SPINACH, PEAR AND CHICKEN SALAD

Steps:
- Slice the chicken breast in half horizontally to make 2 thin cutlets; season with salt and pepper. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook until lightly golden and cooked through, 4 to 5 minutes per side. Transfer to a plate to cool, then thinly slice.
- Meanwhile, combine the cranberries, vinegar and 1 tablespoon water in a small microwave-safe bowl. Cover with plastic wrap and microwave 45 seconds to plump the cranberries. Let cool.
- Whisk the cranberry-vinegar mixture, lemon juice, mustard, 1/2 teaspoon salt, and pepper to taste in a large bowl. Whisk in the remaining 3 tablespoons olive oil in a slow stream until blended. Add the chicken, spinach, endives, almonds, pear, about half of the cheese, and salt and pepper to taste; toss to combine. Divide among bowls and top with the remaining cheese.

FRIED CHICKEN AND SPINACH SALAD

- Preheat oven to 450°F. Place chicken on baking sheet and cook until crisp and heated through, about 10 minutes.
- Meanwhile, combine spinach, cabbage and green onion in large bowl. Add enough dressing to season to taste; toss well. Divide salad between plates. Slice chicken fillets on diagonal. Divide chicken between plates, placing chicken atop salad. Drizzle chicken lightly with vinaigrette and serve.
- Combine first 4 ingredients in small bowl. Gradually whisk in oil. Season to taste with salt and pepper. (Can be prepared 1 week ahead; refrigerate.) Makes about 1/2 cup.
GRILLED CHICKEN SPINACH SALAD WITH FRICO

- Preheat the oven to 350 degrees F.
- Coarsely grate the cheese. Line a baking sheet with a silpat mat or parchment paper. Sprinkle 1 tablespoon of the cheese on the mat to make a thin disk, about 2 inches wide. Repeat with the remaining cheese, spacing the disks evenly on the pan to make 8 fricos. Bake rotating the pan once during baking, until the cheese melts together and is just golden, about 12 minutes. Cool fricos on the pan.
- Position a rack 6 inches from the broiler and preheat.
- Slice the mushrooms as thin as possible. Toss with the lemon juice and season with the salt and pepper, to taste.
- Brush the chicken breast with olive oil and mustard. Season with the salt and pepper. Place the chicken in a flameproof gratin or casserole dish and broil, turning as needed until an instant-read thermometer inserted into the breasts registers 160 degrees F, about 25 minutes. Transfer the chicken to a plate, reserve the pan. Add the broth to the pan, and stir with a wooden spoon to release the brown bits that cling to the pan. Reserve the pan drippings.
- Whisk the balsamic vinegar, salt, and pepper, to taste, in a large bowl. Gradually whisk in the oil, and the pan drippings starting with a few drops and then adding the rest in a steady stream, to make a dressing.
- Slice the chicken. Toss the spinach and mushrooms with the dressing and divide among 4 plates. Scatter the chicken over the salads, top with the fricos and serve.

- Place chicken and spinach in large bowl. Cook bacon in large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels. Pour off all but 3 tablespoons drippings from skillet. Add onion and vinegar to drippings in skillet; stir to heat through, scraping up browned bits, about 1 minute. Pour dressing over chicken and spinach. Add bacon; toss to coat (spinach will wilt slightly). Season salad with salt and pepper; serve.

FRIED CHICKEN SALAD
I started making this salad for an easy lunch or dinner years ago after having one something like it at a restaurant named Grady's that is now closed. Adults and kids love it.

Steps:
- Boil eggs and let them cool.
- Bake chicken tenders according to directions on package(I have also used leftover chicken in this).
- Tear or prepare lettuce as normal.
- Add cheese, tomato, and cucumber to lettuce.
- Cut chicken into bite size pieces and put into lettuce mixture.
- Dice eggs and add into mixture.
- Mix together ranch dressing and barbeque sauce(I use more than above since we love this dressing) and pour desired amount over salad.
- I do individual salads with this instead of mixing all together. The chicken tends to sink to the bottom.
- You can add whatever other veggies you want to it but my kids won't eat onions, peppers, etc so I skip them.
BUTTERMILK FRIED CHICKEN WITH SPINACH TOMATO SALAD

- Mix buttermilk, curry powder, 3 teaspoons salt, and pepper in large bowl. Add chicken; turn to coat. Cover; chill at least 4 hours or overnight.
- Remove chicken from refrigerator. Line 2 baking sheets with paper towels. Mix flour, chili powder, and 3/4 teaspoon salt in shallow dish. Mix tomatoes and next 3 ingredients in another large bowl.
- Add enough canola oil to 12-inch skillet to reach depth of 1/2 inch. Heat over medium-high heat to 375°F. Remove 6 chicken pieces from buttermilk mixture. Dip in flour mixture and turn to coat; shake off excess. Add chicken, skin side down, to skillet. Reduce heat to medium-low. Cover; cook until brown, about 12 minutes. Turn chicken over. Cook uncovered until cooked through, about 5 minutes for breasts and 10 minutes for legs and thighs; transfer to paper towels. Repeat with remaining chicken. (Salad and chicken can be made 2 hours ahead. Let stand at room temperature.)
- Add spinach to tomato salad; season with salt and pepper. Divide salad among plates; top with chicken.
CHICKEN, AVOCADO AND SPINACH SALAD
This makes a great lunch or dinner salad for four. Easy to throw together if you begin with leftover chicken.

- Heat 1 TBS olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper to taste.
- Cook in skillet, turning once, until juices run clear (about 12 minutes).
- Slice into thin strips and place in large bowl.
- In separate bowl, whisk together salt and pepper, garlic and vinegar.
- Slowly whisk in 1/3 cup olive oil.
