CLASSIC GOULASH
Easy recipe for making a classic goulash. Can also be done in a slow cooker. Inspired by Paula Deen's Bobby's Goulash.

Steps:
- Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
- Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
- Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

Steps:
- Heat dressing in Dutch oven or large deep skillet on medium heat. Sprinkle meat with pepper. Add to pan; cook 8 to 10 min. or until meat is evenly browned, stirring occasionally. Remove meat from pan; cover to keep warm.
- Add onions, garlic and vinegar to pan; cook 5 min. or until onions are tender, stirring occasionally. Stir in tomato paste and paprika; cook and stir 1 min. Add potatoes, tomatoes, broth and Worcestershire sauce; mix well. Bring to boil; cover. Simmer on medium-low heat 30 min. or until potatoes are tender, stirring occasionally. Return meat to pan; cook 5 min. or until heated through, stirring occasionally.
- Serve topped with sour cream.

Steps:
- Boil the noodles 2-3 minutes less than stated on the cooking directions on the package. Drain.
- Brown ground beef and drain the grease.
- Combine the beef, noodles, tomato juice, garlic powder, onion powder and Accent.
- Boil on high heat until the liquid thickens and is not so runny. Serve hot.
- I also serve with dried chopped / minced onions on top for an extra crunch and flavor.

Steps:
- Brown beef, onion, bouillon, salt and pepper in a large frying pan. Drain well.
- Add stewed tomatoes, soup, tomato paste and ketchup.
- Simmer 5 minutes.
- Add macaroni, stir and pour into a 2 quart casserole.
- Bake covered in 350* oven for 25-30 minutes.
- Uncover, place cheese on top and bake 5 more minutes or until cheese is melted.
- TIP: I freeze the leftover soup and tomato paste in a ziplock bag for my next batch of goulash.

FRENCH CANADIAN RAGOUT (FRICOT)
This is another must dish for French Canadian families at Christmas time. In the old days, when country people had to work outside in the cold Canadian winters and needed an extra inch (or two) of fat to keep warm, they didn't bother defatting the dish. They would eat the pork with skin and fat. I don't recommend doing this unless you need to put on a lot of weight. This dish should be made ahead of time. It freezes very well and is better reheated.

- HOME MADE BROWNED FLOUR: Turn oven on to broil.
- In a large skillet put about 3 cups of all purpose flour.
- Place in the oven on the middle rack.
- Let the flour brown for about 5-6 minutes.
- Remove and stir well.
- Repeat, mixing every 5-6 minutes.
- Be careful not to burn.
- This may require 4-6 times.
- Brown and mix until flour is a nice light caramel colour.
- In a large pot put the pork pieces, the studded onion, bay leaves, salt and pepper.
- Cover with water about two inches above.
- Bring to boil.
- Reduce heat and simmer for 2 to 2 1/2 hour.
- The meat should be well done.
- Remove the meat and let cool so you can handle it.
- Remove the skin and most of the fat, leaving the meat in chunks.
- Refrigerate.
- Meanwhile let the broth cool overnight so the fat comes to the top and congeals so it can be removed.
- FOR THE MEATBALLS: Mix all the other ingredients, (except browned flour) in a bowl.
- Mix well and form meatballs about one inch in diameter.
- Cover a baking pan with foil and cook the meatballs in a 350°F oven for approx 15 minutes.
- Refrigerate.
- The next day put the reserved pork meat in the pot and pour enough of the degreased broth to cover by about 3 inches.
- Bring to a light boil.
- Meanwhile, Mix the flour with cold water a bit at a time until you get a medium thick paste.
- Pour one large spoonful at a time in the broth and let simmer a few minutes.
- Repeat until the sauce is thickened to your taste (not too thick).
- Add the meatballs and cook another 7-10 minutes.
- Serve with boiled or mashed potatoes.
- If you want to be traditional, also serve with the tourtiere.

GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.
VENISON GOULASH
This is a goulash recipe from Germany. I combined it from a couple of different recipes, it is ideal for the lesser quality cuts as the meat will get softer. Here goulash is most meat and some onions in a sauce, sometimes bell peppers but I personally prefer ones without like this one. One of the recipes I took some of my ideas from suggested adding sour cream at the end, but I think is more than rich enough without. I served it with butter rice, though it would be good with potatoes or bread too.

- Cover the meat in the flour.
- Melt the fat in a skillet, add the onion and garlic and cook until onions are clear.
- Add the meat and brown well.
- Add all the remaining ingredients.
- Stir well, cover and simmer gently stirring occasionally until the meat is tender (about two to three hours) Add water if liquid reduces too much, there are ought be a half cm of liquid over the meat.
- Taste and add salt if necessary. Serve hot.

- In a large soup pot, sauté the onions in vegetable oil over low heat, stirring frequently, until translucent. Do not let them burn. Salt lightly to help tenderize them. If they begin to stick, add a bit of water to the pot. Towards the end of the cooking of the onions, add in the garlic (it will brown pretty quickly, so keep an eye on the garlic and keep stirring).
- Remove the pot from the heat, add the sweet Hungarian paprika, stir. Add the tomatoes, meat and pepper; stir again. Add a little bit of water (about 2 Tablespoons). Be sure to not burn the paprika, as it will get bitter.
- Add 6 cups of water. Toss in the bay leaves and crack in some fresh pepper (to taste). Add some salt (I start with less, about 1 teaspoon. I add more as it’s cooking if I feel it needs it). If it seems too thick, add another 1-2 cups of water.
- Reduce heat, add the carrots and potatoes. Cover and simmer until meat is tender, adding water as necessary. It takes about 1.5-2 hours or until tender. If while simmering the soup seems too thick, add a little bit more water so it's the consistency you like.

- While meat is still on the cutting board, toss it with 1 teaspoon salt and 1 teaspoon pepper. Let rest while you chop/gather the rest of your ingredients.
