PERFECT FRENCH TOAST
Steps:
- Preheat the oven to 350 degrees F. Whisk 4 eggs, 1 1/2 cups half-and-half or milk, 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract, 1 teaspoon sugar and a pinch of salt in a shallow bowl. Heat 1/2 tablespoon butter in a nonstick skillet over medium heat. Working in batches, dip 6 thick slices white bread, challah or brioche in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake until puffed, 8 to 10 minutes. Meanwhile, melt 4 tablespoons butter in the same skillet until browned, about 5 minutes. Drizzle the French toast with the browned butter and maple syrup.

- Preheat the oven to 425˚ F. Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Whisk lightly until combined; set aside.
- In a separate pie plate, stir together the panko, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist.
- One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning to coat; sprinkle and press the crumbs so they totally cover the bread. Place the bread strips on a rack set on a baking sheet.
- Bake the French toast sticks until golden around the edges and the crumbs are crisp, 15 to 20 minutes. Sprinkle with confectioners' sugar and serve with maple syrup.

- Whisk together the eggs, milk, cream, vanilla and cinnamon. Lay the brioche slices in a single layer in a shallow dish and pour the egg mixture over them. Allow to soak for 2-3 mins, then carefully turn over and soak for 2 mins more.
- Heat 1 tbsp of the vegetable oil and butter in a non-stick frying pan over a medium heat until foaming. Carefully lift 2 slices of the soaked brioche out of the dish and add to the frying pan. Fry for 3 mins on each side, until golden and crisp, then place on a wire rack over a baking tray in a warm oven while you repeat with the remaining slices.
- Serve dusted in icing sugar and scattered with fresh berries, if you like.

- In bowl, beat cream cheese, vanilla and sugar until creamy.
- Stir in nuts.
- Cut bread into about 12 slices approximately 1 1/2 inches thick, cutting a slit in each to create a "pocket".
- Fill each pocket with about 1 1/2 tablespoon of the cream cheese mixture.
- In a large mixing bowl, beat the eggs, milk, and spices.
- Dip the filled bread "pockets" in the egg mixture, turning to coat both sides.
- Cook on griddle or in pan until both sides are browned.
- Heat the preserves and orange juice in a small saucepan, simmering for about 4-5 minutes or until slightly thickened.
- Drizzle orange mixture over French toast and serve.

- Spread a tablespoon of cream cheese on one side of 4 slices of bread. On 1 side of each remaining 4 slices of bread, spread 2 teaspoons of fruit preserves. Put together the slices with fruit preserve.
- In a bowl, using a wire whisk beat the egg substitute with milk and sugar substitute until smooth. Drench sides of each sandwich into the egg mixture.
- Coat a griddle with nonstick cooking spray; place the griddle over medium heat. Pan fry the sandwiches for 2 minutes on each side until golden brown.
- Put each sandwich on a serving plate and sprinkle tops with 2 teaspoons of slivered almonds. Slice the strawberries in 5 sections vertically from tip to just about a centimeter from the stem. Spread each piece in fanlike fashion and set out in each plate to garnish.
