This quick fresh tomato salsa will always be best when tomatoes are in season. But you can pump up the flavor with a little lime juice if the flavor of your tomatoes is a little dull. Juicy tomatoes will yield a more watery salsa than pulpy roma tomatoes.

Number Of Ingredients 7

1/4 small white or red onion, minced
1 teaspoon red wine vinegar
1 pound fresh, ripe tomatoes, finely chopped
1 to 3 jalapeño or serrano chiles, to taste, minced (and seeded, if you would like a milder salsa)
4 tablespoons chopped fresh cilantro, more to taste
1 to 3 teaspoons fresh lime juice (optional)
Salt to taste

Steps:

  • Place minced onion in a bowl and cover with cold water. Add vinegar and let sit for 5 minutes or longer. Drain and rinse with cold water.
  • In a medium bowl, combine remaining ingredients and stir in onions. (If your tomatoes are full of flavor, you won't need lime juice.) Ideally, let stand at room temperature for 15 to 30 minutes before eating so that flavors will blend and ripen.

1 Granny Smith apple, finely chopped
1 red apple, finely chopped
1/4 cup finely chopped sweet onions
1/4 cup fresh cilantro, finely chopped
2 Tbsp. fresh lime juice
2 tsp. finely chopped seeded jalapeño peppers
12 whole wheat hot dog buns

Steps:

  • Heat grill to medium heat.
  • Grill franks 5 to 6 min. or until heated through, turning occasionally.
  • Meanwhile, combine all remaining ingredients except buns.
  • Place franks in buns; top with apple mixture.

2 pounds ripe plum tomatoes (or 1 28-ounce can tomatoes)
3 tablespoons vegetable oil
6 to 8 dried chiles de árbol
1 small onion, sliced
1 garlic clove
6 cloves
1 or 2 pieces Mexican canela, or 1/4 teaspoon each ground cinnamon and allspice
Salt

Steps:

  • To make salsa: If using fresh tomatoes, place in a pot of simmering water and let cook until soft, about 15 minutes. Drain, remove stem ends, and purée with a blender.
  • In a skillet, heat oil until shimmering. Add chilies, onion, garlic, cloves and canela (or spices), sprinkle with salt and cook over medium-low heat, stirring, until softened and golden, about 8 minutes. Add tomato purée or canned tomatoes and simmer, stirring often, until thickened and slightly sweet, about 15 minutes. Taste for salt. Purée with a blender until smooth.

2 limes, juice of
1 fresh jalapeno
1 fresh anaheim chili
1/2 medium onion, minced
1/4 cup chopped cilantro

  • Wash and cut the apples and remove the cores, leaving the skin intact.
  • Cut the apples into 1/4" cubes.

1/4 cup lime juice (from about 2 limes)
2 tart apples, peeled and cored
1 small onion, finely diced
A handful of cilantro, roughly chopped
1 red chili or jalapeño pepper, seeded and minced, seeds reserved
1 poblano pepper, seeded and minced
2 tablespoons minced ginger
1 tablespoon sugar or apple-cider syrup (see note)
Salt
1/2 cup chopped walnuts, toasted.

Steps:

  • Pour the lime juice into a medium bowl. Finely dice the apples and toss with the onion in the juice. Add the cilantro, peppers, ginger and sugar and toss until well combined. Season with salt to taste. For more heat, add some of the reserved jalapeño seeds. Just before serving, add the walnuts.

5 tomatoes
5 tomatillos, husks removed
2 or 3 jalapenos
1/2 small onion
1 clove garlic
1/2 cup fresh cilantro, chopped
2 scallions, finely chopped
1/2 teaspoon sugar
2 teaspoons lime juice, or to taste
Salt to taste

Steps:

  • Fill a kettle half full of water and bring to a boil. Add the tomatoes, tomatillos and jalapenos and boil 10 minutes. Drain the vegetables, reserving 1 cup of the cooking water. Peel the skin off the tomatoes and trim jalapeno stems.
  • Transfer the tomatoes, tomatillos and jalapenos to a blender or food processor and add the onion and garlic. Pulse until the vegetables are coarsely chopped. Pulse in 1/4 cup cilantro. Add some of the reserved water if the mixture is too thick.
  • Transfer the salsa to a bowl and stir in the remaining cilantro, scallions, sugar and lime juice and season to taste with salt.
