1/4 cup sugar
4 teaspoons cornstarch
1/4 teaspoon salt
1 2/3 cups 1% low-fat milk
2 egg yolks, lightly beaten
3/4 teaspoon vanilla extract
3 cups berries, mixed fresh

Steps:

  • In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
  • Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat.
  • Gently stir in vanilla. Cool to room temperature without stirring. Transfer to a bowl; press plastic wrap onto surface of custard. Refrigerate for at least 1 hour.
  • Just before serving, spoon 1/4 cup of berries into each parfait glass; top with 2 tablespoons of custard. Repeat layers.

1 package (3.4 ounces) instant vanilla or French vanilla pudding mix
1 cup whipped topping
1 pint fresh raspberries

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in 1 cup whipped topping. Spoon a third of the pudding into six parfait glasses. , Set aside six raspberries for garnish; divide half of the remaining berries over pudding. Repeat layers. Top with remaining pudding and garnish with the reserved berries.

1-1/2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Mix juice and extract until blended. Drizzle over cake cubes in large bowl; toss to evenly coat.
  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in 1 cup COOL WHIP.
  • Place half the cake cubes in 12 dessert dishes; top with layers of half each of the berries and pudding mixture. Repeat layers.

These luscious, richly fragrant vanilla pudding custard parfaits are made with real vanilla bean, a hint of brandy, fresh seasonal fruits, lemony herbs from the garden, prepared mini shortcakes and fresh whipped cream--they're extraordinary! And, so simple to make (uses a box of vanilla pudding mix, not instant). If you are a vanilla lover as I am, then this is most definitely for you! Better make extra, as you'll be longing for more! :) These parfaits are best eaten while the pudding custard is still warm, but they're good the next day, too. Tip: I make the fruit salad in the morning or a day ahead, and make the vanilla pudding custard right before serving. Enjoy!!

3 1/2 cups whole milk
1 vanilla bean, split and scraped
1/2 teaspoon pure vanilla extract

Steps:

  • Make the fruit salad: Combine the fresh fruits in a bowl with the sugar, lemon juice, lemon verbena and lemon balm. Cover and refrigerate.
  • Make the Vanilla Pudding Custard, about 1 hour before serving: In a microwave safe 2-quart bowl, whisk together the pudding mix, milk, brandy, vanilla extract and scraped vanilla bean and seeds. Cook in the microwave on high heat for 6-8 minutes, whisking every two minutes, until thickened.
  • Make the Whipped Cream: Whip the cream until soft peaks form; add the vanilla extract and sugar. Whip until stiff peaks form.
  • Assemble the parfaits: Place a mini shortcake in the bottom of each individual dessert or parfait glass (I used mini trifle glasses). Ladle the warm vanilla pudding custard over the shortcakes. Spoon the fruit salad over, and top with whipped cream. Garnish tops of parfaits with fresh sprigs of lemon verbena, lemon balm, or fresh fruit.

2 tablespoons strawberry jam

Steps:

  • Prepare vanilla pudding according to package directions, except do not chill.
  • In a medium saucepan over medium-low heat, stir together strawberries, jam, and sugar until jam is melted and the mixture is heated through, about 4 minutes. Remove from heat.

My mother's recipe--eat on its own or pour over canned peaches or guavas or, my fave, bread pudding. If you are really grossed out by the possibility of flecks of egg white in your custard, you can either pass it through a fine-mesh sieve or substitute four yolks for the two whole eggs.

2 tablespoons cornstarch
1/3 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Have eggs ready in a bowl, and set aside where it will be within reach.
  • Using a whisk, combine milk, sugar and cornstarch in a medium saucepan over medium heat on stovetop. Allow milk to scald (heat to the point when tiny bubbles form around edges of pan). Whisk occasionally to prevent cornstarch from clumping on bottom edges of pan.
  • Remove milk mixture from heat, preferably to a burner that's turned off.
  • Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly.
  • Immediately return pan to heat and whisk gently until custard thickens, another two or three minutes. Do not allow to boil. (If you find that you have egg white strands in custard, feel free to pass it through a fine-mesh sieve into a different bowl now.)
  • Remove pan from heat and stir in vanilla.

200 g egg yolks
160 g sugar
500 ml milk
10 g vanilla

Steps:

  • Whip cream until soft peak, set aside and chill.
  • Whisk eggyolk and sugar in a bowl. Set aside.
  • In a saucepan, boil milk. Once boiling, pour some into egg mixture, while whisking constantly (pour gradually because you might cook the eggs) after all milk is poured,.
  • Bring back the mixture into the saucepan, cook until the mixture slightly thickened (or until it coats the back of the spoon).
  • Strain into another bowl, place over ice bath and stir.
  • Once mixture is cooled, fold in the whipped cream, vanilla.
  • Place in containers and freeze.
  • NOTE: i added chopped nougatine to flavor it a bit during the folding.

seedless grapes
2 cups skim milk
3 eggs
3 egg whites
1/4 cup sugar
2 tablespoons sugar
2 teaspoons vanilla extract
1 dash salt

Steps:

  • Scald milk in a large saucepan over medium heat (do not allow milk to boil), set aside.
  • Combine eggs, egg whites, and sugar in a medium bowl, beat with a wire whisk until blended.
  • Gradually stir about one-fourth of hot milk into egg mixture; add to remaining hot milk, stirring constantly.
  • Cook stirring constantly, over low heat until mixture thickens and coats a metal spoon, about 30 minutes.
  • Immediately pour sauce into a large bowl, stir with a wire whisk until cool.
  • Stir in vanilla and salt, cover and chill 2 hours.
  • Serve over fresh fruit.

  • In a small bowl, combine the egg yolks, sugar, flour, and salt. It will look like a thick paste but that’s okay.
  • Warm the milk in a small on the stove just until it begins to steam. Very, very slowly, whisk in the warm milk into the egg yolk paste mixture to be sure the egg yolks don’t scramble. It will begin to look thin and frothy, but this too is okay.
  • Turn the custard mixture back to the stove in the small saucepan on low to medium heat. Constantly stir the custard mixture as it begins to thicken. Once the custard begins to look pudding remove from heat and add vanilla extract. Pour into a bowl and cover with plastic wrap allowing the wrap to be placed directly on top of the custard to avoid the skin from developing. Chill in the refrigerator.
  • Using 8 oz. glasses, begin layering the parfaits with ladyfinger cookies, 2 heaping tablespoons of custard, 2 heaping tablespoons of fruit, and repeat layering. Chill parfaits until ready to serve.
