1 ½ cups vegetable oil
2 cups white sugar
3 eggs, beaten
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 ½ cups apples - peeled, cored and diced
1 cup chopped walnuts
1 cup raisins
1 (16 ounce) container cream cheese frosting
¼ cup finely chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease one 10 inch tube pan.
  • Beat together the oil, eggs, vanilla and sugar.
  • Sift together the flour, baking soda, salt, cinnamon and nutmeg. Add to egg mixture; stir in apples, nuts and raisins.
  • Pour into prepared pan and bake at 325 degrees F (165 degrees C) for 1 1/2 hrs or until a cake tester inserted in the center comes out clean. Cool and frost with cream cheese icing. Sprinkle top with 1/4 cup fine chopped nuts.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and chopped pecans.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. Add apple butter, vanilla, and wheat germ or bran cereal. Add sifted dry ingredients alternately with sour cream; mix well after each addition.
  • Pour half the batter into the prepared pan; sprinkle with half of the topping. Pour remaining batter into pan and top with the rest of the topping.

3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour, sifted
1 teaspoon salt
1 teaspoon baking soda
1 cup pecans or 1 cup walnuts, chopped
2 teaspoons vanilla
4 Granny Smith apples, about 3 1/2 apples (1 shredded, the others chopped fine)
1 cup light brown sugar
1/2 cup butter
1/2 cup milk

Steps:

  • Cream together the eggs, oil and sugar.
  • In a separate bowl, sift the flour, salt and baking soda.
  • Combine all.
  • Now add your nuts, vanilla and apples.
  • Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
  • Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
  • In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
  • When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

3 cups plus 2 tablespoons all-purpose flour
2 cups granulated sugar
1 1/2 cups vegetable oil
3 large eggs
1/2 cup orange juice
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
2 to 2 1/2 cups peeled, cored and finely diced sweet apples
1 cup walnuts, finely chopped

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Mix together the softened butter with 2 tablespoons of the flour to make a paste. In a 10-inch Bundt pan, paint on the flour and butter paste with a pastry brush until the pan is well coated.
  • Using an electric mixer, beat the sugar, oil and eggs until smooth. Add the orange juice and vanilla extract and mix well. In another bowl, sift together the baking soda, cinnamon, salt and remaining 3 cups flour. Add the flour mixture to the sugar mixture and continue to beat well. Stir in the apples and walnuts.
  • Pour the batter into the pan and bake until a toothpick inserted in the cake comes out clean, about 1 hour 30 minutes. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn the cake out onto a cake plate.
  • For the glaze: Combine the sugar, butter, buttermilk and baking soda in a large saucepan and bring to a boil. Boil the mixture until it thickens slightly and begins to turn a light brown, 5 to 10 minutes. Remove from the heat.
  • Using a toothpick, punch 15 to 20 holes in the top of the cake and pour the glaze over the cake. Let the cake set and cool before serving. Store the cake in an airtight cake carrier in the refrigerator for up to 2 weeks.

4 apples (I use Red Delicious) (peeled and chopped)
Crisco and about 1/4 cup powdered sugar for greasing and dusting the pan

Steps:

  • Preheat oven to 300 F
  • Using a stand mixer, combine vegetable oil and sugar.
  • Add eggs one at a time and beat well.
  • In a separate bowl, mix pecans and 1/4 cup flour
  • In a separate large bowl, combine 2 3/4 cups flour, baking soda and salt and gradually add into the sugar mixture
  • Add floured pecans and vanilla
  • Fold in apples
  • Thoroughly grease a tube pan with crisco and "flour" the pan with powdered sugar. This creates an AMAZING crust, so don't skip this part!
  • Pour batter into greased pan and bake for 1 hr and 20 minutes
  • Test for doneness before removing from oven

Steps:

  • Preheat your oven to 350 degrees.
  • Prepare a springform pan with butter or cooking spray and place on a rimmed baking sheet. Set aside.
  • In a medium sized mixing bowl combine flour, cinnamon, baking soda, salt and nutmeg. Set aside.

Steps:

  • Place the rack in the center of your oven. Preheat the oven to 325 degrees F. Line a 9x9-inch or 8x8-inch square baking pan with parchment paper so that it overhangs two of the sides like handles. Lightly coat the parchment with nonstick spray. Set aside. Place the nuts in a single layer on an ungreased baking pan. Bake until toasted and fragrant, about 8 to 12 minutes. Do not walk away during the last few minutes (this is when nuts love to burn). The baking time will vary depending upon the moisture content of your apples. The center of the cake will still feel soft but should spring back just a little when touched. Check at the 35-minute mark. If your cake isn't done but the top is browning more quickly than you would like, loosely tent it with foil, then continue baking as directed. When it's done, place the pan on a wire rack and let cool completely before frosting.
  • To make the frosting: In a mixing bowl or a stand mixer fitted with the paddle attachment, beat the cream cheese, butter, and brown sugar at medium speed until creamy, about 1 to 2 minutes. Add the vanilla and salt and beat until blended. Reduce the mixer speed to low. Gradually add the powdered sugar, beating just until combined. Increase the mixer speed to high. 3 or 4 medium honeycrisp apples (chopped in 1/4 inch pieces)
2 medium apples (optional) (cut in wedges for decoration)
10 ounces cake flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground cloves
4 ounces unsalted butter (room temperature)
10 ounces granulated sugar
3 ounces vegetable oil
1 whole egg (room temperature)
1 teaspoon vanilla extract
8 ounces applesauce (unsweetened)
8 ounces browned butter (room temperature)
8 ounces unsalted butter (room temperature)
8 ounces cream cheese (softened)
2 teaspoons vanilla extract
1/4 teaspoon salt
20 ounces powdered sugar
7 ounces granulated sugar
2 ounces water
3 ounces unsalted butter
4 ounces heavy cream
1/4 teaspoon salt

Steps:

  • IMPORTANT: Make sure all your ingredients are at room temp (see notes at the bottom of the recipe)
  • Preheat oven to 350 F (177 C)
  • Peel the apples and core them using an apple corer or a knife.
  • Cut the apples into 1/4 inch pieces and place into a bowl.
  • Squeeze 1/2 a lemon over the apples to prevent browning. Set aside
  • Sift together flour, baking soda, salt, ginger, nutmeg, cinnamon and cloves. Set aside.
  • Add butter to a stand mixer with the paddle attachment and cream until smooth.
  • Add sugar and oil to the butter and cream on medium until the mixture is white and fluffy.
  • Add egg and vanilla to the butter mixture and mix until combined.
  • While mixing on medium, add in dry ingredients in thirds and mix until combined
  • Fold in applesauce and chopped apples until combined
  • Grease three, 8 inch pans with cake goop or another type of pan release.
  • Bake layers at 350 for 30 minutes, or until a toothpick comes out clean. Layers will be thin.
  • Let cake rest in the pan until it's cool enough to touch, then flip out onto a wire rack.
  • Make sure to cool completely before stacking. (Wrap in plastic wrap and place in fridge or freezer to speed up the cooling process.)
  • Place softened butter in the bowl of your stand mixer with the whisk attachment and mix until smooth.
  • Add in your cream cheese and mix until smooth
  • Add in your browned butter and mix until smooth and creamy
  • Add in your powdered sugar one cup at a time while mixing on low until all the powdered sugar is added. Do not over-mix.
  • Add in your salt and vanilla until combined.
  • Place sugar and water in a medium-sized pot. Cover with the lid and bring to a boil on medium-high heat.
  • Remove lid and place a candy thermometer in the pot. Continue cooking the sugar until thermometer reads 350º (hard crack stage) or it's a deep golden brown color. Do not stir.
  • Remove the sugar from heat and slowly whisk in butter. Be careful, it will bubble up.
  • Whisk in cream and salt.
  • Let caramel cool completely before using it for the drip

  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. 1/2 cup margarine (1 stick)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9-inch-by 13-inch baking pan; set aside.
  • In a medium mixing bowl, stir together the apples and 2 cups sugar.
  • In another medium mixing bowl, thoroughly combine the flour, soda, cinnamon, and salt.
  • Add the flour mixture to the apple-sugar mixture; stir well; set aside.
  • Place the eggs into a small mixing bowl and beat well with an electric mixer or hand held egg beater. Add the oil and 2 teaspoons vanilla extract; beat.
  • Stir the egg mixture into the apple mixture, blending until thoroughly moistened.
  • Stir in the pecans.
  • Pour the batter into the prepared pan. Bake at 350 degrees for 50 minutes or until cake springs back when lightly pressed. Serve with warm Sweet Butter Sauce.
  • SWEET BUTTER SAUCE INSTRUCTIONS: In a small, heavy-duty saucepan, over low heat, melt the magarine. Add the sugar, vanilla, and heavy whipping cream or evaporated milk; stir. Bring the mixture to a boil over medium-high heat and cook 3 minutes. Serve warm.
