APPLE CRUMBLE COOKIES

- Preheat the oven to 200ºC/400ºF/gas 6. Line two trays with greaseproof paper and rub with olive oil.
- Whiz the apple in a food processor until finely chopped, then add the flour, cubed butter, sugar and a pinch of sea salt. Blitz to fine crumbs for 1 minute, then remove 3 tablespoons of the mix and set aside.
- Pulse in the egg until combined, stopping to scrape down the sides, if needed.
- Divide into 24 pieces, roll into balls, then press down lightly into 4cm rounds, lining them up on the trays as you go.
- Sprinkle over the reserved mix, lightly pressing it into the cookies. Bake for 8 to 10 minutes, or until lightly golden.
- Leave to cool slightly, then transfer to a wire cooling rack. Yum!

- In a small bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Combine the egg, milk and molasses; stir into flour mixture just until moistened. Stir in apple. Turn onto a lightly floured surface; knead 8-10 times., Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on a baking sheet coated with cooking spray. Bake at 425° for 6-8 minutes or until golden brown. Serve warm.

- In bowl, stir together sugar, chopped nuts and cinnamon. Set aside. Stir together biscuit mix, cheese and applesauce. Make a well in center of cheese mixture and add apple juice all at once, stirring just until moistened. Form into a ball. Flatten dough out on a floured surface. Divide into 18 pieces and shape each into a ball. Roll in melted butter or margarine and then in sugar mixture. Arrange in a greased 9" round baking pan. - Preheat the oven to 375°F.
- Melt the butter, and brush on all sides of your round baking dish.
- In a bowl, mix together the brown sugar and cinnamon until blended.
- Dip each biscuit in the butter, and sprinkle all sides with the cinnamon sugar mixture and place in baking dish.
- Place the apple pie filling on top of the biscuits.
- Pour the remaining butter over all and sprinkle the remaining cinnamon-sugar on top.
- Bake for 30-35 minutes, until golden and puffy.
- I do not use the glaze but if you like a glaze on these, mix together the ingredients for the glaze and drizzle on top.
