Another recipe that I have collected in my quest to find healthy recipes. This sounds like it would taste really fresh on a summer's evening or for lunch. The recipe was originally published in the September 2007 copy of BBC Good Food Magazine.

1 tablespoon sunflower oil
2 large tuna steaks
1 pinch cayenne pepper
1 teaspoon ground cumin
4 tortillas
1 avocado, sliced
2 tomatoes, slices
1 lime, juice of
1/4 cup fresh cilantro, chopped

Steps:

  • Rub oil over each steak, then sprinkle with spices.
  • Heat a griddle pan until hot, then cook the steaks on one side for 2 minutes. Turn and cook for 1 to 2 minutes more. Cut into strips.
  • Heat the tortillas for 30 seconds in a microwave until soft.
  • Pile tuna, avocado and tomatoes on top of each, then squeeze over the line juice and scatter with cilantro.
  • Roll up and eat. If you like you can put a dollop of sour cream on the prior to rolling them up.

1/3 cup sour cream
1/4 cup chopped red onion
3 tablespoons chopped cilantro
1 teaspoon minced canned chipotle chilies*
1 8-ounce ahi tuna steak, cut into 3/4-inch pieces
1 tablespoon taco seasoning mix
1 tablespoon vegetable oil
4 taco shells

Steps:

  • Mix first 4 ingredients in small bowl. Place tuna in medium bowl; sprinkle with taco seasoning. Heat oil in heavy medium skillet over medium-high heat. Add tuna; sauté to desired doneness, about 3 minutes for medium. Reduce heat to medium-low. Stir in sour cream mixture. Cook just until heated through, stirring frequently, about 2 minutes (do not boil).
  • Heat taco shells in microwave 20 seconds. Fill taco shells with tuna mixture.
  • *Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.

2 tablespoons minced garlic (4 or 5 large cloves)
1/3 cup extra-virgin olive oil
1/2 teaspoon paprika
1/8 teaspoon cayenne
2 (14- to 15-ounce) cans diced tomatoes
1/2 teaspoon salt
Pinch of sugar
1 (1 1/2-pound) piece tuna, cut crosswise into 1/2-inch-thick pieces

Steps:

  • Cook garlic in oil in a 12-inch heavy skillet over moderate heat, stirring, until golden, about 1 minute. Add spices and cook, stirring, until fragrant, about 30 seconds. Stir in tomatoes (including juice), salt, and sugar and simmer, uncovered, stirring occasionally, until broken down, 20 to 25 minutes.
  • Season tuna with salt and pepper and arrange in 1 layer on top of sauce. Cook, covered, 2 minutes, then remove from heat and let stand, covered, until top of fish is no longer red, 1 to 3 minutes. Transfer to a platter and spoon sauce on top.

1 tablespoon olive oil
1 onion, chopped
1/2 teaspoon chili powder
1 red fresh chili pepper, finely chopped
14 ounces chopped tomatoes
14 ounces tuna in vegetable oil
14 ounces red kidney beans, drained
5 (10 inch) flour tortillas
5 ounces sharp cheddar cheese, grated
fresh ground black pepper

Steps:

  • Heat the oil in a heavy based pan. Cook the onion until soft. Stir in the chili powder and chili and cook for one minute.
  • Add the tomatoes and bring to the boil, reduce the heat and simmer for 5 minutes until thickened.
  • Stir in the tuna and kidney beans and season to taste. Cook for 1-2 minutes.
  • Place a tortilla on a heatproof plate. Spread over a little sauce, sprinkle with cheese and continue layering the tortillas, sauce and cheese. Finish with a tortilla sprinkled with cheese.
  • Place the plate on a baking sheet and broil until the cheese is golden brown and bubbling.

1 cup KRAFT Shredded Cheddar Cheese
4 flour tortillas (12 inch)
8 large lettuce leaves

Steps:

  • Mix tuna, celery, mayo, red pepper and cheese.
  • Spread tortillas evenly with the tuna mixture.
  • Top each with 2 lettuce leaves; roll up.

3/4 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon dried chipotle powder
1 lb tuna fillet
cooking spray
8 corn tortillas, 6-inch
1 cup avocado, sliced peeled (about 1 medium)
1/2 cup onion, vertically sliced
1/4 cup fresh cilantro leaves
24 slices jalapeno peppers, pickled in jar
8 teaspoons reduced-fat sour cream
4 lime wedges

Steps:

  • Combine the first 5 ingredients in a small bowl.
  • Sprinkle the spice mixture evenly over both sides of tuna.
  • Heat grill pan over high heat. Coat cooking pan with cooking spray.
  • Add tuna; cook 2 minutes on each side or until medium-rare (or until desired degree of doneness.
  • Cut tuna into 1/4 inch thick slices.
  • Warm tortillas according to package directions.
  • Divide tuna evenly among tortillas. Top each with 2 Tbs. avocado, 1 tbs. onion, 1 1/2 teaspoons cilantro, and 3 jalapeño slices. Top each with 1 teaspoons sour cream. Serve tacos with lime wedges.

  • Light a grill or preheat a grill pan. In a large skillet, heat 2 tablespoons of the olive oil. Add the onions, season with salt and cook over moderately high heat until softened and browned, about 8 minutes. Add the chipotle powder and cook for 30 seconds. Add the oregano and the vinegar and cook for 1 minute. Transfer to a plate.
  • Meanwhile, in a bowl, combine the mango, cucumber, serrano, lime juice and cilantro and season the salsa with salt.
  • Oil the grill. Rub the tuna with the remaining 1 tablespoon of olive oil and season with salt. Grill over high heat until lightly charred and pink within, about 3 minutes per side. Transfer to a plate. Grill the tortillas until hot and soft, about 10 seconds. Stack the tortillas and wrap them in foil to keep warm.
  • Thinly slice the tuna and transfer to a platter. Serve with the onions, salsa and tortillas. Let everyone make their own tacos.
