An excellent accompaniment to souvlaki or gyros. Tastes best if allowed to sit refrigerated for several hours. You can find Greek style yogurt for this recipe in Greek or Middle Eastern delicatessins, or just feel free to use plain yogurt.

2 English cucumbers
6 cloves garlic, peeled
salt
4 cups plain yogurt (preferably Greek Style)
2 tablespoons red wine vinegar
fresh ground black pepper
1 teaspoon dried mint (or may use dill weed)
4 tablespoons olive oil
1 cheesecloth

Steps:

  • Grate cucumbers and allow to drain in a sieve, weighted by a heavy plate, for 15 minutes.
  • Wrap grated cucumbers in cheesecloth to squeeze all remaining liquid out.
  • Set grated cucumbers in a mixing bowl.
  • Place garlic cloves in a mortar and sprinkle with a little salt.
  • Grind into a paste and add mixture to cucumbers.
  • Whisk together yogurt, vinegar, pepper, mint, and oil.
  • Add yogurt mixture to cucumbers and garlic and mix all together thoroughly.
  • Refrigerate until needed.

1 (32 ounce) container plain low-fat yogurt
½ English cucumber with peel, grated
1 clove garlic, pressed
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 teaspoons grated lemon zest
3 tablespoons chopped fresh dill
1 tablespoon salt, or to taste
1 tablespoon freshly ground black pepper, or to taste

Steps:

  • Stir together yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl. Add lemon zest, dill, salt, and pepper; whisk until smooth. Pour into a serving dish, cover tightly, and refrigerate 8 hours before serving.

Steps:

  • For creamy Tzatziki with perfect consistency we need to avoid any excess water. The best result is achieved by peeling and de-seeding the cucumber. Then either grate of finely slice (with a vegetable peeler) and hang the cucumber in a cloth or a tea towel to squeeze out all excess liquid.
  • Combine the yogurt, cucumber, lemon juice and garlic.
  • Add a dash of olive oil and some salt and freshly ground black pepper to taste.
  • Sprinkle with the paprika powder.
  • Cover and place in the refrigerator for at least 2 hours for the flavours to fully develop.
  • (Optional: just before serving roughly chop a bunch of fresh mint leaves and sprinkle on top.)

1 pint sour cream (or Greek-style super thick yoghurt)
1 English cucumber, peeled, grated on a box grater, salted lightly for 5 minutes and squeezed between the hands to remov (the long, thin, almost seedless kind)
3 garlic cloves, mashed to a paste
1/3 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon minced fresh dill (optional)
salt

Steps:

  • Just mix everything up together until it is all blended and the oil has emulsified into the yoghurt/sour cream. Taste for seasoning, and add salt if you think necessary. Put in a resealable container.
  • Allow to 'sit' in the refrigerator for at least 2-3 hours before using to allow the flavors to come out.
  • This wonderful meze (we do not think of it as a sauce here- it is a thick 'salata') is used to counterpoint rich, bbq'd meats (like souvlaki/shish kebab), but can be used in more diverse ways.
  • Place a small plate full on your dinner table for people to scoop up small amounts onto their bread (preferably crisp-baked pita).
  • Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top.
  • Use as a salad dressing.
  • A dip for crudites.
  • Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. This eliminates even more water.

Typically people think of this as a Greek food, but I learned to make it from a friend when I was an exchange student in Germany. My friend, Hossein, was from Tehran, Iran (Persia) and he liked to have tzatziki with every meal (it is a condiment served on the side). As far as I can tell, most of the countries on the eastern side of the Mediterranean Sea, and other middle eastern countries like to eat something similar to this with many of their meals. Tzatziki is a yogurt salad typically made with cucumbers, onions and garlic. At least, these are what I consider to be the essential ingredients. I have had some in restaurants that omitted the cucumbers. Eh. Not so good, in my opinion. One of the dinners I usually serve with tzatziki in my home, is grilled salmon with rice, tzatziki and diced tomatoes on the side. I don't really follow a recipe for this, but here is my approximate amount of ingredients. For yogurt, you can use full, low or non-fat but I don't like the texture of non-fat. I prefer Greek style, it's smooth, thick and creamy not like gelatin.

1 cup plain yogurt
1 cup cucumber, peeled, seeded, and finely diced (1/2 of a medium cucumber)
1/2 cup onion, finely diced
2 garlic cloves, minced
1 dash lemon juice (optional)
salt (you really need salt on plain yogurt...it helps it taste a lot better)
pepper
1/2 teaspoon dried dill, crumbled between your thumb and forefinger to sprinkle over the yogurt (crumbling it helps release a bit more of the flavor)
1 teaspoon of fresh mint, finely chopped (or 4 pinches of dried mint, crumbled between thumb and forefinger, sprinkled over the yogurt)

Steps:

  • Combine all ingredients and stir well.
  • Chill for at least a half hour before serving. Makes 4-5 very generous servings.
