FRENCH APPLE PIE
This is a great recipe given to me by my Mother in law. This is my husband's favorite pie and I love making it for him. Even if you don't like raisins too much, they are not overwhelming.

Steps:
- Preheat oven to 450 degrees.
- Place one crust in a 9 inch pie pan.
- Mix apple slices and raisins and place in pie shell.
- Sprinkle with lemon juice.
- Mix remaining ingredients (not Icing) and sprinkle on top of apples and raisins.
- Dot with butter if desired and place 2nd crust on top.
- Crimp or flute edges as desired.
- Bake at 450 degrees for 10 minutes, then reduce heat to 375 degrees and Bake 40 more minutes.
- When pie is cool, mix the icing and drizzle over the crust.

- Preheat oven to 325 degrees F (165 degrees C). Line a pie dish with 1 crust.
- Whisk together cornstarch, sugar, cinnamon, nutmeg, and salt in a large bowl. Stir apples, maple syrup and whole egg into cornstarch mixture.
- Pour apple mixture into the prepared crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. Whisk together egg yolk and water in a small bowl; brush over the pie. Cover pie loosely with aluminum foil and place on a baking sheet.
- Bake in the preheated oven for 35 minutes. Remove foil; continue baking until crust is golden brown, about 15 minutes. Cool on a wire rack.

FAVORITE FRENCH CANADIAN MEAT PIE
I'm a seventh-generation French Canadian, and my ancestors started the tradition of serving this meat pie on Christmas Eve. One year I didn't make it, and my daughter and I felt something was missing. The savory pie goes well with salad and fresh rolls for a lighter meal, and it's good served in small portions with turkey and all the trimmings, too.

This French Canadian meat pie is hearty, satisfying, and easy to make so it's a great choice for a holiday main course. Visually impressive, relatively affordable, and best served at room temperature, so a tourtiere doesn't require any kind of precise timing.

- Place flour, salt, and frozen butter slices into the bowl of a food processor. Pulse on and off until butter is about the size of peas, about 30 seconds. Stir vinegar into cold water; drizzle water/vinegar into the flour mixture. Pulse on and off until mixture is crumbly and holds together when you pinch a piece off, about 10 seconds. If dough isn't pressing together, drizzle in another teaspoon of water.
- Transfer mixture to a work surface. Press it together until it becomes a lump of dough. Wrap in plastic wrap. Refrigerate until chilled, at least 1 hour.
- Mix salt, pepper, thyme, sage, cinnamon, ginger, nutmeg, allspice, mustard, clove, and cayenne together in a small bowl.
- Place potato quarters in a saucepan; cover with cold water. Add 1 teaspoon kosher salt. Bring to a boil over high heat; reduce heat. Simmer until cooked through, 10 to 15 minutes. Scoop out potatoes and transfer to a bowl; save cooking liquid. Mash potatoes with a potato masher.
- Melt butter in a skillet over medium heat. Add chopped onion and a pinch of salt. Cook and stir until onions turn golden, 10 to 15 minutes.
- Stir garlic, celery, and spice blend into the skillet with onions. Stir until onion mixture is evenly coated with the spices, about 30 seconds. Add ground beef and ground pork. Ladle about 3/4 cup of the potato cooking liquid into the skillet.
- Cook and stir until meat is browned and has a very fine, almost pastelike texture. Continue cooking, stirring occasionally, until meat is tender and most of the liquid has evaporated, about 45 minutes. Stir in mashed potatoes. Remove from heat and cool to room temperature.
- Preheat oven to 375 degrees F (190 degrees C).
- Divide chilled dough into 2 pieces, one just slightly larger than the other. Roll the larger piece out into a 12-inch circle on a lightly floured work surface. Place in a 9-inch deep dish pie plate. Roll top crust out into a circle about 11 inches in diameter. Cut small slits in the top crust to allow steam to escape.
- Fill bottom crust with the meat mixture; smooth out the surface. Whisk egg and water together to make egg wash. Brush edges of the bottom crust with egg wash. Place top crust on the pie and press lightly around the edges to seal. Trim excess dough from the crust. Crimp the edges of the crust. Brush entire surface of the pie with egg wash.
- Place in preheated oven. Bake until well browned, about 1 hour. Let cool to almost room temperature before serving.

Steps:
- Preheat the oven to 450 degrees.
- Place one crust into a pie pan.
- Sift the brown sugar and the flour together.
- Peel and core the apples, and cut into thin slices.
- Mix the apples and the raisins with the brown sugar/flour and pour into the pie crust, being sure to distribute the apples and raisins evenly within the crust.
- Dot the butter evenly over the apples and sprinkle with the cinnamon.
- Sprinkle the almonds evenly on top.
- Top with the second pie crust, folding the edge under the bottom crust edge.
- Flute and seal the edges.
- Make 3 or 4 small slits in the top crust to allow the steam to escape.
- Bske at 450 degrees for 15 minutes then reduce the oven temperature to 350 degrees and bake for 40 to 45 minutes more until golden brown.
FRENCH CANADIAN SHEPHERD'S PORK PIE WITH VARIATIONS
This is the traditional French Canadian version of the familiar shepherd's pie, a nourishing one dish meal.

- Preheat oven to 350°F.
- In a saucepan, cook potatoes and mash them. Season the potatoes to taste with salt and pepper.
- Grind your leftover cooked pork and add chopped fried onion. Season with your favorite spices. Such as rosemary, thyme, marjoram, parsley, pepper, savory or garlic.
- In a small saucepan, heat creamed corn.
- In an oven proof dish, alternate layers of mashed potatoes, creamed corn, and ground pork, finishing with a layer of mashed potatoes.
- Dot with butter and bake in oven for 20 to 30 minutes or until potatoes are crusty and golden brown.
- VARIATIONS: Replace creamed corn with 2 cups applesauce. Garnish with thin slices of apple sautéed in butter.
- Replace creamed corn with 19 oz. can asparagus coarsely chopped. Serves 4.

- Preheat the oven to 375 degrees F (190 degrees C).
- Prepare pie: Combine apples, sugar, cinnamon, and ginger in a saucepan. Dissolve cornstarch in apple juice and add to apples. Heat over medium heat until juice thickens and is translucent and apples are slightly softened, 4 to 5 minutes. Do not overcook.
- Spoon apples into the pie crust using a slotted spoon (heap those apples in). Add juices until pie dish is full, but not overflowing, so it won't spill over.
- Mix flour and sugar for topping together in a bowl; cut in butter with a pastry blender until combined. Spread over filling. Do not pack in.

- In a saucepan, combine pork, beef, onion, garlic, water, salt, thyme, sage, black pepper and cloves. Cook over medium heat until mixture boils; stirring occasionally. Reduce heat to low and simmer until meat is cooked, about 5 minutes. Allow to cool to room temperature.

FRENCH APPLE CREAM PIE
This is an unusual dessert that's like a traditional baked apple pie, but the only baking is for the cheesecake topping. Not what you would expect, but very tasty. We got this at a recipe shower when we were first married and it's become a family favorite.

- Peel and core apples.
- Slice apples 1/2" thick to make 4 cups.
- In 3 quart saucepan combine 1/2 t Orange peel, orange juice, butter, 2/3 C sugar and spices.
- Bring to a boil and stir until sugar is dissolved.
- Add apples,and cook until translucent.
- Blend water and cornstatch and add to apples.
- Cook until boils and thickens.
- Remove from heat, add lemon juice and cool.
- Whip cream cheese until fluffy and gradually beat in 1/3 C sugar and remaining orange peel.
- Beat in the egg.
- Turn cooled filling into baked crust.
- Spoon whipped cheese mixture evenly over the top.
- Sprinkle almonds and coconut over cheese.
- Bake @350 degrees for 20-25 minutes until set and lightly browned.
- Cool and Chill before serving.

- Preheat oven to 400°F.
- Place frozen pie shell on a baking sheet, let stand 10 minutes.
- Then, using a fork, prick bottom and side of shell in several places.
- Bake on bottom rack of oven until crust is pale golden, about 8 to 10 minutes.
- Remove shell from oven.
- Reduce oven temperature to 375°F.
- Meanwhile, finely grate 2 teaspoons peel from lemons onto a sheet of plastic wrap.
- Wrap and set aside to use for cream later.
- Squeeze 1/2 cup juice from lemons.
- In large bowl, whisk eggs.
- Gradually whisk in 3/4 Cup sugar until dissolved.
- Whisk in lemon juice, then 1/2 Cup cream until evenly mixed.
- Pour into warm pie shell.
- Bake in preheated 375 oven until centre is set when jiggled, about 25 to 30 minutes.
- Before serving, pour remaining 1/2 Cup cream into a bowl.
- Sprinkle with 1 tablespoon sugar and the reserved lemon peel.
- Beat until soft peaks will form when beaters are lifted.
- Serve pie warm, room temperature or cold.
- Slice into wedges and serve with a dollop of the lemon scented cream and garnish with some strawberries.
