I add about 2 tablespoons sugar simply to soften the taste and make my kids happy. But it is delicious without the sugar, and when I leave it out, I don't tell them and they never say a word!

6 slices bacon, cut into bite-size pieces
½ onion, diced
1 (12 ounce) package fresh Brussels sprouts, trimmed and sliced
2 tablespoons white sugar, or to taste

Steps:

  • Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, leaving grease in the skillet.
  • Cook onion in the bacon grease in the skillet until translucent, about 5 minutes. Add Brussels sprouts and toss to coat in the bacon grease. Cook and stir until browned and tender, about 5 minutes. Stir in sugar, salt, and black pepper; sprinkle in bacon pieces.

1/2 cup walnuts
2 lb. brussels sprouts
8 Tbsp. extra-virgin olive oil
Kosher salt, freshly ground pepper
1/2 lemon
1 Tbsp. walnut oil or 1 1/2 tsp. sesame oil

Steps:

  • Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 8-10 minutes. Let cool, then coarsely chop.
  • Using a paring knife, remove cores from brussels sprouts through stem ends; discard. Peel off leaves all the way down to the very center.
  • Heat 2 Tbsp. olive oil in a large skillet over medium-high. Add a quarter of the brussels sprout leaves and cook, tossing once or twice, until bright green and deeply charred in spots, about 4 minutes. Season with salt and pepper; transfer to a platter. Repeat process 3 more times with remaining brussels sprouts and olive oil.
  • Finely grate lemon zest over brussels sprouts, then squeeze juice on top. Scatter walnuts over and drizzle with walnut oil. Finish with a few cranks of pepper.

  • Brussels sprouts can be cored and leaves separated 3 days ahead. Wrap in damp paper towels and store in resealable plastic bags; chill.

CRISPY DEEP FRIED BRUSSELS SPROUTS

2 lb small Brussels sprouts
neutral cooking oil (for frying, vegetable oil preferred)
100 ml fish sauce
80 ml water
30 ml rice wine vinegar
1 lime
60 g sugar
1 garlic clove
1 shallot
neutral cooking oil (for frying, vegetable oil preferred)

Steps:

  • Trim 2 lb Brussels sprouts by removing the outer layers of leaves first and then cut the bottom dried out stem portion off. Try not to remove too much of the stem so that it still keeps your Brussels sprouts intact. Cut the Brussels sprouts in half.
  • Rinse your Brussels sprouts and leave them in a water bowl for about 5 minutes. I do this to remove some extra dirt that might get stuck in between the leaves.
  • After rinsing, lay the Brussels sprouts out on a dish towel to let them dry fully. If the Brussels sprouts are wet or cold, this could change the temperature of the oil and affect the crispiness of the Brussels sprouts. You also want to prevent splatter by removing as much water from the Brussels sprouts as possible.
  • In the same heavy-bottomed pot, add about one inch of vegetable oil (or another oil with a high smoke point) and heat to 375 °F. Slowly lower about six to seven Brussels sprouts into your oil. Fry your Brussels sprouts in multiple batches to prevent crowding and to allow your Brussels sprouts to cook evenly.
  • When your Brussels sprouts have shrunk slightly and the outer layer leaves have changed to a dark brown, almost blackened color, remove them and place them onto a towel to get rid of excess oil.
  • In between frying batches of Brussels sprouts, combine the fish sauce, water, rice wine vinegar, and sugar into Tupperware. Add fresh squeezed limes and mix. Close the lid on and shake vigorously to evenly blend the sugar granules.
  • In a bowl, combine the freshly fried Brussels sprouts and seasoning and mix. Adjust seasoning to taste and top with fried shallots.
  • Serve immediately.
  • Peel the outer layer of the shallot.
  • Using a mandoline slicer and some cut proof safety gloves, slice the shallots in ¼ of an inch slices.
  • In a heavy-bottomed pot, add one inch of vegetable oil (you can re-use this oil later for the Brussels sprouts) and heat to 325 °F.
  • Carefully add the shallots and watch over them as they brown--this can happen very quickly so watch the pot. When the shallots turn light golden brown, remove them immediately from the oil and place onto paper towels to dry. The shallots will continue to cook once you remove them so it's okay if you have extra pieces that are still light.
  • Top the fried shallots on the Brussels sprouts.

1 lb. Brussels Sprouts, Dry, Trimmed And Halved At Room Temperature (Not Refrigerated Or Damp)
1 Red Fresno Chili, Thinly Sliced
FOR THE HONEY SRIRACHA GLAZE:
1 tsp. Vegetable Oil
1 clove Garlic, Minced
1/3 c. Honey
1 tbsp. Sugar
2 tbsp. Lemon Juice, Plus The Zest
2 tbsp. Rice Vinegar
2 tbsp. Sriracha
Kosher Salt To Taste

Steps:

  • Fill a large pot with a few inches of vegetable oil. Fit with a thermometer and heat oil to 400ºF. Meanwhile, make the sauce. In a pan, add vegetable oil and garlic over medium heat. Cook for 1-2 minutes until garlic is barely golden. Add honey and the sugar and then lemon juice, zest and rice vinegar. Whisk together and simmer for 2-3 minutes until slightly thickened. Whisk in the Sriracha and remove from heat. Season to taste with kosher salt.When the oil is 400ºF, add 1/2 of the Brussels sprouts and turn the heat to high. Stir sprouts while they are frying. When they float to the top and have a nice golden brown color, about 3 minutes, remove them with a slotted spoon and transfer them to a paper-towel-lined sheet tray. Sprinkle lightly with kosher salt and bring oil temperature back to 400ºF. Add remaining half of the sprouts to the oil and repeat the process, adding the chilis in the last minute of frying the second batch.Add all of the sprouts and chili to a bowl and drizzle with the sauce right before serving hot.Note: The temperature of the oil is very important. If the temperature is low or the Brussels sprouts are cold or damp, it will bring the temperature down too low and the sprouts will be soggy, not crispy!

Steps:

  • For the brussels sprouts: Heat the oven to 200F. Trim the sprouts and remove the outer leaves. Then halve or quarter them, depending on their size. Fill a large high sided pot with 2-3 inches of vegetable oil. Heat the oil to 400F. Add the brussels sprouts in batches, keeping the oil above 350F, and fry the sprouts until they are golden brown to deep brown and crispy, 2-3 minutes per batch. With a slotted spoon, transfer the fried sprouts to a paper towel lined plate to soak away some of the oil and sprinkle them with kosher salt. Then move them to a rack set over a baking tray. Keep the sprouts in the warm oven until you are ready to serve them.
  • For the maple aioli: In a medium bowl, whisk together the egg yolk, salt, and 1 tbsp of the lemon juice. The yolk will get light colored and then darken a bit. Now is the time to start adding the oil. Whisking the egg mixture constantly, begin adding the oil in a slow, steady stream until all the oil is used and the sauce has thickened. Then stir in the lemon zest, paprika, maple syrup, garlic, and a dash of cayenne. Taste the aioli and add more lemon juice, cayenne and/or salt as needed.

  • Place the bacon slices onto a large, cold saute pan on the stove. Turn heat to medium. Fry bacon for a few minutes on each side, until crispy.
  • Remove bacon and set aside to drain on paper towels. Leave the bacon grease in the pan.
  • Add 2 tbsp (30 mL) olive oil to the pan and swirl around. Add brussels sprouts. Season with sea salt and black pepper, and stir to distribute.

Steps:

  • Clean and half the brussel sprouts.
  • Heat up your pan on medium - hot heat. Add butter and garlic. Once garlic butter starts to sizzle, add your Brussel sprouts.
  • Turn down to medium heat and stir/shake the Brussel sprouts around in the pan until golden and slightly soft. This is a bit of a slow process and takes around 15 min to get them perfect. 1 -1 1/2 lb fresh Brussels sprout (roughly all same size otherwise cut in half)
2 cups seasoned bread crumbs
2 cups grated parmesan cheese
salt and pepper

  • Wash sprouts off, peel first couple leaves off outside, cut small piece off bottoms and then lightly cut an X into the bottom of each sprout.
  • Bring a pot of salted water to a boil and blanch the sprouts until they are almost done. Then put them into an ice bath until they are cold(this will stop the cooking process and prevent them getting mushy) . Drain them and set aside.
  • When ready for dinner, combine bread crumbs, parmesan cheese, and seasonings. Beat eggs in a small bowl with a little water.
  • Heat a large skillet over medium heat with some olive oil.
  • Dunk drained sprouts in egg, let as much drain off as possible, then toss in the bread crumb/cheese mixture, pressing the crumbs lightly onto the sprouts.
  • Pan cook the sprouts in the oil till golden brown and delicious.

Highly nutritious, and because of the way it's prepared your kitchen won't be overwhelmed with smell of brussels sprouts. According to Bon Appétit, the key to this dish's success is controlling the heat on the pan from beginning to end. You can increase the spiciness of your stir-fry by adding more chiles.

1 pound brussels sprouts, halved lengthwise (4 cups)
Kosher salt
3 small shallots, peeled and thinly sliced into rounds (1/2 cup)
2 Fresno or red finger chiles, thinly sliced into rounds (1/3 cup)
2 tablespoons fresh lime juice
1 tablespoon maple syrup or honey

Steps:

  • In a heavy-bottomed pot, heat 2 inches of oil over medium-high. When oil reaches 360 degrees on a thermometer, carefully add 1/3 of the brussels sprouts. Cook, turning occasionally, until crisp and golden brown, 2 to 3 minutes. Transfer to a paper towel-lined tray with a slotted spoon and sprinkle with salt. Fry remaining sprouts in batches, returning oil to 360 degrees between each batch. Add shallots and chiles to oil and fry until slightly wrinkled and just beginning to color, 1 to 2 minutes. Transfer to tray with sprouts.

1 clove garlic, minced
4 salt-packed anchovy fillets, rinsed, filleted and minced
1 serrano chile, seeded and minced
1/4 cup red wine vinegar
1 tablespoon honey
2 scallions, white and green parts, thinly sliced on the bias
1/2 cup walnut pieces, toasted and coarsely chopped
1/2 cup extra-virgin olive oil
1 pound Brussels sprouts, trimmed and quartered lengthwise
2 cups loosely packed flat-leaf parsley leaves
2 tablespoons salt-packed capers, rinsed and patted dry
Kosher salt and freshly ground black pepper

Steps:

  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 350 degrees.
  • While the oil is heating, whisk together the garlic, anchovies, serrano, red wine vinegar, honey, scallions, walnuts and extra-virgin olive oil in a bowl large enough to toss all of the Brussels sprouts. Keep the bowl near the stovetop.
  • Working in batches, deep-fry the Brussels sprouts until the edges begin to curl and brown, about 3 minutes. To the last batch, add the parsley and capers (stand back-the capers will pop and sputter!). Give the contents of the pot a stir. When the color of the parsley becomes a deeper, more saturated shade of green, about 30 seconds to 1 minute, remove the contents of the pot with a skimmer and place directly in the bowl of dressing. Toss to coat. Add salt and pepper to taste.
