The cake is buttery, moist, and soft with a delicious almond flavor, and is paired with creamy vanilla buttercream frosting.Bake it in a sheet pan using the Cut and Stack Method and cut out the cake in cake rings for a more even-bake and no dark edge. 3/4 teaspoon Salt
3/4 cup Buttermilk
1/4 cup Water
1 1/2 teaspoons Vanilla Extract
1 Tablespoon(s) Almond Extract
1 1/2 teaspoons Apple Cider Vinegar
200 grams (1 cup) Sugar
1 stick (4 oz) Salted Butter (at room temperature)
1/4 cup Vegetable Oil
1/4 cup Light Corn Syrup
1 large Egg(s)
2 Egg Whites
1/4 teaspoon Cream of Tartar
4 ounces Cream Cheese
1 1/2 sticks (6 ounces) Salted Butter (at room temperature)
48 grams (1/4 cup) shortening
455 grams (3 1/2 cups) powdered sugar

Steps:

  • Preheat Oven to 325 degrees. Line 1/4 Sheet pan with parchment paper, and then spray bottom (on top of the parchment) and sides of the sheet pan with cooking spray.
  • Sift Dry Ingredients in a bowl and then whisk until well blended.
  • Combine and stir Wet Ingredients in a separate bowl or pitcher.
  • With a stand mixer (preferred) or handheld mixer, cream sugar and salted butter together until creamy and fluffy. Add oil and corn syrup and beat until incorporated. Add 1 egg(s) and cream until well blended, scraping sides of the bowl as needed.
  • On low speed, alternate adding Dry ingredients and Wet ingredients to the Creamed Ingredients, a little at a time. I do 1/3 Dry, 1/3 Wet, and so on, adding one-third at a time and blending on low after each addition. Continue to mix just until the batter looks well blended and smooth (avoid overbeating). Scrape sides of the bowl as needed.
  • Using a whip attachment and a clean bowl, whip the 2 egg whites and cream of tartar until stiff peaks form. (Make sure your bowl and beaters are clean and free from grease so that the whites will whip).
  • Carefully fold the Whipped Whites into the cake batter, one half of the whites at a time. The batter is ready when no egg white streaks remain and it should look smooth and uniform.
  • Spread into prepared pan and make sure the batter is evenly distributed. An offset spatula works well for this.
  • Bake on the middle or top rack (avoid bottom rack) of preheated 325-degree oven for 18 minutes, then turn the oven down to 300 degrees. Set the timer for an additional 6-8 minutes. Check the cake at this point. If it is jiggly at all when lightly touching the top of the cake, continue baking for 1-6 more minutes. The cake is done when a paring knife or toothpick comes out mostly clean when stuck quickly in the cake. A couple moist crumbs on your knife are fine, but they shouldn't look wet. Allow to cool completely.
  • Either follow the Baker's Shortcut (Note #4) or choose your round cake size using the Cut and Stack method (Note #2). Leave the cake in the sheet pan, and using a slight sawing motion, cut the cooled cake into your desired cake size with cake rings (You can use a knife and the cake rings as a guide for any halve pieces that you cut.) Brush lightly with simple syrup (optional, Note #3).
  • Wrap thoroughly in plastic wrap and freeze cake in the pan for 2 hours or overnight. (You can even bake the cake up to a week ahead of time and freeze). The cake will be much easier to layer if it is cold or frozen. To wrap the cake, place another sheet of parchment on top of the cake (this will prevent the plastic wrap from sticking to the cake), and wrap the whole pan with plastic wrap. (I pull the plastic wrap out and place the pan on top of it. Then I wrap 2-3 ways horizontally and one way vertically so that there are two layers of wrap on all sides of the pan including the bottom).
  • Whisk the powdered sugar and Instant Clearjel (if using) together until well-blended. Set aside.
  • Using a stand mixer (preferred) or handheld mixer and a large bowl, beat the cream cheese until broken up and softened.
  • Add the room temperature salted butter and continue to beat, scraping the sides of the bowl as needed.
  • Add the shortening and beat and scrape the sides until there are no lumps.
  • While the mixer is on low, slowly add the powdered sugar mixture.
  • Add the pure vanilla and almond extract. Scrape down the sides of the bowl. Then beat the buttercream on high for two-three minutes. This will add air into the buttercream and make it light and fluffy. The Instant Clearjel will cause the buttercream to thicken slightly during the next 10 minutes as it sits.
  • Combine all ganache ingredients and heat in the microwave at 50% power for 20-30 second increments. Whisk for 30 seconds to one minute in between each heat. (It should only take two to three heats in the microwave. Lots of whisking will melt your white chocolate and candy melts faster and prevent them from overcooking in the microwave).
  • The easiest way to layer the cake is to layer the cake from frozen the day before you plan to serve it. If serving the cake the same day you are layering it, use refrigerated cake layers instead of frozen. Piece together the bottom layer, filling in with cake scraps if needed. You can use the cake ring as a guide.
  • Fill the three cake layers with around 1/4 inch of buttercream. I recommend frosting a thin crumb coat of buttercream on the outside of the cake which will catch all the crumby edges, then allow it to set up in the freezer for about 10 minutes until the buttercream is firm. An offset icing spatula (I use the small and medium-size on all my cakes) helps with this. Then spread on the second layer of buttercream and decorate as desired.
  • If using, microwave the reserved ganache on 50% power until thin, and drizzle down the sides of the cake using a spoon or squeeze bottle. There is enough buttercream to frost an extra-tall row of rosettes around the top of the cake using a pastry bag and 1M star tip (or get creative with a different design!).
  • You can let the cake set up in the fridge, but remove it from the fridge 1-3 hours before serving so it can come back to room temperature. This cake has the best texture at room temperature. Enjoy!

1 cup water (227 grams)
3 tablespoons cornstarch (21 grams)
½ cup granulated sugar (100 grams)
⅛ teaspoon kosher salt
2 tablespoons fresh-squeezed lemon juice (28 grams, from 1 lemon)
Red food coloring (if needed and/or desired)
4 cups heavy whipping cream (908 grams (1 quart))
¾ cup powdered sugar (85 grams, divided)
16 ounces cream cheese (454 grams, room temperature (2 bricks))
1½ teaspoons pure vanilla extract (6 grams)
¾ teaspoon almond extract (3 grams)
½ teaspoon kosher salt
4 cups bleached cake flour (454 grams (16 ounces), such as Swan's Down)
8 ounces unsalted butter (226 grams (2 sticks), pliable but cool (about 65°F))

Steps:

  • Rough-chop 1½ pounds (about 3 cups) strawberries.
  • Halve the remaining 1 pound of strawberries and reserve for the topping.
  • In a large saucepan, whisk together the water and cornstarch until smooth.
  • Add strawberries, sugar, and salt; stir well.
  • Cook the mixture over medium heat, stirring often. After the strawberries cook about 3 minutes, mash about half of them.
  • Continue cooking and stirring the mixture until thickened, about 15 minutes.
  • Remove from heat.
  • Add lemon juice and stir well.
  • If desired, add red food coloring; stir well.
  • Pour the mixture into a heat-resistant, airtight refrigerator container. Cool to room temperature, stir, cover and refrigerate until ready to use (at least 2 hours and up to 5 days).
  • In the bowl of a stand mixer fitted with the whisk attachment, beat the whipping cream on medium-high speed until thickened. Add ½ cup powdered sugar and whisk until very stiff peaks form. Set aside.
  • Place cream cheese, ¼ cup powdered sugar, vanilla, almond, and salt in another mixing bowl. Whisk on medium-high speed for 4 minutes, scraping downs the sides as needed, until creamy and fluffy.
  • Add the whipped cream and whisk, on low speed, until fully incorporated.
  • Increase the speed to medium-high and whisk until light and fluffy and the mixture has firm peaks.
  • Keep refrigerated in an airtight container up to 24 hours
  • Adjust the oven rack to lower-middle position and preheat oven to 325°F.
  • Line 2 (if making a 4-layer cake) and 3 (if making a 3-layer cake) 8x3-inch aluminum cake pans with parchment and spray with nonstick cooking spray.
  • Sift the flour into a large mixing bowl; set aside.
  • Add butter, coconut oil, sugar, baking powder, baking soda, and salt in the bowl of a stand mixer. Fit the mixer with the paddle attachment. Set the mixer to low to moisten, then switch to medium speed and cream until light and fluffy, about 5 minutes, scraping as needed.
  • With the mixer running, add egg whites, one at a time.
  • Add vanilla and almond extracts and mix 30 seconds.
  • Scrape down the bowl and paddle.
  • Set mixer to low speed and slowly add one-third of the flour, followed by one-third of the buttermilk. Mix just until each addition is roughly incorporated. Add the remaining flour and milk, alternately, one-third of each at a time. Mix just until smooth.
  • Turn off the mixer and use a rubber spatula to scrape all dry ingredients from the bottom. Mix on low speed just until dry ingredients are incorporated.
  • Divide batter evenly between the prepared cake pans and bake about 40 minutes or until the cakes internal temperature registers 210°F. The cakes should be pale, brown around the edges and firm. A toothpick inserted in the middle of each cake should come out almost clean - with just a few crumbs attached.
  • Transfer cakes to a wire rack and cool 15 minutes. Remove cakes from the pans and remove the parchment. Return them to the wire racks to cool completely.
  • If not serving the cake within a couple of hours, wrap the cake layers tightly with plastic wrap up to 24 hours ahead. Keep the frosting and filling refrigerated until ready to frost.
  • If the Whipped Cream Frosting is too stiff to spread, leave it on the counter for about 15 minutes, stir or beat it for a few seconds and it should be good as new.
  • Place one cake layer on a plate or cake stand and spread about 1½ cups Whipped Cream Frosting on top. Spread it evenly while building a ½-inch "barricade" of frosting around the edge to keep the filling from leaking out.
  • Add about ½ cup Fresh Strawberry Filling in the middle of the frosting and spread it out evenly to the frosting "barricade".
  • Add the next layer of cake and add the filling and frosting as before.
  • After adding all the layers, frost the sides of the cake with Whipped Cream Frosting.
  • For the top of the cake, arrange halved strawberries as desired.
  • Refrigerate until ready to serve and serve within 6 hours.

  • Preheat the oven to 325 degrees F.
  • Prepare two 16-inch cake pans by greasing them and lining the bottoms with parchment paper.
  • In the bowl of an electric mixer fixed with the paddle attachment, add the liquid shortening, inverted sugar and vanilla. Then add the cake flour, granulated sugar, milk powder, baking powder, sea salt and cream of tartar. Mix on speed 1 for 1 minute. Then add half of the egg whites and mix on speed 1 for 3 minutes.
  • Add the remaining egg whites and mix on speed 1 for 1 minute. Then mix on speed 3 for 3 minutes. Stop the mixer, scrape the bowl, and add the whole eggs, water and almond extract. Mix on speed 1 for 1 minute. Then on speed 3 for 3 minutes. Lastly, mix on speed 1 for 10 minutes.
  • Fill the cake pans two-thirds full and bake until golden and a tester such as a toothpick comes out clean, 35 to 45 minutes. Let the cakes cool completely.
  • To assemble the cake: Torte the cooled cakes (level and split them horizontally into 2 layers each). Generously spread a layer of the Ganache on the first layer of cake, then a generous layer of Cream Cheese Filling. Layer some fresh strawberries on top of the Cream Cheese Filling. Repeat with the next 2 cake layers. Top with the last cake layer and ice the cake smooth with the Vanilla Buttercream Icing. Lastly, pour a thin layer of Pink Poured Fondant over the top of the cake, letting it drip down the sides.
  • In a microwave-safe glass bowl, heat the chocolate in the microwave in 30-second intervals until melted, stirring between each intervals. Add the cream and mix with a spatula until smooth. Let cool.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the shortening and cream cheese until smooth. Then add the confectioners' sugar, sea salt, vanilla and butter emulsion. Mix it all on medium speed for 8 to 10 minutes.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the shortening until smooth. Then add the confectioners' sugar, sea salt, vanilla and butter emulsion.
  • Mix it all on medium speed for 8 to 10 minutes.

  • 1. Add Oil,eggs,water,and extract to your mixing bowl. Pour cake mix and instant pudding, blend together until well blended.
  • Pour into 2 8" round cake pans,(greased or sprayed)
  • Bake on 325 for 30-35 mins,until knife comes out clean.

  • TO MAKE ICING: start with criso stick in mixing bowl,add 1/2 of the powdered sugar, and 1/2 of the water,start mixing slowly, then speed up as it blends together, add the rest of the powdered sugar,and the water(if needed) and the extract, and blend well. Your icing may be thick, if too thick, and water by the tablespoons to get the thickness you want.
  • To icing cake: Place 1 layer on plate,spoon glaze on bottom layer,but not to the edge.
  • place next layer on top,and icing whole cake with Almond icing.
  • NOTE: Sometimes I put glaze on top of the top layer,and pipe stars around the edge of top. You can also use a plastic bag and snip the corner, and squeeze small monds of icing around the edge, pretty!

Steps:

  • Set an oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Grease the bottom of an 8-by-12 inch metal baking pan and line the bottom with parchment. Then grease and flour the bottom and sides of the pan. Set aside.
  • For the cake: sift together the flour and baking powder. Add the salt and stir to combine.
  • In the bowl of a stand mixer fitted with the paddle attachment, add 1 cup of butter and sugar and beat on medium-high speed until light and fluffy, 2 to 3 minutes. Using a rubber spatula, scrape the bottom and sides of the bowl, as needed. Add the eggs, 1 at a time, beating on medium speed and scraping down the sides of the bowl between additions. Add the vanilla and almond extracts and beat to combine. On low speed, mix in half of the flour mixture, then mix in the milk. Mix in remaining flour mixture until just combined. Transfer the batter to the prepared pan and bake until a tester comes out clean, 18 to 20 minutes. Transfer to a rack to cool slightly, then unmold and cool completely.
  • To make the cake filling, using a serrated knife, cut the cake into an 8x8-inch square. Set aside. Crumble the portion of the cake that was removed and reserve 2 1/2 cups. Add the remainder of the cake crumbs to a large mixing bowl along with the remaining 1/4 cup melted butter, jam and almonds. Mix well (your hands are the best tool here) to make a spreadable filling.
  • To assemble the cake, use a serrated knife to split the cake crosswise into 2 halves. Arrange both halves so they're facing cut-side up. Brush the cake with about 2/3 of the cooled almond syrup. With a small offset spatula, gently spread the jammy filling over the entire bottom half of the cake and top with the top half of the cake, cut side down. Press gently to adhere. Flip the cake so the flat bottom is now facing up, to create a flat top. Freeze the cake until firm, 1 hour.
  • With a serrated knife, cut off the rough sides on the frozen cake and cut into 16 squares. Set the cake on a cooling rack over a parchment-lined baking sheet.
  • Coat the cakes 1 at a time by pouring the icing around the edges and letting it drip down to coat the sides, then fill in the top. (Set the bowl over hot water and stir if it begins to thicken before you are done.) Top with sprinkles or non pareils before the icing begins to set.
  • Combine the sugar and water in a small saucepan over low heat and cook to dissolve the sugar, 2 to 3 minutes. Remove from the heat. Add the almond extract and stir to combine. Cool completely.
  • Melt the chocolate chips or candy melts in a double boiler and stir until smooth.
  • In the bowl of a stand mixer fitted with the whisk attachment, add the confectioner's sugar, corn syrup, hot water and vanilla. Mix on low speed until smooth. Add the melted chocolate and continue to mix to make a very smooth, pourable icing, about the consistency of molasses. Add food coloring as desired.

1 cup shortening, softened
8 ounces bittersweet chocolate, chopped
3/4 cup heavy cream
1 tablespoon shortening

Steps:

  • ---Cake---.
  • Preheat oven to 350F, grease a 10" springform pan and line the bottom with parchment paper.
  • In a medium bowl, whisk together flour, cornstarch, nutmeg, baking powder, baking soda and salt.
  • In a large bowl, cream together butter and vanilla sugar until fluffy.
  • Add egg yolks, honey and vanilla, beating well.
  • In a cup or small bowl, stir together buttermilk and yogurt until smooth.
  • Beginning and ending with the dry ingredients, alternate additions of flour and buttermilk mixtures, beating well after each one.
  • With clean beaters, whip egg whites until soft peaks, fold into the batter.
  • Pour into the prepared pan.
  • Bake on the lowest rack of the oven, covering with foil halfway through, 55-60 minutes, until it tests done.
  • Cool in the pan 1 hour, then refrigerate a minimum of 1 hour before unmoulding.
  • ---Vanilla-Raspberry Filling---.
  • Dissolve the sugar and salt in the boiling water. Cool to room temperature.
  • Add the meringue powder and use a mixer to beat on slow speed until the powder is dissolved and the mixture is foamy.
  • Increase the speed and beat 3-4 minutes longer.
  • Beat in the vanilla followed by the icing sugar.
  • Add the butter and shortening a few tablespoons at a time, beating well after each addition, then beat in the puree and lemon juice.
  • Chill 30 minutes before use.
  • ---Very Vanilla Buttercream Frosting---.
  • Dissolve the sugar and salt in the boiling water. Cool to room temperature.
  • Add the meringue powder and use a mixer to beat on slow speed until the powder is dissolved and the mixture is foamy.
  • Increase the speed and beat 3-4 minutes longer.
  • Beat in the vanilla followed by the icing sugar.
  • Add the butter and shortening a few tablespoons at a time, beating well after each addition. Continue beating until mixture is thick, creamy and fluffy.
  • Chill 30 minutes before use.
  • ---Ganache---.
  • In a heavy-bottomed saucepan over low heat, melt together chocolate, cream and shortening until smooth.
  • Remove from heat and allow to cool 10 minutes. Gently re-warm if necessary for even spreading.
  • ---Assembly---.
  • Level the top of the well-chilled cake and slice horizontally into three even layers.
  • Place bottom layer on a cake round.
  • With an offset spatula or palette knife, spread ½ of the Vanilla-Raspberry Filling in an even layer over the bottom round and top with the second layer.
  • Spread second layer with remaining ½ of the filling and place the final layer on top.
  • Using some of the remaining frosting, apply a thin "crumb coat" over the entire outside of the cake.
  • Refrigerate 1 hour.
  • Finish covering the top and sides of cake with the remaining frosting, making it as smooth as possible.
  • Freeze 30 minutes.
  • Pour ganache gently onto the centre of the top of the cake and spread to form "drips" or a "shadow" effect down the sides.
  • Allow cake to set at room temperature, then keep in the refrigerator until serving.

You can use the base of this recipe to make almond and/or vanilla buttercream frosting. The vanilla works wonderfully with most any cake flavor. The almond is highly recommended with a chocolate or devil's food cake. Note that the entire recipe makes 7 1/2 cups of frosting. I discovered this recipe in Bon Appetit, 2004.

10 1/2 cups powdered sugar (2 1/2 to 2 3/4 pounds)
3 tablespoons whipping cream

6 drops yellow food coloring

Steps:

  • For base frosting:.
  • Using electric mixer, beat butter in large bowl until fluffy.
  • Gradually beat in sugar, then cream and vanilla.
  • If making both frostings: Divide between 2 bowls.
  • For vanilla frosting:.
  • Mix 1 teaspoon vanilla into 1 bowl of base frosting.
  • For almond frosting:.
  • Mix almond extract into second bowl of base frosting. Mix in yellow food coloring, 1 drop at a time, until desired shade is reached.

1 cup homemade unsalted butter, softened
2 cups white sugar
4 eggs, room temperature
2-3/4 cups all purpose flour
2-1/4 tsp baking powder
3/4 tsp salt
1 cup milk
2 TBS pure vanilla extract

Steps:

  • Directions PREHEAT oven to 350 degrees. Butter three 9 inch cake pans and dust the inside with flour and tap out excess. Line the bottom of the pans with wax or parchment paper. Put the cake pans on a baking sheet lined with parchment paper or a silicone mat. Sift the dry ingredients together and set aside. Beat the butter for 3 minutes until light and fluffy. Add the sugar and beat another 3 minutes. Add the eggs, one at a time, and beat thoroughly after each addition. Start adding the flour mixture one cup at a time, and alternate with the milk; ending with the flour mixture. Add the vanilla, mix well and pour into prepared cake pans. Bake for 25-30 minutes or when a knife inserted in the center of the cake comes out clean. Transfer to a rack and cool for 5 minutes, then run a knife around the sides of the cakes, unmold them and peel off the paper liners. Invert and cool to room temperature, right side up. (These cooled cakes may be wrapped airtight and stored at room temperature overnight or frozen for up to two months.)

This is a wonderful vanilla cake with a sweet cream cheese and strawberry frosting. from Bon Appetite Magazine. I This is an AWESOME cake! You can choose to use 2 /9 inch pans or 3/9 inch pans. Even if you use 3 cakes, make sure you split them, I make that suggestion due to the horrible review that was recently left. I am trying to dummy proof this recipe, if you know what you are doing then go for it. This cake really is worth the time it takes to make it. The frosting is delicate and so, so delicious! The cake is moist and dense with a rich vanilla, butter flavor. I have gotten nothing but rave reviews on this cake. Also, this is a huge cake! It will probably serve more than 12-16. I found that 6 cups of strawberries was a bit too much for me but it depends on how many strawberries you like. After reading the very bad review left recently, I must insist that if you are looking for a lowfat cake please DO NOT make and review my cake. The nutrition info is CLEARLY posted. I guess some folks still take out their frustration on line, clearly.

6 tablespoons seedless strawberry jam
1/3 cup seedless strawberry jam
2 1/4 lbs strawberries, hulled, sliced (about 6 cups)

Steps:

  • For the frosting, use the electric mixer to beat cream cheese and butter in large bowl until smooth, stopping to scrape down sides of the bowl. Beat in sugar, then jam. Beat cream in medium bowl until peaks form. Fold whipped cream into frosting. Cover; chill until firm enough to spread, about 2 hours.
  • Cake:.
  • Preheat oven to 325°F.
  • Butter and flour 2 or 3 9-inch cake pans with 2 inch high sides. Sift flour, baking powder, and baking soda into medium bowl. Using electric mixer, beat sugar and butter in large bowl until fluffy. Add eggs one at a time, beating after each addition. Add sour cream, beat 30 seconds. Add flour mixture in three additions, beating just to blend after each addition. Divide the batter between the prepared pans.
  • Bake until tester comes out clean. About 45- 50 minutes. Cool cakes in pan for 15 minutes and then loosen with knife and turn onto rack to cool completely.
  • Using a large serrated knife, cut each cake horizontally in half. Place one cake, cut side up, on cake plate. Spread 2 tablespoons strawberry jam over ( I like to warm it slightly in microwave and add some boiling water so I can brush it on the cake), then 3/4 cup frosting, and 3/4 cup sliced berries, arranging in a single layer.
  • Repeat this 2 more times with each layer of cake.
  • Spread 2 cups frosting on top of cake and over sides of cake.
  • Optional, spread remaining jam (room temp) on top and sides of cake (swirl).
  • Cut cake into wedges and top with remaining strawberries.
