This recipe makes ordinary orange marmalade into something really special! Sometimes I make it using strawberries that I've frozen without adding sugar or water. I just thaw them in the refrigerator overnight. &mdashlMrs. Craig Presbrey, Pascoag, Rhode Island

Yield about 10 half-pints.

Number Of Ingredients 7

2 medium oranges
2 medium lemons
1/2 cup water
1/8 teaspoon baking soda
1 quart ripe strawberries, crushed
7 cups sugar
1 pouch liquid fruit pectin (half of a 6-ounce package)

Steps:

  • Peel outer layer of oranges and lemons; set aside. Remove the white membrane from fruit and discard. Set the fruit aside. Chop peels; place in a large saucepan. Add water and baking soda; cover and bring to a boil. Simmer for 10 minutes. , Meanwhile, section oranges and lemons, reserving juice. Add fruit and juice to saucepan; cover and simmer for 20 minutes. Add strawberries. Measure fruit; return 4 cups to the saucepan. (If you have more than 4 cups, discard any extra; if less, add water to equal 4 cups.) Add sugar and mix well. Boil, uncovered, for 5 minutes. Stir in pectin. Continue to boil 1 minute, stirring constantly., Remove from heat; skim off foam. Carefully ladle into 10 hot half-pint jars or freezer containers, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

I can't resist all the fresh strawberries, although this recipe works great with blueberries too. It's real simple, just a few ingredients and you have fresh strawberry sauce. A simple sauce to drizzle over about a million things. One of my favorite things to do is to whip something up out of nothing.

1 lb fresh strawberries, cut into quarters
1/4 cup sugar or 1/4 cup sugar substitute
1/4 cup water
1/4 teaspoon vanilla
1 good squeeze fresh lemon

Steps:

  • Stir all ingredients together in a medium sauce pan and bring to a boil over medium high heat. Reduce heat to medium and cook for another 15 minutes until thickened. Let cool and refrigerate.
  • A million uses:.
  • Spoon over ice cream, pancakes or waffles and add a dollop of whipped cream.
  • Drizzle over cheesecake or angle food cake.
  • How about a trifle with layers of pound cake and whipped cream.
  • Make a smoothie.
  • Of course -- strawberry shortcake.

I make it up alot in the summer when the mint from my garden is plentyful. This recipe could be used on pork tenderloin quite successfully. This is 7 points per serving

2 tablespoons soy sauce
2 tablespoons brown sugar (or Splenda)
1 tablespoon lime juice
1 tablespoon garlic and red chile paste
1 tablespoon ginger, minced
1 tablespoon of fresh mint, chopped
1 tablespoon garlic, minced
4 skinless chicken breasts, trimmed of fat (or 2 pork tenderloin)

Steps:

  • Combine the ingredients in a zip lock bag. Add chicken and marinate for up to 3 days.
  • Note: The recipe originally was double the amount. You could make up the full recipe and add half to the chicken and half to a pork tenderloin and freeze for a later date.

1/2 cup orange marmalade
1 tablespoon fresh lemon juice
2 teaspoons balsamic vinegar

  • Stir strawberries and sugar in a large bowl.
  • Let stand until berries release juices, about 5 minutes.
  • Stir in marmalade, lemon juice and vinegar.
  • Chill at least 30 minutes and up to 4 hours.

Number Of Ingredients 3

2 cups sugar
1 large lemon, zested and juiced
1 1/2 pints fresh strawberries, hulled and halved

Steps:

  • Combine the sugar, lemon zest, and lemon juice in a small saucepan and cook over very low heat for 10 minutes, until the sugar is dissolved. Add the strawberries and continue to cook over very low heat for 20 minutes, until the strawberries release some of their juices and the mixture boils slowly. Cook until a small amount of the juice gels on a very cold plate. (I keep one in the freezer.) Pour carefully into 2 pint canning jars and either seal or keep refrigerated. Use immediately, or follow proper canning guidelines below.
  • Sterilizing Tips:
  • Jars should be made from glass and free of any chips or cracks. Preserving or canning jars are topped with a glass, plastic, or metal lid, which has a rubber seal. Two piece lids are best for canning, as they vacuum seal when processed.
  • To sterilize jars, before filling with jams, pickles, or preserves, wash jars and lids with hot, soapy water. Rinse well and arrange jars and lids open sides up, without touching, on a tray. Leave in a preheated 175 degree F oven for 25 minutes. Or, boil the jars and lids in a large saucepan, covered with water, for 15 minutes.
  • Use tongs when handling the hot sterilized jars, to move them from either boiling water or the oven. Be sure the tongs are sterilized too, by dipping the ends in boiling water for a few minutes.
  • As a rule, hot preserves go into hot jars and cold preserves go into cold jars. All items used in the process of making jams, jellies, and preserves must be clean. This includes any towels used, and especially your hands.
  • After the jars are sterilized, you can preserve the food. It is important to follow any canning and processing instructions included in the recipe and refer to USDA guidelines about the sterilization of canned products.

3 cups fat free vanilla ice cream

Steps:

  • Combine coffee, milk, and sugar in a blender and mix on medium speed for 15 seconds to dissolve the sugar.
  • Add ice cream, and chocolate syrup, then blend on high speed until smooth and creamy.
  • Stop blender and stir mixture with a spoon if necessary to help blend ingredients.
  • Pour into two 16 oz. glasses.
  • Note: I use fat free milk, and Dreyer's Fat Free Ice Cream. It tastes rich, creamy, and sweet; just like premium vanilla ice cream.

1 egg white
1 teaspoon vanilla

1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Combine apple sauce and sugar until well mixed.
  • Add egg and vanilla and continue to mix.
  • Combine flour, baking powder, and salt in another bowl. Add gradually to egg mixture.
  • Take roughly a tablespoon size portion of dough and place it onto a lighty greased cookie sheet. Works best if pressed flat (the dough when making the cookie).
  • Bake in oven for 10 minutes.
  • Take out of oven and remove from cookie sheet.
  • To make the frosting, in an electric mixer preferably, combine powdered sugar and butter and vanilla. Add water according to consistency of frosting.

4 chicken legs
8 large basil leaves
12 -15 garlic cloves
1 lemon, halved
4 baking potatoes
2 teaspoons olive oil
1/4 teaspoon ground black pepper
14 teaspoons paprika

Steps:

  • Remove all visible fat from the chicken and trim excess skin, leaving just enough to cover the pieces. Carefully lift the skin on each piece and slice 2 basil leaves under it. Replace the skin.
  • Separate the garlic bulb into individual cloves. Trim the hard end off each clove and remove the peel. Trim any bruises and discard any cloves that are soft or dark. There should be about 12 to 15 whole cloves.
  • Place the garlic in a 9"x13" baking dish. Top with the chicken.
  • Squeeze the juice from half of the lemon over the chicken. Remove the seeds from the remaining lemon half and cut into 4 pieces. Add these to the baking dish.
  • Cut the potatoes lengthwise into spears. Add to the dish. Drizzle with chicken and potatoes with the oil. Sprinkle with the pepper and paprika.
  • Bake at 350 degrees for 45 to 50 minutes, or until the chicken is tender. Remove the skin before eating.
