This Sweet Potato Pie recipe is made with finely pureed sweet potatoes pecked with a pinch of spices and a liberal scrape of tiny little magical vanilla beans. A touch of Maker's Mark adds another note; all the better because it's a Southern one.

3 - 4 large sweet potatoes (ultimately resulting in 2 1/2 cups puree)
1/2 cup sugar
1/2 cup brown sugar
1/2 stick melted butter
2 eggs
1 cup whole milk
1 vanilla bean (seeds scraped)
1 tablespoon + 1 teaspoon Maker's Mark or other bourbon
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
9- inch unbaked pie crust or your favorite homemade pie crust

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Form unbaked pie crust into pie dish. Do something cool with the edge of the crust to make yourself feel better about not making the crust yourself. Oh wait, that was just me.
  • Peel the sweet potatoes and cut each into 3 or 4 large chunks.
  • Place potatoes in a large pan of boiling water. Boil for 20 - 25 minutes or until the potatoes are fork tender.
  • With a slotted spoon, remove potato chunks from the water, letting as much water drain off the potatoes as possible. Place the chunks in a food processor.
  • Process the cooked potato in the food processor until completely smooth.
  • In a large bowl with a wire whisk, combine 2 1/2 cups of the puree, sugar, brown sugar, butter, eggs, milk, seeds from the vanilla bean, bourbon, salt, cinnamon, ginger and nutmeg.
  • Pour filling into the pie crust.
  • Bake at 350 degrees for about 50-60 minutes, or until the pie is set and a sharp knife inserted into the middle comes out clean.
  • Let cool completely, then serve with a generous dollop of freshly whipped cream.

1 (9 inch) unbaked homemade pie crust (or store bought)
whip cream (or cool whip)
marshmallow fluff

Steps:

  • Preheat oven to 400°F. Wrap sweet potatoes with foil and bake on a cookie sheet until soft, about 45 minutes (or longer if your sweet potatoes are extra large).
  • Remove from oven and allow to cool completely.
  • Once sweet potatoes are cooled, preheat oven to 350°F. Remove foil and skin from sweet potatoes.
  • In a large bowl, mash sweet potatoes and butter until completely smooth. Whisk in sugar, brown sugar, whole milk, eggs, vanilla extract, cinnamon, nutmeg, salt and cloves. Whisk until mixture is well combined.
  • Pour filing into unbaked piecrust. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. The pie will rise while baking and then deflate as it cools.
  • Serve warm or chilled with a dollop of whip cream or marshmallow fluff!

¼ teaspoon ground cinnamon
1 1/2 teaspoons vanilla extract
1 unbaked pie crust

Steps:

  • Heat oven to 350 degrees Fahrenheit. Fill a 9" pie plate with pie crust.
  • In a large bowl, blend sweet potatoes and sugar with a hand mixer.
  • Add one egg, then beat the mixture.
  • Add the second egg and beat again.

1/3 cup butter or margarine, melted, divided
2 Tbsp. sugar
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1-1/4 lb. cooked sweet potatoes (about 2), peeled, mashed
1/3 cup sugar
1/4 cup dark corn syrup
2 eggs
1 tsp. pumpkin pie spice
1 tsp. vanilla
1 cup JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 325°F.
  • Crush 40 wafers to form fine crumbs; place in medium bowl. Add 1/4 cup butter and 2 Tbsp. sugar; mix well. Press onto bottom and up side of 9-inch pie plate. Coarsely crush remaining wafers; mix with remaining butter. Reserve for later use.
  • Beat all remaining ingredients except marshmallows with mixer until well blended; pour into crust.

  • 1. Heat oven to 350F.
  • 2. Grease and flour Bundt pan. (I use baking spray with flour)
