Provided by Recipes From Europe

Categories     Salads

Time 1h35m

Number Of Ingredients 10

2 English cucumbers (peeled if preferred)
1 tablespoon salt (more to taste)
1/2 small chopped hot banana pepper (optional)
2 crushed cloves of garlic
2 tablespoons sugar
2 tablespoons vinegar
2/3 cup sour cream
ground black pepper (to taste)
a sprinkle of paprika
chives (optional)

Steps:

  • Wash and - if desired - peel your cucumbers. Thinly slice your cucumbers with a mandolin or four-sided box grater.
  • Place the cucumbers in a bowl, sprinkle 1 tbsp of salt on top, and put the bowl in the fridge for 1.5 hours.
  • After taking the cucumbers back out of the fridge, drain the excess water and squeeze the cucumbers either with your hands or by pushing a small plate on top to remove and drain any additional liquid.
  • Add the chopped hot banana pepper (optional), the crushed garlic, sugar, vinegar, sour cream, pepper, and paprika. Mix everything together in the bowl and add more spices or sour cream to taste.
  • Refrigerate your cucumber salad for several hours (or overnight). You can add more pepper, paprika, and chopped chives to garnish before serving.

French Potato Salad image

Provided by Ina Garten

Categories     side-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 13

1 pound small white boiling potatoes
1 pound small red boiling potatoes
2 tablespoons good dry white wine
2 tablespoons chicken stock
3 tablespoons Champagne vinegar
1/2 teaspoon Dijon mustard
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
10 tablespoons good olive oil
1/4 cup minced scallions (white and green parts)
2 tablespoons minced fresh dill
2 tablespoons minced flat-leaf parsley
2 tablespoons julienned fresh basil leaves

Steps:

  • Drop the white and red potatoes into a large pot of boiling salted water and cook for 20 to 30 minutes, until they are just cooked through. Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes. As soon as you can handle them, cut in 1/2 (quarters if the potatoes are larger) and place in a medium bowl. Toss gently with the wine and chicken stock. Allow the liquids to soak into the warm potatoes before proceeding.
  • Combine the vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, parsley, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve warm or at room temperature.

Great salad to make when you have a ton of cucumbers coming out of the garden. We make this year round but we are real cuke lovers in this family. Let it sit for a few days in the fridge and it's even better! Great make-ahead dish for BBQs and parties.

GRANDMA VARGA'S HUNGARIAN CUCUMBER SALAD (UBORKASALATA)

Grandma Varga's Hungarian Cucumber Salad (Uborkasalata) image

This is the best cucumber salad I have ever had. This is my grandmothers recipe, (she was from Nagyszentmiklos) and this is a perfect companion dish for chicken paprikas, although I could make a meal out of it. This will quickly become your favorite way to eat cucumbers!

Provided by Anthony Gougoutris

Categories     Hungarian

Time 30m

Yield 8 serving(s)

Number Of Ingredients 7

8 medium cucumbers or 15 kirby cucumbers, peeled
1/4 cup finely chopped fresh dill
1/4 cup kosher salt
1/2 pint sour cream
2 tablespoons white vinegar
2 garlic cloves, minced
1 teaspoon Hungarian paprika

Steps:

  • Slice cucumbers very thinly, preferably using a mandolin.
  • Take a colander, put in a small layer of cucumbers, then sprinkle with a small amount of the salt.
  • Continue this method until all the salt and cucumbers are used up.
  • Cover the cucumbers with a plate inside the colander, and put a very heavy weight on top.
  • Make sure the colander is in a large bowl, because the cucumbers will lose alot of water.
  • Let them sit for 1 hour.
  • In the meantime, chop the dill and finely mince the garlic, put aside.
  • After 1 hour, take a handful of cucumbers, and squeeze out as much juice as you can, and continue until they are all done.
  • Rinse thoroughly with water, drain well.
  • After the cucumbers are done, return to the colander, and weight down one more time for about 15 minutes.
  • You do not have to squeeze out the juice again with your hands Combine all ingredients in a large bowl, except the paprika.
  • After mixing thoroughly, put in a nice serving dish, and sprinkle with the paprika.
  • Chill for at least 2 hours.
  • Enjoy.
  • Nutritional information shows a high amount of sodium, but the vast majority is pressed out by your hands. The main function of the kosher salt is to purge the moisture out of the cucumbers.

13 MOST POPULAR TRADITIONAL FRENCH SALADS - FRANCE HOTEL …

From france-hotel-guide.com
  • The Parisian salad. It is to French salads what a ham-and-butter sandwich is to its kind: an absolute classic. It is also easy to prepare: take a bit of green salad, diced Swiss cheese, a bit of ham, one or two hard-boiled eggs and some bread croutons, and you have a healthy and delicious salad.
  • Seafood salad. As the name says, this salad may use several kinds of seafood which are easily cultivated or fished in France. This salad with a green salad base generally includes bell peppers and shrimps, and may also be completed with either mussels, salmon or any other seafood.
  • The “niçoise” salad. This salad, which comes from southeastern France, is generally made with specific ingredients, which act as reminders of the typical southern sun and wind.
  • The “landaise” salad. The “landaise” salad, with a green salad, tomatoes and cucumber base, owes its specificity to the few ingredients served warm with it, that is duck breast fillet and gizzards.
  • The “franc-comtoise” salad. This salad showcases a mix of charcuterie and cheese typical in the Franche-Comté region. Green salad and browned potatoes act as base for smoked ham (or alternatively lardons), some Morteau sausage and Comté cheese, resulting in a delicious and nourishing harmony.
  • The “lyonnaise” salad. This salad originating from the city of Lyon is recognizable due to its use of poached eggs instead of hard-boiled eggs during its preparation and presentation.
  • The “auvergnate” salad. Like many salads in this list, the auvergnate salad is identifiable thanks to the type of cheese it uses, in this case, usually some Bleu d’Auvergne or Cantal.
  • The “savoyarde” salad. Another salad associated with typical cheese from its original region in the Alps. The “savoyarde” salad tends to be composed of potatoes, although some green salad may be added.
  • The “vosgienne” salad. The vosgienne salad is also inspired from typical mountain dishes and is only all the more delicious for it. Eggs, lardons and crème fraîche on top of green salad and potatoes make it a dish easy to make for yourself, yet still tasty and delicious.
  • Warm goat cheese salad. Another one of the typical French salads to include cheese in its recipe, the toasted goat cheese salad can be enjoyed anywhere in France.
