Fresh Citrus Wine Cooler Food

CITRUS COOLER

Steps:

• Stir 1 cup water and sugar in small saucepan over medium-low heat until sugar dissolves. Bring to boil. transfer syrup to pitcher and chill until cold. Add orange juice, grapefruit juice, lime juice, and lemon juice to pitcher and stir to blend. (Can be prepared 1 day ahead. Keep chilled.) Fill 4 glasses with ice. Pour citrus cooler over and serve.

CITRUS RASPBERRY COOLER

Steps:

• In a really large heatproof glass pitcher, pour the boiling water over tea bags. Let it steep about 5 minutes. Remove and discard the tea bags. Stir in sugar until completely dissolved. Stir in the cold water, frozen orange juice concentrate, and lemon juice. Chill until serving time.
• To serve, pour the club soda down the sides of the pitcher. Break up the Raspberry Ice (if using) and add to the pitcher or serving glasses.
• Makes 14 servings.
• Raspberry Ice: Add water to an ice tray and fill half full. Arrange fresh raspberries and strips of lemon peel in each cubicle and freeze until firm. Add more water until full and freeze until firm.

MINT AND CITRUS SUMMER COOLER

Steps:

• Mix orange juice and 1/2 cup lemon juice in a tall pitcher. Add half of mint and bruise with the back of a spoon against side of the pitcher.
• Taste, adding more lemon juice, if desired. Mix in lemon, lime and orange slices.(can be prepared 4 hours ahead at this point and refrigerate).
• Add ice to the pitcher and mix. Pour into glasses. Garanish with remaining fruit.

CITRUS COOLER

Steps:

• Combine first 5 ingredients; mix well.
• Place in the refrigerator to chill. Just before serving, add sparkling water and stir.
