Categories     dessert

Time 20m

Yield 2 servings

Number Of Ingredients 10

3 cups red wine
1 cup sugar
1 cinnamon stick
2 whole cloves
2 to 3 whole peppercorns
1 or 2 strips lemon rind
2 large peaches, halved and pitted
1 pint vanilla bean ice cream
Whipped cream, in canister
Freshly grated nutmeg, to garnish

Steps:

  • Combine the wine, sugar, cinnamon stick, cloves, peppercorns, and lemon rind in a medium saucepan. Bring to a boil, stir to dissolve the sugar, and reduce heat to a bubble.
  • Bring the poaching liquid to a boil and cook on high heat until reduced to a syrupy texture. Add the peaches and poach the fruit, spooning the syrup over them occasionally, until you can pierce the peach easily with a knife, about 5 minutes.
  • Put the peach halves in 2 dessert bowls. Top with ice cream, whipped cream, and drizzle with the poaching syrup. Grate a little nutmeg over the top.

PEARS AND FIGS POACHED IN RED WINE

Pears and Figs Poached in Red Wine image

Elegant Bosc pears and plump gifs are stained deep crimson when poached in spiced red wine.

Provided by Martha Stewart

Number Of Ingredients 10

1 bottle dry red wine
2 cups water
3/4 cup sugar
1 cinnamon stick
20 peppercorns
1/4 cup honey
1 vanilla bean, split
1 lemon, halved
4 firm but ripe Bosc pears
4 fresh or dried figs

Steps:

  • Combine wine, water, sugar, cinnamon, peppercorns, honey, and vanilla bean in a large saucepan. Squeeze in lemon juice, using a strainer to catch seeds, and toss in one of the halves. Bring to a boil, lower heat, and simmer for 10 minutes.
  • Meanwhile, peel pears carefully, leaving stems intact. Place in hot poaching liquid and cover with a lid slightly smaller than the pot to keep pears submerged.
  • Turn heat down to a bare simmer and poach pears for 20 to 30 minutes, or until tender (if the pears are not ripe, it could take up to an hour). Turn pears halfway through cooking time. Let cool slightly, then transfer pears to a bowl. Simmer poaching liquid until reduced by half
  • Cut figs in half and add to liquid cut side down. Keep heat at a simmer, and cook for 2 to 3 minutes. (If using dried figs, poach until tender, 15 to 20 minutes.)
  • Carefully transfer figs cut side down to the bowl with the pears, and pour poaching liquid over all. Let cool and chill at least 4 hours, or overnight.
  • With a slotted spoon, remove fruit from liquid and place 1 pear and 2 fig halves on each plate. Reduce poaching liquid over medium heat until thick enough to coat a spoon. Serve hot or cold with the fruit. Accompany with a few cookies, whipped cream, or a sweet dessert cheese.

PEACHES IN RED WINE

Peaches in Red Wine image

One of my husband's family recipes, a French staple in the summer in peach season. Minimum of 6 hours refrigeration. No cooking at all!!

Provided by Kasha

Categories     Dessert

Time 6h15m

Yield 4 serving(s)

Number Of Ingredients 3

6 ripe peaches, peeled and sliced
400 ml red wine
3/4 cup sugar

Steps:

  • Peel the peaches--to do it easily, boil them for about 10 seconds, then peel off the skin.
  • Slice them.
  • Put the peeled, sliced peaches in a bowl, add about half a bottle of red wine to cover.
  • The type of wine isn't so important, but it has to be decent and drinkable.
  • I used a 3 dollar bottle of Cotes du Rhone yesterday.
  • Pour in the sugar and stir.
  • Must sit for 6 hours in the fridge, minimum.
  • Serve in pretty glasses or dishes.
  • If you feel you need something else to go with it, try some kind of crunchy cookie or macaroon.

FIGS POACHED IN WHITE WINE AND FRESH THYME

Figs Poached in White Wine and Fresh Thyme image

If you are lucky enough to have a fig tree (or a neighbor with a fig tree) you can have this wonderful dish for the cost of a modest bottle of white wine. If you have neither, the splurge may well be worth it. Non-vegans can top their figs with crème fraiche or whipped cream. Any excess poaching liquid should be saved--it's lovely over almost anything. Cooking time includes half an hour for chilling. From Kitchen Herbs by Sal Gilbertie

Provided by Chef Kate

Categories     Dessert

Time 1h

Yield 8 serving(s)

Number Of Ingredients 8

1/2 cup honey
750 ml dry white wine
1 lemon, peel of, cut in one continuous spiral if possible
2 tablespoons lemon juice, freshly squeezed
6 sprigs fresh thyme
2 bay leaves
4 white peppercorns
2 1/2 lbs figs, fresh

Steps:

  • In a large, non-aluminum saucepan, combine honey and wine. Bring to a boil. Lower heat and cook, stirring constantly, until honey is completely dissolved.
  • Add lemon peel, lemon juice, thyme, bay leaves, and peppercorns.
  • Place figs in wine syrup and poach over low heat, uncovered, for four minutes, turning figs every minute.
  • Remove figs with a slotted spoon and place in a ceramic bowl.
  • Reduce poaching liquid to about 1-1/2 cups. Spoon over figs and chill.
  • Serve figs with some of the poaching liquid in individual bowls.

Estimated Reading Time 7 mins
  • Fig and Rosemary Focaccia with Pecorino. Chef Marco Canora makes this focaccia with freshly milled, small-batch whole-wheat flour. The grain's mild nuttiness marries beautifully with plump dried figs, and Pecorino Romano provides a great salty contrast to the fruit's sweetness.
  • Gorgonzola, Fig, and Pancetta Pizza. Since this pizza has a lot going on — from creamy cheese to sweet figs — pair it with a refreshing lager, like Tasmania's James Boag's.
  • Chicken with Port and Figs. Dried figs are poached in port to make a luscious Portuguese-inspired sauce. Ruby port provides the best color, but tawny will also taste good.
  • Raspberry and Fig Cake. "I snagged this dessert from my Scandinavian grandmother," says chef Mehmet Gürs. "She used a wood-burning oven, a cast-iron skillet, and fresh island berries."
  • Fig Jam. You can whip up this delicious jam in under an hour with just three ingredients. For a jam with a bit more complexity, try the variation that calls for white port and a sprig of fresh rosemary.
  • Figgy Orange Bitters. Fragrant fig-orange bitters are an elegant way to elevate your fall cocktails. The bark, roots, and other more esoteric ingredients used to make bitters can be found at herbal apothecaries.
  • Honeyed Fig Crostatas. Forget the figgy pudding; for your holiday bash this year, make these party-perfect fig crostatas. Your guests will surely think the world a merry and bright place.
  • Fig and Prosciutto Flatbreads. This flatbread is topped with sticky-sweet fig jam, pungent Gorgonzola cheese, and salty prosciutto. A shortcut to making it: Use store-bought pizza dough instead of homemade.
  • Fig and Caramel Nut Tart. Rich, barely bitter caramel, deeply toasted nuts, and chewy figs combine in a buttery crust for a dessert designed for pairing with Madeira.
  • Grilled Wagyu Rib Eye with Roasted Fig Miso. Chefs Niki Nakayama and Carole Iida-Nakayama give tender, marbled grilled Wagyu a hit of savory, lightly sweet flavor with roasted fig miso sauce.
