My mom loved these and I have never heard of anyone preparing beets quite this way! Not exactly a health-food, but so tasty! Mother said, 'Cook them until they're burned.' She was right! You may also need to add a little more butter or margarine if they seem to need it.

6 large red beets
¼ cup butter
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add beets and cook uncovered until slightly tender, about 20 minutes. Drain, rinse, and cut ends from each beet.
  • Place beets in a saucepan with about 2 inches of water. Cover saucepan and bring water to a boil; cook beets until tender, about 20 minutes. Remove beets from water and immediately immerse in a bowl of ice water to cool. Pull peels off the beets. Slice beets into 1/4-inch-thick slices.
  • Heat butter in a large skillet over medium-high heat; fry beets, flipping occasionally, until lightly blackened, about 20 minutes. Season beets with salt and pepper.

I was helping make supper at my sisters and I was in charge of cooking the beets. Years ago I had tried every way to cook beet so I'd like them, didn't work. I wasn't really concerned if the beets turned out OK, because I wasn't going to eat them, so I went for simple. Well when I was stirring them one escaped the pan, picked it up no place to put it, popped it in my mouth. DEEEEE LISH US.

2 cups cooked sliced young beets
1/4 cup butter
1 cup chopped onion
salt
pepper

Steps:

  • Melt butter in non-stick frying pan.
  • Add butter, onions, salt and pepper.
  • Fry on med-low heat until onions are translucent because beets are already cooked.
  • NOTE: To cook beets, trim them leaving approximately 1 1/2 inch stem. Place in large pot with enough cold water to cover, add 1/2 tsp salt. Bring to a boil, then lower heat and simmer until tender. Cooking time depends on how large the beets are. Drain, wearing rubber kitchen gloves, remove skin. Cool. Slice for above recipe.

20 beets
1/2 cup vegetable oil
1/2 cup white vinegar
Soybean oil, for frying
2 cups cornstarch
2 cups Japanese mayonnaise, such as Kewpie
Shichimi togarashi (Japanese 7-spice blend)
1/2 cup sliced green onions

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the beets in the center of a large foil sheet. Drizzle with the oil and vinegar. Place a second large foil sheet on top of the beets, crimping the edges together to form an airtight pocket. Roast in the oven for 2 hours.
  • When the beets are ready, peel them using a kitchen towel. If roasted correctly, the skin should slide right off. Cut the beets into 1-inch cubes and allow them to chill.
  • Heat soybean oil in a large pan or deep-fryer to 375 degrees F.
  • Toss the beets in the cornstarch until covered, adding more cornstarch as needed. Fry in 2-cup batches, until the outer cornstarch layer becomes crispy.
  • Serve each batch with 1/4 cup mayonnaise. Garnish with shichimi togarashi and green onions.

5 - 6 medium beets - boiled or roasted - skin removed - sliced about 1/4 thick
2 - 3 Tbsp bacon fat - if you don't have any stored, fry off a few pieces of bacon
1 small red onion- thin sliced
kosher salt & fresh cracked black pepper
1 - 2 clove garlic - minced
balsamic vinegar - good quality

Steps:

  • 1. I boiled my beets for about 20 minutes, until tender. Drain and let cool until can handle. ( you could use canned beets, but fresh is best.) In my iron skillet over medium heat, I added my bacon fat - after hot, add the onion and garlic - stirring frequently so not to burn, just until tender.
  • 2. Add the sliced beets, not overlapping, as you want them all to get a browning. Add desired kosher salt and pepper. Cook on one side for about 4 - 5 minutes, then turn and brown the other side. ( I just moved the onions and garlic to one side of pan, and occasionally stir so didn't burn on bottom, could remove if you want, while beets are browning.)
  • 3. Once beets are browned mix with the onions and garlic - Plate, and sprinkle with a little more salt & pepper - drizzle with desired amount of balsamic and enjoy! I may have used 1 tsp of balsamic, not a lot, as I didn't want it to take over the flavor of the beets...I love the beets made this way...I hope you do as well...

1½ lb. red beets (about 2 large), peeled, cut into (¼") pieces
2 garlic cloves, finely grated
2 Tbsp. ancho chile powder
1 tsp. crushed dried oregano, preferably Mexican
1 tsp. paprika
¾ tsp. ground cumin
½ tsp. freshly ground black pepper
1 Tbsp. Diamond Crystal or 1½ tsp. Morton kosher salt, plus more
2⅓ cups plus 3 Tbsp. vegetable oil, divided
1 large white onion, halved through root end, sliced (¼" thick)
6 medium serrano chiles, quartered lengthwise, leaving stems and seeds intact
⅓ cup sage leaves
6 (6"-diameter) corn tortillas
6 large eggs
Salsa de Árbol (for serving)

Steps:

  • Place a rack in middle of oven; preheat to 350°F. Toss beets, garlic, chile powder, oregano, paprika, cumin, pepper, 1 Tbsp. Diamond Crystal or 1½ tsp. Morton kosher salt, and ⅓ cup oil in a medium bowl until beets are coated. Scrape onto a foil-lined rimmed baking sheet; bake, tossing every 15 minutes, until beets are tender and spices are very fragrant and smell slightly toasted, 35-45 minutes.
  • Meanwhile, heat 2 cups oil in a large saucepan over high until oil bubbles immediately when the edge of a tortilla touches the surface. Carefully fry onion, adding a little bit at time to avoid too much spattering and reducing heat as needed, until tender and beginning to brown, about 5 minutes. Transfer to a paper-towel-lined baking sheet. Repeat process with chiles, about 5 minutes. Transfer to same baking sheet. Fry sage leaves until crisp, about 30 seconds. Transfer to baking sheet. Working one at a time, fry tortillas, turning once, until crisp, puffed in places, and deep golden brown, about 1 minute per side. Transfer tostadas to baking sheet.
  • Heat remaining 3 Tbsp. oil in a large nonstick skillet over medium-high. Crack eggs into skillet, leaving space around each one, and cook until whites are set and edges are crisp, about 4 minutes. Season with salt.
  • Spoon beet mixture onto tostadas, dividing evenly, and top each with an egg, then fried onion, chiles, sage, and Salsa de Árbol.

4 medium beets (about 1 1/2 pounds total), scrubbed and trimmed, leaving about 1 inch of stems attached
For balsamic vinegar sauce
1/2 cup balsamic vinegar
3 tablespoons finely chopped fresh mint leaves (wash and dry before chopping)
2 tablespoons sugar
For batter
3/4 cup all-purpose flour
1/4 cup finely chopped fresh mint leaves (wash and dry before chopping)
1/4 teaspoon salt
3/4 cup plus 1 tablespoon water
2 cups vegetable oil

Steps:

  • In a large saucepan cover beets with salted water by 1 inch and simmer, covered, until tender, about 35 mintues. Drain beets in a colander and cool until they can be handled. Slip off and discard skins and stems. Beets may be prepared up to this point 3 days ahead and chilled, covered.
  • Make sauce:
  • In a very small saucepan simmer sauce ingredients, stirring occasionally, until reduced to about 1/4 cup. Remove pan from heat and let sauce stand, covered, 15 minutes. Pour sauce through a fine sieve into a small bowl and cool. Sauce may be made 3 days ahead and chilled, covered. Bring sauce to room temperature before serving.
  • Make batter:
  • In a bowl whisk together flour, mint, and salt and add water, whisking until combined (batter will be lumpy).
  • Cut beets into 1/4-inch-thick slices. In a deep 9-inch skillet heat oil over moderately high heat until 375°F. on a deep-fat thermometer. Working in batches, dip beet slices in batter and fry, without crowding, until golden and crisp, about 1 minute on each side, making sure oil returns to 375°F. before adding next batch. Transfer beets as fried to paper towels and drain. Beets may be made 2 hours ahead and reheated on a baking sheet in a 425°F. oven 10 minutes.
  • Serve beets with sauce on the side for dipping.
