Fresh Coriander Chutney image

This is the perfect accompaniment for Marinated Chicken Kebabs with Whole Spices or Beef Curry Dopiaza.

1 oz (25 g) fresh coriander leaves
2 tablespoons lime juice
1 fresh green chilli, halved and deseeded
1 clove garlic, peeled
1 level tablespoon natural yoghurt
½ level teaspoon golden caster sugar
salt and freshly milled black pepper

Steps:

  • To make the chutney, simply whiz everything together in a blender, then pour into a bowl and leave aside for 2-3 hours so the flavours develop.

1/2 teaspoon whole cumin seeds
Kosher salt and freshly ground black pepper
3 cups cilantro, coarsely chopped
1/2 to 1 fresh hot green chile, such as bird's-eye, Indian long, or serrano, coarsely chopped
1 1/2 tablespoons fresh lemon juice
Freshly ground pepper

Steps:

  • In a small skillet over medium-high heat, toast cumin seeds until fragrant, 2 to 3 minutes. Let cool completely, then grind in a spice grinder.
  • Place ground cumin, 1/2 teaspoon salt, and remaining ingredients in the jar of a blender; season with pepper. Blend, stopping to push mixture down sides several times with a rubber spatula, until a paste forms. Transfer paste to a small glass or other nonmetallic bowl. Serve immediately, or store in an airtight container in refrigerator up to 2 days.

Coriander chutney is a staple in Indian cuisine. Gluten-free and vegan, this quick and easy cilantro chutney pairs perfectly as a dipping sauce with Indian snacks or any snack like veg sandwiches, fritters, patties, burgers, fries.

1 cup chopped coriander leaves ((cilantro), tightly packed - 50 grams)
2 teaspoons chopped green chillies (or 2 to 3 green chillies or as needed)
1 chopped ginger (or 1 inch ginger)
½ teaspoon roasted cumin powder (or ground cumin - optional)
1 teaspoon lemon juice (or as required)
2 to 3 pinches black salt (- optional)
salt (as required - pink salt, table salt or sea salt)
¼ teaspoon chaat masala (- optional)
1 to 2 tablespoons water

Steps:

  • In a blender or chutney grinder, add the chopped coriander leaves, chopped ginger and green chillies.
  • Note that 2 teaspoons makes for a spicy green chutney. If you or any of your family member cannot tolerate spicy food, add ½ to 1 teaspoon of chopped green chillies.
  • Add lemon juice, roasted cumin powder or ground cumin, black salt and pink salt, table salt or sea salt as required. You can add chaat masala at this step if you have it.
  • Add water and blend or grind all the ingredients until smooth. Taste the chutney and add more salt or lemon juice if needed.
  • Store the cilantro chutney in a covered bowl or container in the refrigerator.
  • Use the chutney whenever required. It goes well with variety of Indian snacks like pakoras, sandwiches, samosa, burger, idli, dosa, dhokla, dabeli, bhel puri, sev puri and other chaat recipes.

8 cups firmly packed fresh coriander sprigs, washed well and spun dry
8 scallion greens, chopped coarse (about 1 cup)
2 2/3 cups sweetened flaked coconut (about 1 package), toasted lightly and cooled
4 fresh jalapeño chilies, seeded and chopped (wear rubber gloves)
6 tablespoons white-wine vinegar
1/4 cup grated peeled fresh gingerroot
1/2 cup vegetable oil

Steps:

  • In a food processor coarsely puree chutney ingredients in 2 batches. Chutney may be made 2 days ahead and chilled, covered. Bring chutney to cool room temperature before serving.

1 cup fresh coriander leaves, cleaned, washed and chopped
1 cup fresh mint leaves, cleaned, washed and chopped
2 -3 green chilies, washed, stems removed, ends trimmed and chopped
black salt, to taste
1 teaspoon sugar
1 teaspoon fresh lemon juice

Steps:

  • Put the corriander and mint leaves alongwith the green chillies and a little water in your mixer and process until you have a smooth paste.
  • Remove from mixer into a serving bowl.
  • Add salt and sugar.
  • Stir in lemon juice.
  • Serve alongside cutlets, kebabs, etc.
  • or as a sandwich spread.
  • NOTE: As a variation, add plain low-fat yogurt to the chutney and mix well (1 cup yogurt for 2 tbsps. of chutney).

3 green chilies, roughly chopped
1 garlic clove, roughly chopped
1/2 teaspoon salt
1 teaspoon lemon juice
2 teaspoons tamarind juice
2 teaspoons coconut cream
2 -3 tablespoons natural yoghurt

Steps:

  • Place all the ingredients in a blender and blend until the mixture become a paste. Add 4-5 tablespoons of cold water to ease blending. Add the yoghurt and mix well blended.
  • Adjust seasoning as per taste.
  • This chutney can be stored in an airtight, non-metallic container for up to four days in the refrigerator.
