SAN MARZANO TOMATO SAUCE



San Marzano Tomato Sauce image

A famous family recipe - San Marzano Tomato Sauce. A luscious red sauce simmered for several hours to develop the most rich and hearty tomato sauce. Fresh herbs, authentic Italian flavors, and the most inviting aroma. Easily the best tomato sauce I've ever had! From my family to yours.

8 cloves minced garlic
2 tbsp extra-virgin olive oil
4-5 28oz cans San Marzano Peeled Tomatoes ((with juices))
2-3 tbsp amore sun-dried tomato paste
1/2 tsp (each) salt & black pepper
3 Tbsp fresh basil ((for dried basil - 1 Tbsp))
2 Tbsp fresh oregano ((for dried oregano - 2 tsp))

Steps:

  • Cook garlic: In a large pot on LOW-MEDIUM heat sauté garlic in olive oil for 30-60 seconds. Stir constantly to keep garlic from burning.
  • Add tomatoes and simmer: pour canned tomatoes with juices in with the garlic. Add tomato paste, salt, and black pepper. Mix ingredients together, partially cover with lid - but not completely, and simmer on LOW heat for 4+ hours. Stir every so often to avoid burning. Note: if using a parmesan rind, add it in this step and let it simmer with sauce until finished. Remove and discard rind when ready to serve.
  • For smooth sauce: when sauce is finished cooking, use a hand immersion-blender to puree. Note: If you prefer a chunkier/thicker sauce (like I do), you can skip this step as the San Marzanos naturally break down while cooking.
  • Add herbs: when sauce is finished, mix in chopped fresh herbs. Season with additional salt & black pepper if needed and serve!

There are about as many versions of tomato sauce as there are cooks in the world. The Italian-American heritage of one of our test-kitchen team members informed the development of this recipe, leading us to a version of her family's favorite tomato sauce. A variety of canned tomatoes adds richness. A long simmer helps the flavors meld and results in a sauce that is perfect on pasta or nestled around chicken cutlets or meatballs.

1/2 cup extra-virgin olive oil
6 cloves garlic
1 medium onion, diced
One 28-ounce can whole San Marzano tomatoes
One 28-ounce can crushed tomatoes
One 14-ounce can tomato sauce
2 tablespoons tomato paste
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 piece Parmesan rind, optional
1 sprig basil

Steps:

  • Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
  • Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
  • Finely chop the reserved browned garlic cloves and add to the sauce.
  • Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

10 roma (plum) tomatoes - peeled, seeded and crushed
½ small onion, chopped
1 teaspoon minced garlic
¼ cup olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch cinnamon

Steps:

  • Place tomatoes, onion, garlic, and olive oil in a slow cooker. Season with oregano, basil, cayenne pepper, salt, black pepper, and cinnamon.
  • Cover, and cook 10 to 15 hours on Low. The longer you simmer it the more flavorful it becomes. At 10 hours it's really good, but at 15 its even better.

4-5 lb tomatoes, any variety
1/4 c olive oil
1/2-1 onion, chopped
1 green bell pepper, chopped
3 clove garlic, minced or pressed
salt & pepper
6 oz tomato paste
2 Tbsp parsley, chopped

Steps:

  • 1. Clean tomatoes. Cut an 'X' on the bottom of each one. Bring large pot of water to a boil, and lower heat to simmer. Prepare a large bowl of ice water and have at least 2 other large bowls at the ready. Put a few tomatoes in boiling water at a time for about 30 seconds (until skin begins to peel back). Take them out of the hot water and put into ice bath immediately. The skin should now peel off easily. Peel skins off tomatoes. Do this for all the tomatoes. Throw away skin.
  • 2. Cut tomatoes in half across the equator and remove all the seeds into a separate bowl. When all tomatoes have been emptied you can pour seeds and juices through a fine mesh strainer into another bowl. Reserve juices, discard seeds. Or just add some water to the recipe and skip this.
  • 3. Heat oil in a large stock pot over medium heat. Put onion, peppers, garlic and a pinch of S&P in pot and saute until tender. Add tomato paste and stir. Add tomatoes, reserved juices and parsley. S&P again. Stir everything together well. Bring to a boil. Lower heat and simmer for 4 hours. You will want to put a splatter guard over pot. Stir occasionally. If sauce starts to dry out add water 1/2- 1 cup at a time. Tastes sauce throughout cooking, add salt pepper and herbs at will.

With an overload of garden fresh tomatoes I wanted to make a homemade tomato sauce and then this recipe was sent from another web site and it sounds like just what I was wanting. Love the ease of crock pot cooking! Some reviews that came with it suggested to increase the cayenne pepper but as with all spices I think that would be a matter of taste. I ended up putting the finished sauce in zip lock freezer bags in 1 cup quantity and freezing and this worked well. Now I always have fresh tomato sauce on hand when needed
