I just saw this on Boy Meets Grill with Bobby Flay and it is so good and easy I had to post! A great ending to a Moroccan meal! This is also a Caribbean and Southern recipe.

OVEN-ROASTED SWEET POTATO SLICES WITH ORANGE AND FRESH THYME

- Preheat the oven to 400 degrees F. Select a large nonstick sheet pan at least 14 by 10 inches. Combine the sweet potato slices with the garlic and the oil in a large bowl; toss to coat with the oil. Bake, turning the potatoes once or twice as they begin to brown, about 40 minutes. Remove from the oven. Meanwhile, finely chop the parsley, thyme and orange zest together; sprinkle over the potatoes. Sprinkle with salt and pepper. Return to the oven and bake for 10 minutes longer, or until the potatoes are tender, turning them once. Serve hot.

- Thinly slice oranges into rounds.
- Arrange orange slices in shallow bowl.
- Combine honey, cinnamon stick, and orange flower water in heavy small saucepan.
- Stir over low heat until mixture comes to simmer, about 2 minutes.
- Pour hot syrup over oranges.
- Cool.
- (Can be prepared 1 day ahead. Cover and chill.) Sprinkle almonds over oranges.
- Serve cold or at room temperature, with a dollop of yoghurt or sour cream on the side, if desired.

- Slice oranges very thinly – aiming for just slightly thinner than 1/4″. Remove and discard all seeds, if applicable
- Use a vegetable peeler to peel all of the skin (rind?) off of the ginger, carefully slice it all into uniformly thin pieces. (I like to aim for between 1/8″ and 1/4″ thick).
- Transfer the ginger pieces to an airtight container, gently knocking them against each other (I’ll roll them in my hands) to dislodge any loose, excess sugar. Cover tightly, store at room temperature.
- Once you’ve transferred the ginger to the sugar pan, you will be left with a golden coloured, very thick syrup. You can add a little hot water to thin it out, if you like.
