This Green Chile Corn Casserole is made with whole kernel corn, creamed corn and a box of corn muffin mix. It's one of the easiest recipes you'll make this holiday season!

1 8.5-ounce box Jiffy Corn Muffin mix
1 15-ounce can whole kernel corn, (drained)
1 15-ounce can creamed corn
1 cup nonfat plain Greek yogurt
1 stick unsalted butter, (melted)
1 4-ounce can mild diced green chiles
2 large eggs
1 poblano pepper (diced)

Steps:

  • Preheat the oven to 350°F. Spray a 9x13 rectangular baking dish with cooking spray or grease with a little cooking oil.
  • In a large bowl, whisk together all of the ingredients and pour into the prepared baking dish.
  • Cook for 65 minutes or until lightly browned on top.
  • Garnish with fresh chives and corn kernels, if desired.

6 cups fresh or frozen corn (about 30 ounces), thawed
1 package (8 ounces) cream cheese, cubed
1 jar (4 ounces) diced pimientos, drained
1 can (4 ounces) chopped green chiles
1/2 cup vegetable broth
1/4 cup butter, cubed
1/4 cup pickled jalapeno slices, coarsely chopped
1 tablespoon sugar
1/8 teaspoon crushed red pepper flakes

Steps:

  • In a 3- or 4-qt. slow cooker, combine all ingredients. Cook, covered, on low 2-1/2 to 3 hours or until heated through. Stir just before serving.

We live very close to the Mexican border, so recipes featuring corn and green chilies are popular here. This dish has always been a hit whenever I've taken it to a potluck dinner.

2 packages (8-1/2 ounces each) cornbread/muffin mix
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-3/4 ounces) cream-style corn
1 can (4 ounces) chopped green chilies, drained
1 cup shredded Monterey Jack cheese

Steps:

  • Prepare cornbread mixes according to package directions. Pour half of the batter into a greased 11x7-in. baking dish. Combine corn and creamed corn; spread over batter. Top with chilies and cheese. Carefully spread with remaining cornbread batter. , Bake, uncovered, at 375° for 25-30 minutes or until a toothpick comes out clean. Serve warm.

This is a cross between tamales and rellenos. Low in fat and baked not fried and no lard. This is an original recipe I have developed in my kitchen. My husband is my Guinna pig. He pronounced this one outstanding. It's easy to prepare can be ready to eat in 1 hour.

3 ears fresh corn
3/4 cup cornmeal
3/4 teaspoon salt
1 1/2 tablespoons sugar
1 1/4 teaspoons baking powder
1/2 cup chicken broth
2 tablespoons oil, divided
8 ounces monterey jack cheese
2 (4 ounce) cans whole green chilies

Steps:

  • Preheat oven 350* Spray oil a 8"x8"x2" pan. Cut corn off the cob. Combine; corn, cornmeal, sugar, salt, baking powder, 1 T oil, in food processor. Process until well combined, add enough chicken broth to make a spreadable paste>>>not too soupy, it should hold it's shape and spread easily. Spread 1/2 in prepared pan.
  • Cut cheese into 1/2" sticks. Stuff each chili with a stick of cheese. Lay stuffed chilies side by side on the corn masa. Spread remaining corn masa over the chilies. Drizzle with 1T oil, cover and bake 30 to 40 minutes. In the last 10 minutes uncover and if you wish sprinkle with additional cheese.

2 eggs
1 cup sour cream
1 (14.75 ounce) can cream-style corn
1 cup corn kernels, fresh or frozen (thawed)
1 (4 ounce) can diced green chiles, drained
1 cup shredded Mexican blend cheese
¼ teaspoon salt
1 (8.5 ounce) box Jiffy Corn Muffin Mix

Steps:

  • Preheat oven to 375°F. Grease a 1 ½ quart baking dish.
  • In a large bowl, whisk together the melted butter, eggs, and sour cream. Stir in the cream-style corn, corn kernels, green chiles and cheese. Mix to combine. Add the salt and corn muffin mix. Stir until well combined.
  • Pour the mixture into the prepared baking dish and use a spatula to smooth the top. Bake for 40-55 minutes or until golden brown and the center is set.

5 small corn tortillas
1 1/2 cups finely shredded colby-monterey jack cheese, blend
1/2 lb smoked cooked chorizo sausage, coarsely chopped
1 (4 1/2 ounce) can chopped green chilies
6 eggs
1/2 cup milk
1/2 teaspoon dried oregano
1/8 teaspoon ground red pepper
salsa

Steps:

  • Spray 8 inch square baking dish with non-stick cooking spray.
  • Place 4 tortillas in bottom of dish, overlapping as necessary, about 1/2 to 1 inch up sides of dish. Cut the last tortilla in half, and then into strips.
  • Sprinkle 1/2 cup of the cheese over tortillas in dish. Top with chorizo, chiles and 1/2 cup cheese.
  • Arrange tortilla strips over cheese.
  • In medium bowl, combine eggs, milk, oregano and red pepper; beat well. Pour over mixture in baking dish.
  • Sprinkle with remaining cheese; press lightly into egg mixture.
  • Cover with foil and refrigerate 8 hours or overnight.
  • Heat oven to 350. Bake covered casserole 30 minutes.
  • Uncover, bake an additional 15 to 20 minutes or until knife inserted in center comes out clean.
  • Let stand 5 minutes before serving. Serve with salsa.

This casserole is even better the next day, that is if it even makes it overnight! ---you may omit the jalapeno pepper if desired, we like onions so I always use two and lots of fresh garlic, you can increase the green chiles to whatever amount you desire, and use as much shredded cheese and cooked chicken as desired, the amounts listed are only a guideline, this also works well with cooked turkey, prep time does not include cooking the chicken --- this is *very* good!

2 -3 tablespoons butter
1 large onion, chopped
2 -3 tablespoons fresh minced garlic (or to taste)
1 jalapeno pepper, seeded and finely chopped (optional)
1 1/3 cups chicken broth
1 1/4 cups canned green chilies, drained (can use more!)
1 -2 teaspoon cumin
2 (10 ounce) cans cream of chicken soup, undiluted
salt and pepper
24 corn tortillas (you might use a couple less than 24, or use as many as needed)
4 cups cooked chicken (or use cooked turkey)
2 cups cheddar cheese (or to taste) or 2 cups monterey jack and cheddar cheese blend, shredded and divided (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish.
  • In a medium heavy pot or saucepan, heat 2-3 tablespoons butter over medium heat; add in chopped onion, garlic and jalapeno pepper, saute for about 3-4 minutes.
  • Add in the chicken broth, green chiles, cumin and chicken soup, season with salt and pepper; bring to a boil and simmer for about 3 minutes or until heated through and combined; remove from heat.
  • Spread about 1 cup of the soup mixture into the bottom of the prepared baking dish.
  • Arrange 5-6 tortillas over the soup mixture, then top with about 1 cup chicken, then about 1/2 cup shredded cheese (or to taste).
  • Repeat the layers (ENDING with the cheese).
  • Spread the remaining soup mixture over the cheese.
  • Bake uncovered for about 25 minutes or until hot and bubbly.

1/2 cup butter, melted
2 eggs, beaten
1/2 cup yellow cornmeal
1 1/2 teaspoons salt
1 cup sour cream
1 cup monterey jack cheese, grated
4 ounces green chilies, peeled

Steps:

  • Combine the first seven ingredients.
  • Rinse seeds from chilis, chop the chilis and add to mixture.
  • Pour into a greased casserole pan.
  • Bake at 350 degrees for 50 minutes (or until casserole is firm and has a golden brown color).

  • NOTE: I drained one can of corn and did not drain the other can.
