1 cup sugar, or to taste
1 cup water
1 1/2 pints strawberries, hulled and sliced
3 to 4 tablespoons fresh lemon juice, or to taste

Steps:

  • In a saucepan set over moderate heat, combine the sugar and water, bring mixture to a boil, and simmer, stirring, for 3 minutes, or until clear. Transfer to a bowl and let cool. In a food processor or blender puree the strawberries with lemon juice, to taste. Add strawberry puree to sugar syrup and stir to combine. Transfer mixture to an ice cream freezer and freeze according to manufacturer's instructions. Or freeze in cube trays.

2 cups water
1 cup sugar
1 quart strawberries, hulled
1/3 cup fresh orange juice
1/3 cup fresh lemon juice

Steps:

  • Stir 2 cups water and sugar in heavy medium saucepan over high heat until sugar dissolves. Boil 5 minutes.
  • Working in batches, puree strawberries in food processor until smooth. Add strawberry puree and orange and lemon juices to sugar syrup; stir to blend. Cover and refrigerate until cold, about 2 hours.
  • Process strawberry mixture in ice cream maker according to manufacturer's instructions or place mixture in shallow container and freeze, stirring every hour until set, about 6 hours. (Can be made 3 days ahead. Cover and freeze in airtight container. If sorbet is frozen solid, place in refrigerator for 15 minutes to soften.)

1 cup water
2/3 cup sugar
2 3/4 cups sliced hulled strawberries (about 1 1/2 one-pint baskets)
1/2 cup fresh orange juice
1/2 teaspoon grated orange peel

Steps:

  • Stir 1 cup water and sugar in small saucepan over medium heat until sugar dissolves. Bring to boil. Chill sugar syrup until cold, about 1 hour.
  • Combine sliced strawberries, fresh orange juice and orange peel in processor. Puree until smooth. With processor running, gradually add chilled sugar syrup and process until well blended. Transfer sorbet mixture to 13x9x2-inch glass dish. Freeze just until sorbet is firm, stirring every 30 minutes, about 3 hours total. Transfer frozen sorbet to processor. Puree until smooth. Spoon into dessert glasses and serve immediately or freeze in covered container up to 3 days.

1 lb fresh raspberries or 1 lb frozen raspberries
3/4 cup sugar
1/4 cup fresh lime juice or 1/4 cup lemon juice

Steps:

  • Combine berries with sugar and citrus juice, crushing them lightly with the back of a spoon.
  • Let rest at least 30 minutes, or until the berries release their juice (If using frozen berries, allow to rest until thawed).
  • Transfer berries and juice to a food processor and blend until smooth; strain puree, if desired, then chill until cold.
  • Freeze puree in an ice cream maker according to manufacturer's directions.
  • When frozen, transfer to a freezer container, press a piece of wax paper to top, and freeze until firm, at least 3 hours.

1 head butter lettuce
1 avocado, peeled, pitted and thinly sliced
1 cup jicama, cut into matchsticks
1 orange, peeled and segmented (I used Valencia)
1/4 cup red onion, diced small
2 tablespoons orange muscat champagne vinaigrette
1 tablespoon extra virgin olive oil (add more if you want-I like my vinaigrette on the lighter side usually)
salt and pepper, to taste
1 teaspoon stone ground mustard (my addition for a bit more zing)
fresh apple mint leaf (or pineapple)
2 tablespoons toasted pepitas (optional)

Steps:

  • Please note that all ingredient amounts are estimated.
  • Prepare the vinaigrette and set aside. Best prepared 1 hour in advance.
  • Gently toss the butter lettuce, avocado, jicama, orange segments, red onion and vinaigrette together in a large bowl.
  • Divide and arrange on 4 salad plates.
  • Garnish each serving with apple mint leaves and pepitas.
  • Pass the dressing.

2 tablespoons butter
2 cups sugar
5 tablespoons cornstarch
3/4 cup water
whipped topping

Steps:

  • Crust: Mix and pat into a 9x13 pan. Second Layer: Mix sugar, cream cheese, vanilla and 2 eggs.
  • Pour onto the crust.
  • Cook 15 minutes at 375 degrees. Third Layer: Mix corn starch and water until dissolved.
  • Mix in the rest of the ingredients, boil til thickened.
  • Cool.
  • Spread over the cream cheese layer.
  • Cool completely.
  • Fourth Layer: Spread on whipped topping of your choice.
  • Note: You can drizzle chocolate syrup on the whipped cream for a nice look.
  • But it is wonderful just the way it is.

1/4 cup cold apple juice

Steps:

  • Rinse, then cut blemishes and tops off strawberries.
  • Cut strawberries into quarters depending on size.
  • Place cut strawberries into freezer bag and place into freezer.
  • Remove frozen fruit from freezer and place into bowl of food processer.
  • Add sugar to bowl of food processer.

750g summer berries (we used strawberries)
140g caster sugar
juice of 1 lemon

Steps:

  • Hull and chop fruit, then tip them into a bowl with the sugar and lemon juice. Bring a kettle of hot water to the boil and pour over 300ml boiling water. Leave everything to macerate until cool, then blitz in a food processor until smooth. Push the purée through a sieve.
  • Clear a shelf in the freezer and place a sided metal tray in to chill. Pour the mix into the tray and cover with cling film. Freeze the liquid until frozen around the edges and slushy in the middle. Use a fork to break up the ice into smaller crystals. Return the tray to the freezer. Repeat the breaking up process every half hour (at least three times) until it's completely frozen and the texture of snow. For a quicker method: freeze the mixture in an ice tray, then blitz the cubes in a food processor just before serving. The texture will be slightly slushier, but just as delicious.

The food.com site does not recognize the ingredient Trader Joe's 'Orange MUSCAT Champagne Vinegar' which was used in this recipe (I also doubled the amount called for, too from the original recipe). 'Orange Muscat Champagne Vinegar' is one of my staple items I purchase at Trader Joe's. Also, if you are using the vinegar, for my first batch I added two teaspoons of freshly grated orange zest and it was stirred into the sorbet with the syrup. Don't have a Trader Joe's in your neighborhood? Substitute 2 tablespoons champagne, muscat/muscat vinegar, or white wine plus 2 tablespoons fresh orange juice.

1 quart fresh strawberries, rinsed and dried

Steps:

  • Combine vinegar (or orange juice) and sugar in a small saucepan.
  • Bring mixture to a boil and cook, stirring, until the sugar dissolves. Remove from heat and cool.
  • Rinse berries in a colander and lay out on a lint-free towel or paper towel to dry.
  • Cap the leaves, quarter the berries and then puree them in a food processor. Stir in the syrup and orange zest.
  • Freeze in your ice cream maker according to the manual directions. *Note: the original directions did not indicate to chill the mixture first in the refrigerator then process in the ice cream maker. I did not chill the strawberry mixture and churned it for about 40 minutes. Next time I prepare the sorbet, I will chill first and come back here to update.
  • Finally, I transferred the sorbet to a freezer container and froze for about 4 hours.
  • To serve: Garnish each serving with mint (or other fresh herb of choice) or a fresh whole berry.
  • Note: Prep time can vary.
