for 30 minutes. Let sit for 5 minutes before serving.

Four 8- to 10-ounce boneless skinless chicken breast halves
2 tablespoons Dijon mustard
4 slices deli ham, each slice halved (about 3 ounces)
4 thin slices provolone (about 2 1/2 ounces)
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2/3 cup chicken broth
1 tablespoon unsalted butter
1 tablespoon chopped fresh herbs, such as parsley, chives or dill
1 1/4 pounds red-skinned potatoes
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Insert a paring knife into the thickest part of each chicken breast to make a 3-inch-long pocket down the side, cutting in about halfway. Rub the insides of the pockets with 1 tablespoon of the mustard for all 4 breasts. Stuff each breast with 2 half slices of ham and 1 slice of provolone, folding them to fit. Rub both sides of the chicken breasts with the olive oil and sprinkle with the salt and pepper.
  • Heat a nonstick skillet over medium-high heat until very hot, 3 to 5 minutes. Add the chicken breasts and cook until golden brown and just cooked through, 6 to 8 minutes per side depending on the thickness of the chicken; reduce the heat to medium if the chicken becomes too dark towards the end of the cooking time. Cover the skillet with a lid or a piece of aluminum foil during the last 3 minutes of cooking time to finish cooking the chicken through to an internal temperature of 160 degrees F. Check the temperature at the thickest part of the breast without stuffing.
  • Transfer the chicken to 4 plates or a cutting board and add the chicken broth and remaining 1 tablespoon mustard to the skillet. Cook, whisking, over medium-high heat until the sauce has reduced by about half, 3 to 4 minutes. Remove from the heat and swirl in the butter and chopped herbs.
  • Depending on the size of the breasts, either put 1chicken breast on each of 4 plates or slice all the breasts and divide among 6 plates. Spoon the sauce over the chicken and serve with Crispy Sliced Roasted Potatoes on the side.

  • Place a rimmed baking sheet in the center rack of the oven and preheat the oven to 425 degrees F.
  • Thinly slice the potatoes about 1/8-inch thick and toss with the oil, salt and pepper. Carefully spread the slices on the hot baking sheet in a single layer and roast until golden and crispy, turning with a metal spatula occasionally and spreading them out to cook evenly, 30 to 35 minutes.

Steps:

  • Combine softened butter, garlic, thyme, basil, salt, and pepper in a bowl. Place butter on a piece of wax paper and roll up rightly to form a butter log. Refrigerate until firm, about 2 hours.
  • Lay one bacon strip flat on a piece of wax paper. Place chicken thigh on top of the bacon and sprinkle with garlic. Open up the chicken thigh. Place 1-2 tsp of the cold finishing butter in the middle of the chicken thigh. Tuck one end of bacon into the middle of the chicken thigh. Fold over the chicken thigh and roll the bacon around the chicken thigh. Repeat with remaining thighs and bacon.
  • Preheat an air fryer to 370 degrees F (190 degrees C).
  • Place chicken thighs in the basket of the air fryer and cook until chicken is no longer pink and the juices run clear, about 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

12 spears asparagus
1 (8 ounce) package shredded mozzarella cheese
4 skinless, boneless chicken thighs
4 extra-thick bacon slices
kitchen string
2 tablespoons butter, divided
2 jalapeno peppers - stemmed, seeded, and minced
3 tablespoons all-purpose flour
2 cups warm milk
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9-inch square pan with parchment paper.
  • Trim asparagus spears to extend 1 inch past each side of the thighs.
  • Place 1 cup of the mozzarella cheese into a bowl.

1 cup panko bread crumbs
1 tablespoon sazon seasoning (such as Goya(R) sazonador total), divided

nonstick cooking spray

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Cut Swiss cheese into six 2 x 1/2 x 1/2-inch pieces.
  • Set up breading station: place bread crumbs, 2 teaspoon sazonador seasoning, and 1 tablespoon flour in a shallow dish, place remaining flour and sazonador seasoning in a second shallow dish, and crack eggs into a third shallow dish. Whip eggs until yellow and frothy. Season eggs with salt and pepper.

1/2 ounce fresh spinach
