SLOW-COOKER SAUSAGE CASSEROLE
You can use your favourite type of sausages to make this family-friendly slow-cooker casserole. Serve it over pasta, in baked potatoes or with bread

Steps:
- Fry the onion and celery in the oil over a low heat until it starts to soften and cook, about 5 mins, then spoon it into the slow cooker. Fry the carrots briefly and add them too.
- Brown the sausages all over in the same frying pan - make sure they get a really good colour because they won't get any browner in the slow cooker. Transfer to the slow cooker and add the sweet potato and tomatoes.
- Put the purée in the frying pan and add 250ml boiling water, swirl everything around to pick up every last bit of flavour, and tip the lot into the slow cooker. Add the herbs, stock cube and some pepper. Don't add salt until the casserole is cooked as the stock can be quite salty. Cook on high for 4 hrs or on low for 8 hrs, then serve or leave to cool and freeze.

Steps:
- Brown the sausage in a pan. Add the sausage and the rest of ingredients (except the pasta) to your slow cooker and cook on the "low" setting for 6-8 hours. Add pasta the last 15 minutes of cooking and turn the heat to "high." To Freeze and Cook Later Add all ingredients to a gallon-sized plastic freezer bag (except chicken broth and pasta). When ready to eat, thaw overnight in refrigerator and dump into your slow cooker with chicken broth. Cook on "low" setting for 6-8 hours or until sausage is cooked through. Add pasta and turn heat to "high." Serve w/garlic bread

- Saute the sausage in 1 Tbsp of olive oil for 5 mins, you can drain the sausage after cooking, but be sure to leave at least 1 Tbsp of grease in the pot for cooking the onions and garlic so they won't stick.
- Add the chopped onion and minced garlic to the cooked Italian sausage and saute for 2 more mins. Stir in the Italian seasoning and mix the seasoning sausage mix together.
- Add about a 1/2 cup of the chicken broth to the instant pot to help scrape up the brown sausage bits from the bottom of the pot. We do NOT want to get a burn signal while pressure cooking the soup!
