2 cups diced tomatoes
1 small onion, finely chopped
6 tablespoons olive oil
2 cloves crushed garlic
6 leaves fresh basil, torn
10 ounces fusilli pasta
3 tablespoons grated Parmesan cheese, or to taste
1 ½ cups crumbled feta cheese
salt and ground black pepper to taste

Steps:

  • Stir tomatoes, onion, olive oil, garlic, and basil together in a bowl.
  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until cooked through but firm to the bite, 12 minutes. Drain.
  • Toss warm pasta with feta cheese and Parmesan cheese in a large bowl. Stir tomato mixture into pasta and season with salt and pepper.

Spaghetti With Fresh Tomato and Basil Sauce image

This recipe came to The Times in 2003 from the chef Scott Conant, who was then cooking at his restaurant L'Impero in Manhattan. It is simple, classic Italian fare that makes the most of summer's tomatoes, but you can also make it with hothouse offerings and it will be delicious.

3 pounds fresh plum tomatoes, blanched, peeled, seeded and quartered
3 ounces olive oil
Salt and freshly ground pepper to taste
1 pinch crushed red-pepper flakes
1 pound dry spaghetti
2 ounces extra-virgin olive oil
1 tablespoon butter
6 leaves fresh basil, shredded
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Blanch the tomatoes and remove the skins. Cut in half lengthwise and scoop out the seeds. Cut the tomatoes crosswise. Set aside in a bowl.
  • Heat 3 ounces olive oil in a large, deep skillet over medium-high heat until it smokes slightly. Add tomatoes, salt, pepper and crushed red pepper. Since the tomatoes will reduce and the salt will be concentrated, it is better to season initially with a lighter hand.
  • Chop the tomatoes with a potato masher until they are in fine chunks and all their liquid is released. Be sure they are chopped and crushed fine, for a semichunky sauce. Simmer for 25 minutes over medium heat.
  • While the sauce simmers, heat the water for the pasta. Cook the spaghetti in salted water about half of the way cooked. Drain, reserving some of the water.
  • Taste the sauce and adjust the seasoning if necessary. Add the pasta to the sauce and cook over medium-high heat until all the liquid is absorbed and the pasta is al dente. If the sauce is over-reduced, use the pasta cooking liquid to adjust it.
  • At the last moment, remove the pan from the heat; add the extra-virgin olive oil, butter, basil and cheese. Mix thoroughly until the pasta is an orangy color. Taste again and adjust the salt if necessary. Remove to a platter. Serve.

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

2 tablespoons olive oil
1 brown onion (large)
2 garlic cloves, crushed
2 kg medium tomatoes, peeled and chopped
1 teaspoon salt
1/2 cup dry red wine
2 teaspoons brown sugar
2 tablespoons tomato paste
2 tablespoons fresh basil leaves, finely chopped
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh oregano, finely chopped
1/2 teaspoon cracked black peppercorns
2 bay leaves

Steps:

  • Heat the oil in a large saucepan, cook the onion and garlic together, stiriing until the onion is soft. Add the tomatoes, salt and wine and simmer uncovered for about 15 minutes or until the tomatoes are soft.
  • Add the remaining ingredients, simmer uncovered for 10 minutes or until thickened. Remove bay leaves from sauce.
  • When cooled refrigerate for up to 3 days.
  • Use sauce as desired.

1 bunch of fresh basil
1 medium onion
2 cloves of garlic
1 kg ripe tomatoes, or 2 x 400g tins of quality chopped tomatoes
olive oil
1 tablespoon red wine or balsamic vinegar
480 g dried wholewheat spaghetti
15 g Parmesan cheese

Steps:

  • Pick the basil leaves onto a chopping board (reserving a few baby leaves to garnish), then roughly chop the remaining leaves and finely chop the stalks.
  • Peel and finely slice the onion and garlic. If using fresh, cut the tomatoes in half, then roughly chop them or carefully open the tins of tomatoes.
  • Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the onion, then cook for around 7 minutes, or until soft and lightly golden.
  • Stir in the garlic and basil stalks for a few minutes, then add the fresh or tinned tomatoes and the vinegar.
  • Season with a tiny pinch of salt and pepper, then continue cooking for around 15 minutes, stirring occasionally.
  • Stir in the chopped basil leaves, then reduce to low and leave to tick away. Meanwhile...
  • Carefully fill a large pot three-quarters of the way up with boiling water, add a tiny pinch of salt and bring back to the boil.
  • Add the spaghetti and cook according to packet instructions - you want to cook your pasta until it is al dente. This translates as 'to the tooth' and means that it should be soft enough to eat, but still have a bit of a bite and firmness to it. Use the timings on the packet instructions as a guide, but try some just before the time is up to make sure it's perfectly cooked.
  • Once the pasta is done, ladle out and reserve a cup of the cooking water and keep it to one side, then drain in a colander over the sink and tip the spaghetti back into the pot.
  • Stir the spaghetti into the sauce, adding a splash of the pasta water to loosen, if needed.
  • Serve with the reserved basil leaves sprinkled over the top and use a microplane to finely grate the Parmesan cheese, then sprinkle over.

TOMATO BASIL SAUCE

This basic tomato basil sauce recipe is made using fresh or canned tomatoes, fresh basil, onions, garlic, and olive oil. This traditional red sauce can be served with pasta dishes, or used as a base for pizza, meat or seafood sauces, or dishes like lasagna.

2-3 tablespoons olive oil (can also use butter)
1 large yellow onion (chopped)
2 garlic cloves, crushed (add more if you're a garlic lover)
2 lbs fresh ripe tomatoes, peeled and diced (- or 28 ounces of canned tomatoes, can be whole, diced or crushed )
1 tbsp sugar (optional)
Fresh basil (to taste)
Salt and pepper (to taste)

Steps:

  • Heat the olive oil or butter in a medium sized sauce pan.
  • Add the diced onion and crushed garlic, cook until the onion is soft and translucent, about 5-7 minutes.
  • Add the tomatoes and bring to the sauce to a boil.
  • Reduce the heat and add the basil - some can be chopped, but you can also add the stalks (they add flavor) and remove the stalks when the sauce is done. Add the sugar if using, you can also add the salt and pepper.
  • Cook the sauce over low heat for at least 30 minutes. Stir the sauce frequently with a wooden spoon and use the spoon to press and help breakdown the chunky tomato pieces.
  • For a smoother sauce you can use a hand held blender to break down the tomatoes if using whole or diced tomatoes. If you let the sauce cook for longer the tomatoes will naturally break down, or if you prefer a more chunky consistency you can skip the blender step.

1 tablespoon olive oil
1/2 cup onion, chopped (1 small onion)
2 tablespoons garlic, minced (2 large garlic cloves)
1/4 cup red wine
8 ounces white mushrooms, sliced
1 (28 ounce) can crushed tomatoes
1 tablespoon basil, finely chopped
1/2 teaspoon oregano
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper

Steps:

  • Heat the olive oil in a large sauce pan. Lower to medium heat and add the chopped onion. Saute until it starts to brown, 5-10 minutes.
  • Add the minced garlic and cook for 2-3 more minutes.
  • Add the wine to deglaze the pan, making sure to scrape up all the browned onion and garlic. Cook on medium-high heat until almost all the liquid evaporates, about 5 minutes.
  • Stir in the tomatoes, mushrooms, basil, oregano, salt, and pepper. Cover, and simmer on low heat for 15 minutes.

2 (400 g) cans plum tomatoes (chopped)
5 garlic cloves (crushed or finely chopped)
6 tablespoons olive oil
2 teaspoons dried basil
2 tablespoons tomato puree
1 cup fresh basil (extra dried can be used)
1 bay leaf
1 pinch mixed herbs
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon sugar

Steps:

  • use half the oil and gently fry garlic do not let it brown.
  • add the tomatoes, dried basil, bay leaf, mixed herbs, salt and pepper and sugar (this recipe needs between 1/2 - 1 tsp salt to bring out the flavours of the tomatoes.
  • bring to the boil and gently simmer for 20 mins, add the tomato puree and the rest of the oil and simmer for a further 15 mins until the mixture has reduced.
  • If using fresh basil roughly chop and add now.
  • Serve with pasta with grated parmasan cheese and freshly ground black pepper.
  • Variations - button mushrooms, black olives can be added.

4 raw tomatoes (medium to large)
4 garlic cloves (I say the more the better!)
1/3 cup olive oil
2 tablespoons melted butter
3 tablespoons balsamic vinegar
1 tablespoon sugar

2 cups fresh basil
pine nuts (optional)
1/4 cup olive oil

Steps:

  • Puree tomatoes with olive oil, butter, balsamic vinegar, garlic, salt and pepper, and sugar. Set aside.
  • Separately, puree the fresh basil, olive oil, and pine nuts.
  • We use either farfalle, rigatoni, or penne pasta.

1 can pelati (peeled) tomatoes, chop if whole (do not discard liquid) (no additions) 14.1 ounces ((400 grams))
2 tablespoons olive oil
1 -2 cloves garlic chopped
3/4 teaspoon oregano
1/4 - 1/2 teaspoon salt
hot pepper flakes to taste
1/4 cup water ((60 grams))
3 cups cooked pasta (short eg rigatoni, penne)* ((750 grams))

Steps:

  • In a large pot boil water, add salt and cook pasta al dente.
  • While water is boiling, in a large pan add olive oil, garlic, can of tomatoes, oregano, salt, hot pepper flakes, fresh chopped basil and water, cook on medium heat until thickened.
  • Add the drained cooked pasta and half a ladle of pasta water, raise the heat and while gently stirring constantly, cook for approximately 1-2 minutes or until thickened. Serve immediately with chopped fresh basil and grated Parmesan Cheese. Enjoy!

Steps:

  • Melt the butter in a large skillet over medium heat; cook the tomatoes in the melted butter until they begin to fall apart, 5 to 7 minutes. Add the basil, olive oil, garlic salt, salt, and pepper. Slowly stir the flour into the mixture and cook until it begins to thicken, 5 to 7 minutes. Blend until smooth — be sure to let the mixture cool first if using a blender. Taste. Adjust seasoning with more salt to taste — I often add another teaspoon of kosher salt, but start with a 1/2 teaspoon and add more to taste. Add freshly cracked black pepper to taste, too, if you wish. Store in the fridge for up to a week. Or freeze for up to 3 months.
