Fresh Orange and Yogurt Tart image

The tangy taste of citrus is especially welcome in winter!

1/2 cup raw almonds
1/4 cup granulated sugar
Coarse salt
1 cup all-purpose flour, (spooned and leveled)
6 tablespoons (3/4 stick) unsalted butter
2 teaspoons powdered gelatin (from a 1/4-ounce packet)
1/2 cup half-and-half
1 1/2 cups plain Greek yogurt (2 percent)
1/4 cup packed light-brown sugar
3 medium navel oranges

Steps:

  • In a food processor, pulse almonds, granulated sugar, and 1/2 teaspoon salt until finely ground. Add flour; pulse to combine. Add butter and pulse until mixture is crumbly and holds together when squeezed. Press crumbs in bottom and up side of an 8-inch fluted tart pan with a removable bottom. Freeze 15 minutes. (To store, cover and freeze, up to 1 month.)
  • Preheat oven to 350 degrees. Place tart pan on a rimmed baking sheet and bake until crust is golden brown and set, 30 to 35 minutes. Let cool on a wire rack 10 minutes, then remove tart ring and let cool completely.
  • In a small bowl, sprinkle gelatin over 2 tablespoons cold water and let stand 5 minutes. In a small saucepan, warm half-and-half over medium. When it begins to steam, add gelatin mixture and stir until dissolved, about 1 minute. In a medium bowl, whisk together yogurt, brown sugar, and pinch of salt. Stir warm half-and-half mixture into yogurt mixture. Pour filling into cooled tart shell and refrigerate until set, 2 hours (or up to 1 day).
  • With a sharp paring knife, slice off ends of oranges. Following curve of fruit, cut away peel, removing as much white pith as possible. Slice oranges into 1/4-inch-thick rounds and remove any seeds. Just before serving, arrange orange slices on top of tart.

Orange filling
1 1/4 teaspoons unflavored gelatin
1 tablespoon water
1 cup sugar
2 tablespoons plus 2 teaspoons finely grated orange peel
2 teaspoons finely grated lemon peel
4 large eggs
3/4 cup fresh orange juice
3 tablespoons fresh lemon juice
1 cup plus 6 tablespoons (2 3/4 sticks) unsalted butter, cut into tablespoon-size pieces, room temperature
Crust
1 1/4 cups all purpose flour
1/2 cup powdered sugar
1/4 cup hazelnuts
1/4 teaspoon salt
9 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
1 large egg yolk
Candied blood orange slices

Steps:

  • For orange filling:
  • Sprinkle gelatin over 1 tablespoon water in small bowl. Let stand 10 minutes to soften. Combine sugar, 2 tablespoons orange peel, and lemon peel in medium metal bowl. Using fingertips, rub ingredients together until sugar is moistened. Add eggs; whisk until smooth. Whisk in both juices.
  • Place bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); whisk constantly until mixture thickens and thermometer inserted into mixture registers 180°F, about 5 minutes. Remove from heat. Add gelatin mixture and stir until dissolved. Strain orange mixture into blender; let cool until thermometer inserted into mixture registers 140°F, about 10 minutes.
  • With blender running, add room-temperature butter 2 pieces at a time and process until blended. Continue blending 3 minutes longer.
  • Transfer filling to bowl; mix in remaining 2 teaspoons orange peel. Cover and chill overnight.
  • For crust:
  • Butter 9-inch square tart pan with removable bottom. Finely grind flour, sugar, nuts, and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add egg yolk and blend in using on/off turns just until moist clumps form (do not allow dough to form ball). Press dough onto bottom and up sides of prepared pan (crust will be about 1/4 inch thick). Using thumb, press around sides to extend crust 1/4 inch above edge of pan. Chill 1 hour.
  • Preheat oven to 375°F. Bake crust until golden brown, about 20 minutes. Cool crust completely on rack. (Crust can be made 1 day ahead. Store airtight at room temperature.)
  • Stir orange filling to loosen. Spoon enough chilled orange filling into crust to fill completely. Chill tart at least 1 hour and up to 4 hours. Garnish with candied blood orange slices. Drizzle oranges with some of syrup. Serve cold.

All the tart components can be made in advance and assembled just before serving. Created by Ina Garten. From the April 200 issue of O, The Oprah Magazine. Select about 4-5 different fruits; choose tropical, citrus and berries, or just a nice melange. Haven't posted chill times nor have included the time allowed for making parts of the recipe, days in advance.

1 1/4 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
8 tablespoons very cold unsalted butter (1 stick)
3 -4 tablespoons ice water
3 extra-large egg yolks, at room temperature
6 tablespoons sugar
1 1/4 tablespoons cornstarch
1 cup milk
1 tablespoon unsalted butter
1/2 teaspoon pure vanilla extract
1 tablespoon heavy cream
1/2 teaspoon cognac or 1/2 teaspoon brandy
1/4-1/2 cup sliced bananas or 1/4-1/2 cup fresh plum, sliced
1/2 cup apricot jam
sliced orange, to garnish (optional)
sliced lime, to garnish (optional)
toasted almond, sliced, to garnish (optional)

Steps:

  • PASTRY:.
  • Combine flour, sugar and salt and place in freezer for 30 minutes.
  • Cut butter into 1/4" pieces.
  • Put flour mxiture in the bowl of a food processor fitted with a steel blade.
  • Add butter and pulse about 10 times until butter forms small bits. Add ice water and process until dough comes together. Place on a well-floured board and form into a disc.
  • Cover in plastic wrap and refrigerate for at least 30 to 45 minutes.
  • Preheat oven to 375ºF.
  • Remove dough from refrigerator and let sit 5 minutes.
  • Roll dough into 1/16" thick circle, large enough to hang slightly over the sides of a 10" tart pan with removable bottom.
  • Place dough in pan and cut off excess dough with a sharp knife or your thumb.
  • Line tart shell with aluminum foil, then fill with dried beans or rice.
  • Bake 10 minutes. Remove beans and foil; prick bottom of a shell with tines of fork to allow steam to eascape.
  • Bake another 20 minutes until browned. Cool to room temperature.
  • PASTRY CREAM:.
  • In the bowl of an electric mixer fitted with a paddle attachment(or using a hand held mixer), beat egg yolks and sugar on medium-speed about 3 minutes, until mixture is light yellow and falls back into bowl in a ribbon. On low speed, beat in cornstarch.
  • In a large saucepan, bring milk to a simmer. Slowly pour milk into egg mxiture, whisking steadily, then pour back into saucepan.
  • Cook over medium heat, stirring constantly with a whisk or a wooden spoon until mixture is thick, about 4 minutes.
  • Bring to a boil and cook then on low heat 2-3 more minutes. (Taste to be sure cornstach is cooked.).
  • Remove from heat; mix in butter, vanilla, cream and cognac. Pour through a strainer into a bowl.
  • Place plastic wrap directly onto custard(so it won't form a skin) and refrigerate until cold.
  • ASSEMBLY & GARNISHES:.
  • Place baked tart shell on serving plate and spread with pastry cream over bottom of shell.
  • Slice and group fruit to make casual arrangement. Place larger fruit first, then fill spaces with berries &/or grapes. Use colorful fruit, such as halved strawberries or a grouping of raspberries, near the center for focus and height.
  • (other fruit garnishes besides the ones listed above -- fresh orange, sliced or fresh lime, sliced or fresh apricot, sliced or fresh peach, sliced).
  • Place sprinkling of almonds over tart, and use oranges &/or limes to garnish.
  • GLAZE:.
  • In small saucepan(or microwave-safe bowl), melt jelly with 1 tablespoon water.
  • Brush glaze over fruit and serve as soon as possible to avoid soggy pastry.
  • *TIP: Don't be afraid to be creative, this is the perfect palette!

5 cups corn flakes
1 cup pecans
4 tablespoons unsalted butter, melted
6 tablespoons maple syrup
16 ounces plain yogurt
16 ounces vanilla yogurt
2 2/3 cups fresh fruit

Steps:

  • To make the tart shells:
  • Preheat oven to 350°F Place eight 4" round tart pans with removable bottoms on a baking sheet and set aside. Place the cornflakes and pecans in a food processor and process until combined, about 10 quick pulses. Transfer the cereal mixture to a large bowl, drizzle with the melted butter, and toss to combine. Stir in maple syrup. Evenly divide the cereal mixture among the tart pans and press along the bottoms and sides to form shells. Bake for 10 minutes. Transfer to a wire rack to cool.
  • To assemble the tarts:
  • Remove the shells from the molds and transfer each to a serving plate. Mix yogurts together and top each tart shell with 1/4 cup of yogurt and 1/3 cup fruit. Serve immediately.
